摘    要:探讨了制作葛仙茶的配方和最佳工艺。选用富含黄酮类物质的仙草与葛根等材料制成一种新型的具有多种保健功能的清凉饮料。通过单因素试验确定了各因素的最佳条件,然后通过正交试验确定了葛仙茶的最佳配方。所制作的饮料具有清热解毒、沁人心脾的特点,是一种老少皆宜的保健饮料。

Abstract:Msona Blume rich in flavonoids and kudzu root were used to make Gexian Tea -- a new type of refreshing drink with several healthcare functions. The optimum formula and technology of the drink were discussed. The optimum conditions of all the factors and the optimal formula of the drink were determined through the single-factor and orthogonal tests, respectively. Having the functions of refreshing, clearing away heat and detoxicating, the tea was a health drink beneficial to all ages.
