摘    要:为探讨不同浓度壳聚糖溶液对黄瓜进行涂膜后、常温下不同放置方式对黄瓜保存效果的影响,本研究选用0.5%、1.0%、1.5%、2.0%浓度的壳聚糖溶液对黄瓜进行30s涂膜处理,室温下直接贮藏或袋装贮藏,然后测定黄瓜失重率、总酸度、Vc含量的变化,并进行感官评定。结果表明1.0%和1.5%浓度的壳聚糖溶液对黄瓜进行涂膜、室温下直接储藏的保鲜效果较好。

Abstract:To explore the better store methods to keep cucumbers fresh,the cucumbers were stored within or without plastic bags at room temperature after they were coated by 0.5%,1.0%,1.5% or 2.0%chitosan for 30 seconds.According to the analysis results of loss of weight,total acid,vitamin C(Vc) and sensory quality,the preservation effect for cucumber coated with 1.0% and 1.5% chitosan for 30 seconds was better than that of others.
