食品安全检测主要标准样品研究进展

摘    要:国内外食品安全问题频出,严重威胁着人类的健康与安全。为了提高食品安全检测水平、规范检测方法和统一食品相关参数量值,需要使用到标准样品。标准样品可以作为校准标准,评价检测仪器和检测方法。随着食品行业的快速发展和全球化合作,产品种类会不断增加,对于产品的质量要求也将更加严格,因此食品安全检测标准样品的应用将会更加广泛。本文综述了食品安全检测标准样品的制备方法、最新研究现状和国内外标准样品数据库中食品安全检测有证标准样品的发展现状,分析了我国与国外标准样品研制机构在食品安全检测标准样品研制数量、技术力量等方面的差距,对我国食品安全检测标准样品的今后发展的方向进行了探讨,以期为食品安全检测标准样品的研制与发展提供一定的参考。

Abstract:Food safety problems occur frequently at home and abroad, which seriously threaten human health and safety. In order to improve food safety testing, standardise testing methods and harmonise the values of food-related parameters, the use of reference materials is required. Reference materials can be used as calibration standards to evaluate test instruments and test methods. With the rapid development of the food industry and global cooperation, the variety of products will continue to increase. The quality requirements for products will also become more stringent, which means that the application of food safety testing reference materials will become more extensive. In this paper, the preparation methods, the latest research status and the development status of certified reference materials for food safety testing in national and international reference materials databases are reviewed, the gap between China and foreign institutions for the development of reference materials for food safety testing in terms of the number of reference materials developed and the technical strength is analyzed and the development direction of food safety testing reference materials in China was discussed in order to provide a reference for the development of food safety testing reference materials.
