摘    要:介绍了接触吸附干燥的原理,吸附剂的类型,接触吸附干燥的特点、影响因素及在食品加工方面的应用,并提出在食品加工过程中,对于脱水处理,采用接触吸附干燥或吸附与其他常规干燥组合,食品加工的品质将显著提高,节能效果是明显的,同时指出了未来的研究方向。

Abstract:In this paper, the principle of contact-sorption drying, category of adsorbents, the characteristic, influence factor and application in the field of food were introduced. In food processing, the contact-sorption drying and the combination of sorption drying with other drying method, which was usod to dehydrate, can raise the quality of food greatly and save energy apparently. The investigation frends in the future was brought forward.
