摘    要:目的对深圳市居民膳食营养状况进行分析,为营养改善工作提供科学依据。方法采用多阶段随机整群抽样方法抽取深圳市3个行政区共718名居民进行调查。利用食物频率法和称重法进行膳食调查。结果深圳市居民每标准人日摄入食用油46.2g,食盐9.4g,酱油13.1g,奶及奶制品类126.2g,豆及豆制品类27g,畜禽肉类132g,鱼虾类52g,蛋类31g,蔬菜类286g,水果174g,谷类283g。结论深圳市居民存在膳食结构不合理的情况。应采取多种形式对居民进行营养知识的宣传和饮食观念的指导。

Abstract:OBJECTIVE To describe the status and trend of food consumption in Shenzhen and provide a scientific basis for nutrition improvement.METHODS With multi-phase randomized sampling,a total of 718 residents from three districts were enrolled and surveyed by Food Frequency Questionnaire and food weighing method.RESULTS The quantity of cooking oil,salt,soy sauce,milk and its products,beans and its products,livestock and poultry meat,fish,eggs,vegetables,fruits,cereals were 46.2g,9.4g,13.1g,126.2g,27g,132g,52g,31g,286g,174g and 283g,respectively.CONCLUSION Shenzhen residents have unbalance food consumption patterns.Measures should be taken to propagate nutrition knowledge and to instruct a healthy diet among residents.
