摘    要:茶叶中聚酯型儿茶素(theasinensins,TSs)是一类与茶黄素(theaflavins,TFs)相似的由儿茶素组成的二聚体化合物。连苯三酚型儿茶素酶促氧化会形成聚酯型儿茶素,其形成过程也受到底物、p H值、温度和酶等多种因素的影响。随着对聚酯型儿茶素研究的深入,其功能活性也成了研究者们关注的热点。聚酯型儿茶素的双黄烷醇化学结构,决定了其特殊的抗氧化、抗癌防癌、抗病毒、降脂等生物学活性。同样由儿茶素形成的一类物质-茶黄素,其形成过程、影响因素以及功能活性,与聚酯型儿茶素间既存在一定的相似性,也存在一定的差异性。本文对近年聚酯型儿茶素酶促合成机制、形成影响因素以及生物学活性等研究进展进行综述,并与茶黄素进行对比分析。

Abstract:Theasinensins (TSs) is a kind of dimeric compounds formed by epicatechins, which are similar with theaflavins (TFs). Pyrogallol type catechins can form theasinensins by enzymatic oxidation, which are also affected by substrate, pH, temperature, enzyme and so on. With the deep study of theasinensins, its functional activity has become a hot spot for researchers. The structure of the flavanols of theasinensins determines the biological activities of its special antioxidant, including anti-oxidation, anti-cancer, anti-virus, lipid-lowering and so on. There are some similarities between theaflavins formed by catechins and theasinensins and they are also different from in formation process, influencing factors and functional activity. In this paper, the synthesis mechanism, influencing factors and biological activity of theasinensins in recent years were reviewed and compared with the theaflavins.
