Desirable flavor qualities of cocoa are dependent on how the cocoa beans are fermented, dried, and roasted. During fermentation and drying, polyphenols such as leucocyanidin and apecatechin are oxidized by polyphenols oxidase to form o-quinone, which later react nonenzymatically with a hydroquinone in a condensation reaction to form browning products and moisture. The objective of this article is to model the cocoa beans drying together with the browning reaction. A Luikov drying model for the moisture and a simple Fick's law diffusion model combined with first-order reactions for both the enzymatic oxidation and nonenzymatic condensation reactions were constructed. Both models were used to identify moisture diffusivity coefficient and total polyphenols diffusivity in cocoa beans from experimental drying and polyphenols degradation data and published kinetic data of the reactions. The theoretical drying model fitted the experimental cocoa bean drying curves with low mean square of residuals. The polyphenols diffusion and reaction model also fitted the experimental polyphenols degradation curves with minimum mean residual squares. The rate of polyphenols degradation in the cocoa beans increases at higher temperature and higher relative humidity. This is because the increasing reaction rate of polyphenols oxidation reaction as well as higher moisture diffusion at higher relative humidity and temperature. The effective moisture diffusivity in cocoa beans is estimated to be between 8.194 × 10-9 and 8.542 × 10-9 m2·s-1, which is of the same order of magnitude as published data. The effective total polyphenols diffusivity is estimated to be between 8.333 × 10-12 to 1.000 × 10-11 m2·s-1 with minimum mean residual squares. It is three orders of magnitude less than the estimated moisture diffusivity because of the larger polyphenols molecules. The estimated polyphenols diffusivity is very close to those published in the literature for sorption and ultrafiltration processes.  相似文献

To grapple with multidrug resistant bacterial infections, implementations of antibacterial nanomedicines have gained prime attention of the researchers across the globe. Nowadays, zinc oxide (ZnO) at nano‐scale has emerged as a promising antibacterial therapeutic agent. Keeping this in view, ZnO nanostructures (ZnO‐NS) have been synthesised through reduction by P. aphylla aqueous extract without the utilisation of any acid or base. Structural examinations via scanning electron microscopy (SEM) and X‐ray diffraction have revealed pure phase morphology with highly homogenised average particle size of 18 nm. SEM findings were further supplemented by transmission electron microscopy examinations. The characteristic Zn–O peak has been observed around 363 nm using ultra‐violet–visible spectroscopy. Fourier‐transform infrared spectroscopy examination has also confirmed the formation of ZnO‐NS through detection of Zn–O bond vibration frequencies. To check the superior antibacterial activity of ZnO‐NS, the authors'' team has performed disc diffusion assay and colony forming unit testing against multidrug resistant E. coli, S. marcescens and E. cloacae. Genetic algorithms are applied to an important, but little investigated, network design problem, that of reconfiguring the topology and link capacities of an operational network to adapt to changes in its operating conditions. These conditions include: which nodes and links are unavailable; the traffic patterns; and the quality of service (QoS) requirements and priorities of different users and applications. Dynamic reconfiguration is possible in networks that contain links whose endpoints can be easily changed, such as satellite channels, terrestrial wireless connections, and certain types of optical connections. We report preliminary results that demonstrate the feasibility of performing genetic search quickly enough for online adaptation.  相似文献

Titanium carbonitride (TiCN) is a popular hard coating for carbide cutting tools in various applications. The properties of TiCN are within its composition and can be controlled by maintaining the C–N ratio within the coating to a certain level. This paper studied the influence of carbon content and coating composition within TiCxN1?x coatings with regard to their mechanical properties. The substrate used was tungsten carbide (WC-6Co), which was prepared in-house through a powder metallurgy process, while the TiCxN1?x coatings were deposited in-house using cathodic arc physical vapour deposition (CAPVD). TiCxN1?x coatings improved the mechanical properties of carbide inserts. An increase in carbon content within TiCxN1?x coatings improved surface lubricity, reduced coefficient of friction, improved surface microhardness and increased Young's modulus, but reduced thermal conductivity of carbide inserts. The colour of TiCxN1?x coatings also changed with carbon content.  相似文献

Polypyrrole (PPy) and polypyrrole-carboxylic functionalized multi wall carbon nanotube composites (PPy/f-MWCNT) were synthesized by in situ chemical oxidative polymerization of pyrrole on the carbon nanotubes (CNTs). The structure of the resulting complex nanotubes was characterized by transmission electron microscopy (TEM) and X-ray diffraction (XRD). The effects of f-MWCNT concentration on the electrical properties of the resulting composites were studied at temperatures between 100 K and 300 K. The Hall mobility and Hall coefficient of PPy and PPy/f-MWCNT composite samples with different concentrations of f-MWCNT were measured using the van der Pauw technique. The mobility decreased slightly with increasing temperature, while the conductivity was dominated by the gradually increasing carrier density.  相似文献

