菜籽蛋白的制备

摘    要:选用传统的碱提酸沉方法制备菜籽蛋白,通过对各种因素的分析得到菜籽蛋白的制备条件为在pH12的条件下提取菜籽蛋白,原料与溶剂的比例为1∶15,菜籽蛋白的沉淀分两步进行,首先在pH6.0条件下进行沉淀,离心之后在pH3.6条件下再进行沉淀,得到的菜籽蛋白加水后调pH至中性,喷雾干燥,按照此工艺生产菜籽蛋白,N回收率56.4%.

Abstract:Rapeseed proteins were prepared by alkali extraction and thenacid precipitation.The proteins were extracted with alkali at pH 12,th e ratio of solvent and rapeseed meal was 1∶15.Two step preciipitation process was used recover the rapeseed proteins,first at pH 6.0,then pH 3.6.The last st ep was drying process in which the preciptiated proteins were dispersed in water,then neutralized and dried with spray dryer.Under these cond itions,the nitrogen recovery was 56.4%.
