摘    要:目的:确定酶解法制备鹿茸胶原蛋白的最佳制备工艺。方法:用正交试验法考察胶原蛋白的提取工艺,用高效凝胶色谱法考察胶原蛋白的酶解条件,优选出鹿茸胶原蛋白提取的最佳工艺。结果:鹿茸胶原蛋白的制备工艺为:料液比(g:mL)1:3,水煮4h,提取5次,胰蛋白酶与底物(鲜鹿茸)的比是1:5 000,酶解时间为2h。结论:验证试验结果表明,鹿茸胶原蛋白收率为12.52%,蛋白含量为56.89%。本试验简便、稳定、可行。
