摘    要:本文对影响超高温灭菌乳质量的主要问题进行了阐述,其主要影响因素是原料乳的质量和超高温灭菌过程的几个重要方面。对超高温生产过程中的杀菌温度和保温时间,脱气和均质,无菌输送,无菌包装和无菌灌装阶段工艺设备进行分析,参照应用设备结构工艺特点,找出各阶段中影响超高温灭菌乳质量的主要因素,并提出控制措施。另一方面,对影响超高温灭菌乳质量的另一重要因素原料乳质量,根据乳的特性及采用的加工方法,提出控制措施,保证产品质量的稳定。

Abstract:This paper expatiate the main question that influence the quality of UHT sterilized milk. The main influencing factors are the quality of raw milk and some important aspects during the process of UHT sterilized milk. Analyze the questions about sterilization temperature and holding time, degassing and homogenization, aseptic transportation, aseptic packing, the process equipment about aseptic filling stage during UHT process. Refer to the structure of equipment process characteristic, find the key factors that influence the quality of UHT sterilized milk and mention the measurement of control. On the other hand , another important factor of influence the quality of UHT aseptic milk is the quality of raw milk, according to the characteristic of raw milk and process method that is used, mention the measurement of control, ensure the stability of product quality.
