摘    要:采用清蒸建窖、分窖建窖和丢糟建窖三种不同的方法对掉排窖池进行处理,以达到稳定窖池环境,提高基酒产量和质量的效果。结果表明,三种处理方法都能提高基酒的产量和质量,使掉排窖池达到正常窖池的生产水平。

Abstract:We treat the pits to stabilize the pit environment and improve the yield and quality of the base liquor,with three different methods---Steaming vinasse and rice separately、making wine by vinasse who is its own and one is others、making pits by spent grains .The results show that,three methods can improve the yield and quality of base liquor,and make the pit who liquor yield decline to achieve the normal pit production level.
