摘    要:目的调查长柄芥蔬菜采后可食部分品质特性,筛选优异品种。方法对集中种植于成都平原生态条件下的5个长柄芥品种进行了采后叶片和叶柄8项品质指标(单株重、株高、VC、可溶性蛋白、可溶性糖、叶绿素、纤维素、游离氨基酸)的测试分析。结果除单株重、株高和叶片可溶性糖含量3项指标外,供试品种间有11个测试指标变异系数大于10%,表明品种间品质差异明显,且叶片品质指标普遍高于叶柄;相关性分析显示共7对指标间存在显著或极显著相关关系,其中株高和叶柄可溶性蛋白含量极显著正相关,叶片可溶性糖和叶片纤维素含量极显著负相关;测试品质指标将品种聚类为2大类,其中1#和2#四川地方资源品种综合品质相对较优,聚为一类。结论该研究明确了四川地区长柄芥品种的采后品质特性,并为优良品种选择提供了参考依据。

Abstract:Objective In order to investigate the edible quality characteristics of mustard (Brassica juncea var. longe petiolata Yang et Chen) vegetables and select excellent varieties. Methods 8 quality indexes (single plant weight, plant height, VC, soluble protein, soluble sugar, chlorophyll, cellulose and free amino acid) of leaves and petioles of 5 mustard varieties planted under the ecological conditions of Chengdu Plain were tested and analyzed. Results Except for the three indexes of single plant weight, plant height and leaf soluble sugar content, the coefficient of variation of 11 indexes among the tested varieties was more than 10%, indicating that there were significant differences in quality among varieties, and the leaf quality indexes were generally higher than that of petiole. Correlation Analysis showed that there was a significant or extremely significant correlation between 7 pairs of indexes, in which plant height was positively correlated with petiole soluble protein content, and leaf soluble sugar and leaf cellulose content were negatively correlated. The varieties were clustered into two categories, of which 1# and 2# Sichuan local resource varieties had the better comprehensive quality. Conclusion This study defined the postharvest quality characteristics of mustard (Brassica juncea var. longe petiolata Yang et Chen) varieties in Sichuan, and provided a reference basis for the selection of excellent varieties.
