摘    要:采用正交实验法,利用超声提取技术,优选由绿茶中提取绿色素的最佳工艺条件。以绿色素的乙醇浸提液在可见光区665nm处的吸光度为考察指标,应用正交实验法对提取过程中浸提温度(A)、浸提时间(B)、超声波功率(C)、乙醇浓度(D)及料液比(E)5个因素进行优选研究。结果表明,乙醇浓度与浸提温度对茶叶中绿色素提取率的影响较为显著,最佳工艺条件为乙醇浓度85%、浸提温度60℃、料液比1:16、提取时间40min、超声波功率350W。在此优化条件下绿茶中绿色素提取率达到38.80%,为先前文献报导的1.7倍。
