ABSTRACT

Carotene‐enriched carrots (Daucus carota L. var. Chantenay) were evaluated for their inhibitory effects on acidity development and lipid oxidation in rasogolla during refrigerated storage. Rasogolla is mashed fresh cheese or cottage cheese boiled in rounded shape in concentrated sugar syrup. Six types of rasogolla samples containing carrot paste at 0, 10, 20, 30, 40 and 50% were prepared and stored in closed container at refrigerated condition for 20 days. Chemical changes were measured for acidity of syrup, pH of syrup, free fatty acid content and absorptivity of rasogolla samples, and sensory evaluation of rasogolla samples at days 0, 5, 10, 15 and 20 of storage. The carrot pastes showed significant protection against lipid oxidation, acidity development and sensory quality maintenance in rasogolla. Higher levels of carrot pastes were more effective to increase shelf stability in rasogolla at different tested storage times. However, after day 10 of storage, carrot concentration showed negative result, i.e., enhancement of rate of lipid oxidation of rasogolla samples and its syrups along with visual color destruction. Also, excess quantity of carrot in rasogolla reduces the overall acceptance by the consumer. According to the overall result of shelf stability, it could be suggested that carrot concentration up to 30% should be used in rasogolla for long duration of storage, i.e., above 10 days.

PRACTICAL APPLICATIONS

Traditional dairy products such as Rasogolla are important, well balanced food, which contribute a number of nutrients in relation to our need for good nutrition and health. Rasogollas' projected demand is 6000 tonnes in 2009 ( Karunanithy et al. 2007 ). Carrot is a good source of carotene specially beta‐carotene and serve as a good source of natural antioxidant. Fortification of carrot in dairy product serves as functional or health food for people of all age group. It also imparts a safe and attractive color to the dairy product. Besides, it is also cost effective for the dairy industry, because carrot is much cheaper than milk or channa (a dairy product analogous to cottage cheese). Study on the role of carrot on shelf stability of rasogolla under refrigerated storage is an attempt to establish this new product in the dairy industry.

Diamond-like nanocomposite (DLN) coatings have been deposited over different substrates used for biomedical applications by plasma-enhanced chemical vapour deposition (PECVD). DLN has an interconnecting network of amorphous hydrogenated carbon and quartz-like oxygenated silicon. Raman spectroscopy, Fourier transform–infra red (FT–IR) spectroscopy, transmission electron microscopy (TEM) and X-ray diffraction (XRD) have been used for structural characterization. Typical DLN growth rate is about 1  ${\upmu} $ m/h, measured by stylus profilometer. Due to the presence of quartz-like Si:O in the structure, it is found to have very good adhesive property with all the substrates. The adhesion strength found to be as high as 0·6 N on SS 316 L steel substrates by scratch testing method. The Young’s modulus and hardness have found to be 132 GPa and 14· 4 GPa, respectively. DLN coatings have wear factor in the order of 1 × 10???7 mm 3 /N-m. This coating has found to be compatible with all important biomedical substrate materials and has successfully been deposited over Co–Cr alloy based knee implant of complex shape.  相似文献

A prototype expert system is described for concurrent design and analysis of composite structures. This system integrates symbolic, numerical and knowledge-based tools in an object-oriented programming environment for design synthesis, evaluation and modification. The system determines structural behavior utilizing a combination of analytical and numerical tools. Design modifications and structural optimization are performed using heuristic and experientially derived knowledge bases. The different domain-specific programs and commercial packages utilized by the system are integrated using a generic interfacing mechanism. The utility of the system is demonstrated by means of a design case study for a typical aircraft or rotorcraft structural component.  相似文献

Conventional computer-aided design (CAD) packages have drastically reduced the workload of the human designer and shortened the product design cycle. However, the degree of effort and volume of information required to use these tools limit their use to the later stages of design. Intelligent computer-aided design (ICAD) systems have sought to provide a more complete design tool to assist the designer in all phases of design. ICAD systems incorporate conventional CAD elements as well as knowledge engineering constructs. The level of integration between different components of an ICAD system determines its usefulness. Most commercial intelligent CAD packages are tied to a specific set of CAD tools, restricting their application domains. This dependence on specific software tools can be reduced by using general purpose modules to interface with available CAD packages. This paper discusses a method of introducing knowledge engineering technology to help develop an advanced intelligent product design system by integrating ICAD's Concept Modeller with SDRC's l-DEAS package for engineering product design. This integration is necessary because neither the Concept Modeller nor the I-DEAS package provides any unified design environment where users can access both symbolic and numerical design tools as needed to carry out design synthesis and analysis activities. Interfacing engineering design and knowledge processing together is not an easy task. The task is further complicated since it needs to be done only by those who have enough knowledge of both technologies, and also because it may result in reorganization of the traditional design process altogether. The proposed intelligent product design system uses artificial intelligence techniques to take care of human experts knowledge and it advocates the use of several commercial software packages that come from a variety of sources (and are proven to be robust) to perform design synthesis in a cost-efficient and timely manner. The technique described here is relatively easy to implement and is well suited to industrial needs.  相似文献

Indian herbs such as turmeric ( Curcuma longa L.), coriander ( Coriandrum sativum L.), curry leaf ( Murraya koenigii L.), spinach ( Spinacia oleracea ) and aonla ( Emblica officinalis ) are good sources of antioxidants. These herbs, as a paste, were incorporated separately at the 10% level into sandesh (a heat-desiccated product of coagulated milk protein mass or chhana, which is analogous to cottage cheese). Their total antioxidative status was assessed in vitro using Randox's method. The antioxidative levels of the various herbs were compared with the synthetic antioxidants TBHQ and BHA: BHT (1:1) at 100 and 200 mg/kg levels. The antioxidative effect of herbal sandesh decreased in the order turmeric > curry leaf > aonla > spinach > coriander leaf. Total antioxidative statuses of herbal sandesh were lower than samples with TBHQ but similar to those with 200 mg/kg BHA: BHT (1:1). The proximate composition of herbal sandesh was comparable with control sandesh. Incorporation of herbs at the level used did not significantly affect the overall acceptability of sandesh. Considering all the findings, it can be concluded that herbal sandesh is a more value-added health food than the control sandesh.  相似文献

Geometric reasoning is an indispensable part of an automated fixture design system. This paper introduces a rational approach based on the use of both qualitative and quantitative reasoning tools to plan for the “best” supporting, locating and clamping positions (on a given workpiece) to hold the workpiece rigidly and accurately during machining processes. It discusses general algorithms to verify the preliminary fixture configuration, as obtained by using 3-2-1 locating rules against workpiece deformation and work piece-tool interference, and to re-allocate the locating positions, if necessary. The paper also addresses the issues of implementing the algorithm in a prototype, automated fixture design system.  相似文献

This paper presents the different ways of incorporating various coprecipitates obtained from milk in chevon nuggets. The chevon was obtained from a rare but popular breed called Black Bengal goat. Milk coprecipitates of varying composition were in the formulations. Emulsion stability, yield, moisture and protein contents were not affected significantly, whereas shear force, pH, various organoleptic properties were found to be affected significantly. This method may potentially lead to the development of new emulsion-based nuggets.  相似文献
