摘    要:以玉米种皮为原料,采用碱解醇沉的方法,对玉米种皮中水溶性膳食纤维提取工艺进行研究。结果表明,其最佳碱解工艺为碱解时间30 min,碱解温度50℃,氢氧化钠质量分数为1%;最佳醇沉条件为料醇比为1∶2(g/mL),醇沉时间30 min,醇沉温度40℃,制得的膳食纤维品质好。

Abstract:Water-Soluble Dietary Fiber(SDF) extraction flow was studied combining methods of alkali solution and alcohol precipitation by use of corn spermoderm as raw materials.The results showed that the optimal extraction process as follows,the extraction time of alkali solution was 30 min,the temperature of alkali solution was 50 ℃,the mass fraction of sodium hydroxide was 1 %,the ratio of material to alcohol was 1∶2(g/mL),the time of alcohol precipitation was 30 min;the temperature of alcohol precipitation was 40 ℃.
