硒在香菇体内的生物转化及硒蛋白的生物活性

摘    要:采用香菇深层发酵对无机元素硒进行富集和转化 ,获得了硒含量为 2 2 5 μg/g的香菇菌丝体。硒参与蛋白质、多糖等大分子物质的合成 ,被转化为有机硒 ,有机化程度为 72 9% ,其中 68 2 %以硒蛋白的形式存在。硒对氨基酸和蛋白质的合成具有促进作用 ,其含量分别比对照提高 15 96%和 18 3 %。与无机硒相比 ,硒蛋白吸收利用率高 ,生物活性强 ,饲喂硒蛋白的大鼠体内硒水平和GSH Px活性明显较高。将硒蛋白提取出来 ,取代亚硒酸钠等无机硒作为补硒功能性食品或药品的基料 ,具有广阔的开发前景

Abstract:Selenium was enriched and bio converted by Lentinus edodes mycelium which was submerged fermented The content of selenium in mycelium was 225μg/g, and its existing state was converted from inorganic substance to organic substance in the anabolism of protein and polysaccharide The organic degree of selenium was 72 9% and 68 2% was Se protein Selenium can increase the biosynthesis of amino acid and protein The content of amino acid and protein was higher than that of contrast by 15 96% and 18 3% The absorbtivity and bio activity of Se protein were higher than Na 2SeO 3 The selenium content and GSH Px activity in the rats fed with Se protein were higher than that in rats fed with Na 2SeO 3 Se protein can be used as base material in functional food and medicine replacing Na 2SeO 3 because of its high absorbtivity and bio activity
