重庆奉节脐橙果皮中果胶的脱色及沉淀方法研究

摘    要:在采用草酸铵提取法从重庆奉节脐橙果皮中提取果胶的过程中分别采用活性炭脱色和乙醇脱色2种方法,通过实验得知乙醇脱色的方法效果较好.同时探讨采用乙醇沉淀法时乙醇浓度、温度、沉淀时间、pH各因素对果胶得率的影响,结果表明,用乙醇沉淀果胶时,溶液中乙醇最适宜浓度为50%;沉淀过程中溶液温度对果胶得率的影响不大,选择室温下沉淀即可;沉淀时间为30 min;沉淀时溶液的pH在2.5~3.5之间时果胶得率最高.

Study on Decolorizing and Precipitation Method of Pectin from the Peel of Chongqing Fengjie Orange

Abstract:Comparative research on the method of activated carbon decolorizing and the method of ethanol decolori- zing of extracting pectin from Chongqing Fengjie orange peel by ammonium oxalate has been done. The result shows that the method of ethanol decolorizing is good. The paper also discusses the effects of four factors ( ethanol concen- tration, temperature, precipitation time, pH) on yield of pectin with ethanol precipitation. The optimal technology is as follows, ethanol concentration is 50%, the temperature is room temperature, the time of precipitation is 30 rain, and pH is in 2.5 -3.5.
