摘    要:小麦和谷物制品作为我国餐桌上的主要饮食,常受到各种真菌的污染并产生毒素.尤其是脱氧雪腐镰刀菌烯醇(deoxynivalenol,DON),属B型单端孢霉烯族化合物,主要由镰刀菌在侵染小麦等禾谷类作物或者贮存的过程中产生,温润的环境更促使DON的产生,具有细胞毒性和致癌性,影响人和动物的健康.目前从国家市场监督管理网站等...

Abstract:Deoxynivalenol (DON), a major trichothecenes B mycotoxin which is mainly produced by Fusarium graminearum during the infection of wheat and other cereal crops, has obvious toxicological potential and can cauce acute or chronic toxic effects on both animals and humans through consuming excessive grain and its products, and then damage the immune system. Therefore, it is the top priority to adopt more efficient, simple and rapid pretreatment and testing technologies in order to better ensure food safety under the supervision of the State Administration for Market Regulation. It is urgent to establish efficient, simple, and rapid detection technology to achieve effective supervision of DON and its derivatives in agricultural products in order to protect consumers'' health and inimize economic losses. In this review, the pretreatment and detection methods of DON are systematically described, and the highlights and potential application value of the emerging detection technology are discussed and analyzed, in order to provide reference for the food supervision work of DON.
