《食品工程原理》教学中工程素质的培养

摘    要:工程素质就是综合运用所学知识解决工程实践问题的能力。食品工程原理作为一门工程基础课,工程素质的培养和强化是教学的首要目的。文章概述了该课程的特点,结合教学实践,着重阐述了在理论教学,尤其是实验、实习及课程设计等实践教学环节中强化培养工程素质的措施和原则。

Abstract:Engineering quality was the ability to solve practical engineering problems by using integrated knowledge. As an engineering basic course, the culture and training of engineering quality was the first purpose in teaching of the course of food engineering principles. The features of the course were summarized firstly, and then the measures and principles of training the engineering quality were proposed by analyzing theoretical teach, especially in practice teaching including experiment, practice and course design and so on.
