摘    要:以菜籽蛋白为原料,研究预处理和双酶水解条件对其水解度影响。结果表明,直接采用未经预处理菜籽蛋白和采用双酶分步水解法在不进行任何灭酶处理及先加入水解能力强的蛋白酶再加入其它蛋白酶条件下进行水解,所得菜籽蛋白水解效果较好。

Abstract:This paper study the pretreatment conditions and double the enzyme hydrolysis condition to its hydrolysis degree of influence using low temperature rapeseed meal as raw material.The results show that,we would better choose untreated rapeseed protein and adopt double enzyme hydrolysis method in step with no destroy enzyme processing and should add alcalase first and then papain.
