摘    要:胶原蛋白是哺乳动物体内含量最高的蛋白质,起着支撑器官、保护机体的作用。近年来,随着胶原蛋白提取技术的发展和其结构、性质等的深入研究,其水解产物和多肽的生物功能也逐渐被广泛认识,胶原蛋白的应用成为生物、医学、食品、化妆品等领域一具新的研究热点。本文概述了胶原蛋白的组成和结构特点,并详细介绍了胶原蛋白在功能保健食品、食品添加剂、食品包装材料等食品领域中的广泛应用。

Abstract:Collagen protein is the highest protein content in vivo of mammal ,playing the role in supporting the organs,protecting organism function.in recent years,with the development of the methods of extracting collagen protein and deep research of its structural,properties, the functional properties of clooagen and its peptide are widely realized, the research and application of collagen have become a hotspot in biological and medical industry, food industry, cosmetics industry, etc.The structure and properties of clooagen protein are briefly summarized, the comprehensive applications of collagen protein in food industry, healthy food, foood additives, food packing material and so on sre introduced in the paper.