Risk Allostasis Theory states that drivers seek to maintain a feeling of risk within a preferred range [Fuller, R., 2008. What drives the driver? Surface tensions and hidden consensus. In: Keynote at the 4th International Conference on Traffic and Transport Psychology, Washington, DC, August 31–September 4, 2008]. Risk Allostasis Theory is the latest version of Task-Difficulty Homeostasis theory, and is in part based on the findings of experiments where participants were asked to rate the task difficulty, feeling of risk and chance of collision of scenes shown in digitally altered video clips [Fuller, R., McHugh, C., Pender, S., 2008b. Task difficulty and risk in the determination of driver behaviour. Revue européenne de psychologie appliqée 58, 13–21].The focus of the current research was to expand upon the previous video based experiments using a driving simulator. This allowed participants to be in control of the vehicle rather than acting as passive observers, as well as providing additional speed cues. The results support previous findings that ratings of task difficulty and feeling of risk are related, and that they are also highly related to ratings of effort and moderately related to ratings of comfort and habit. However, the linearly increasing trend for task difficulty and feeling of risk described by the previous research was not observed: instead the findings of this experiment support a threshold effect where ratings of risk (feeling of and chance of loss of control/collision), difficulty, effort, and comfort go through a period of stability and only start to increase once a certain threshold has been crossed. It is within the period of stability where subjective experience of risk and difficulty is low, or absent, that drivers generally prefer to operate.  相似文献

This paper investigates the viability of using starch (ST) as a new modifier for asphalt paving materials. Different ratios of ST (2.5, 5.0, and 7.5% by weight of asphalt) were blended with 70/100 paving grade asphalt. Unmodified and modified asphalt binders were subjected to physicochemical, alkali, acid and fuel resistance tests. The performance tests including, Marshall stability, Marshall Quotient (MQ), tensile strength, tensile strength ratio, flexural strength, rutting resistance and resilient modulus (MR) were carried out on unmodified and modified stone matrix asphalt (SMA) mixtures. The analyses of test results show that the performance of ST-modified asphalt mixtures are better than conventional and styrene–butadiene–styrene (SBS)-modified mixtures. The rutting potential, moisture susceptibility and temperature susceptibility can be reduced by the inclusion of ST in the asphalt mixture. The laboratory MR values are lower than the calculated ones using the empirical equations. The results also revealed that this modifier can be used as anti-stripping agent. It also shows resistance to fuels and most common chemicals. A ST content of 5% by weight of asphalt is recommended for the improvement of the performance of asphalt concrete mixtures similar to that investigated in this study.  相似文献

Masjid Al-Haram in Saudi Arabia is one of the most crowded pilgrimage locations in the world. More than two million pilgrims gather in Saudi Arabia annually during the Hajj season, and it is compulsory for them to perform a series of actions in the mosque. In the court area, pilgrims perform one of the most important rituals of Hajj, called Tawaf, which consists of seven laps of circular movement around the Kaabah, which is situated in the centre of the court. After the Tawaf, pilgrims pray in the court and leave from one of several doors. In this paper, we present a cellular automata model for the simulation of the pilgrims’ circular Tawaf movement. We also use a discrete-event model to simulate the actions and behaviours of the pilgrims. The proposed models are used in a software platform to simulate the actions and movements of pilgrims in the area. We then present an example application of the model in predicting whether specific changes to the architecture could increase the throughput of the system.  相似文献

ABSTRACT

Distributed parameter drying models such as the Fick's law diffusion model, unlike the lumped parameter model of van Meel whose parameters can be easily estimated by regression, suffer from the difficulty in estimating the parameters of the models quantitatively with accuracy. In the past they were estimated by visual inspection of the theoretical drying curves which fit the experimental drying curve best In this work, a quantitative parameter estimation technique originally suggested by Chavent, is developed by minimizing the integrated squares of error between theoretical and experimental curves over the drying lime (the criterion) subjected to the constraints that the theoretical curve is governed by the constant diffusivity Fick's taw diffusion equation (the constraint). Although the estimation of Fick's law constant diffusivity can be done by using the analytical solution developed by Crank, the use of the Fick's law model here is simply to demonstrate the utility of the proposed technique which can be used in more complex distributed models. The optimization problem is to solve for the adjoint equation for which the value of the Fick's law diffusivity minimizes the criterion. The Lagrangian derivative is solved by using a discrete derivative of the criterion. The theoretical curves are generated by using simple explicit (FSE) and modified Crank-Nicholson (FCR) algorithms The drying of oil palm kernels are used as a case study. Ii is found that the estimated diffusivities of moisture in oil palm kernels range from 0 5 to 5.0 × 10-10 m2sol;s which are comparable with published data. It is also found that the estimated diffusivity is dependent on the initial moisture content.  相似文献
