摘    要:目的]了解枣果中的熊果酸含量分布情况。方法]利用超声波法提取了53个枣品种果实中的熊果酸,采用HPLC法对枣中熊果酸含量进行了检测分析。结果]熊果酸在不同枣品种的果实中广泛分布,含量范围变化较大(7.75~420.10 μg/g),平均含量为164.79 μg/g;筛选出熊果酸含量最高的品种是榆次团枣,含量达420.10 μg/g;熊果酸含量大部分集中在100~200 μg/g;平均含量最高的是鲜食品种,为109.61 μg/g。结论]该方法为枣果的功能性产品开发利用及质量控制提供了科学依据。

Abstract:Objective] The distribution of the content of the ursolic acid in the fruit of Chinese jujube was explored through the analysis.Method] The ursolic acid in the fruits of 53 Chinese jujube cultivars was extracted with ultrasonic method and its content in the fruit of each cultivar was tested with HPLC.Results] The results showed that the ursolic acid was widely distributed in different Chinese jujube cultivars and its content in the fruit varied from 7.75 μg/g to 420.10 μg/g,with average content of 164.79 μg/g.The highest level of ursolic acid was found in the cultivar-Yucituanzao,which was 420.10 μg/g.And the content of ursolic acid was concentrated in the range of 100-200 μg/g and its highest value of average content was in fresh fruit of Chinese jujube,which was 109.61 μg/g.Conclusion] The scientific basis of the development and utilization of the fruit of Chinese jujube as functioned food and the quality control of its product was provided.
