ABSTRACT: The electrical conductivity of food components is critical to ohmic heating. Food components of different electrical conductivities heat at different rates. While equal electrical conductivities of all phases are desirable, real food products may behave differently. In the present study involving chicken chow mein consisting of a sauce and different solid components, celery, water chestnuts, mushrooms, bean sprouts, and chicken, it was observed that the sauce was more conductive than all solid components over the measured temperature range. To improve heating uniformity, a blanching method was developed to increase the ionic content of the solid components. By blanching different solid components in a highly conductive sauce at 100 °C for different lengths of time, it was possible to adjust their conductivity to that of the sauce. Chicken chow mein samples containing blanched particulates were compared with untreated samples with respect to ohmic heating uniformity at 60 Hz up to 140 °C. All components of the treated product containing blanched solids heated more uniformly than untreated product. In sensory tests, 3 different formulations of the blanched product showed good quality attributes and overall acceptability, demonstrating the practical feasibility of the blanching protocol. 相似文献

Characterization of near-grain boundary is carried out by atomic force microscopy (AFM). It has been observed to be the most suitable technique owing to its capability to investigate the surface at high resolution. Commercial purity-grade nickel processed under different conditions, viz., (i) cold-rolled and annealed and (ii) thermally etched condition without cold rolling, is considered in the present study. AFM crystallographic data match well with the standard data. Hence, it establishes two grain-boundary relations viz., plane matching and coincidence site lattice (CSL Σ=9) relation for the two different sample conditions. 相似文献

The effectiveness of various liquid sanitizers and methods of application against Escherichia coli on baby spinach was investigated. Inoculated spinach was treated with (i) Pro‐San L (commercially prepared solution containing 0.66% citric acid, 0.036% sodium dodecyl sulfate (SDS); (ii) chlorine solution (200 ppm), alone or with addition of 0.036% SDS; and (iii) aqueous solution of 0.66% levulinic acid with 0.036% SDS. Population reduction in response to these treatments ranged between 2.1 and 2.8 log CFU/g. No significant difference (p > .05) was found among tested sanitizers in microbial count reduction. Spraying, dipping, and “dry” vacuum impregnation methods of Pro‐San L application were compared. Dipping was the most effective in reducing E. coli O157:H7 population (4.4 log CFU/g reduction). Dry vacuum impregnation was less effective (3.3 log CFU/g reduction) and caused damage to the produce. The effectiveness of spray Pro‐San L application and holding for prolonged time (up to 3 days) was also evaluated. However, increasing time of exposure to organic acid sanitizer did not increase sanitizing effectiveness and led to progressive damage of spinach leaves. 相似文献

Bio-diesels play an important role in meeting future fuel requirements in view of their nature (less toxic), and have an edge over conventional diesel as they are obtained from renewable sources. Bio-diesel blends up to 20% in diesel are being used at present. In this article, the determination of bio-diesel in diesel both by conventional and spectroscopic methods is described. The understanding of the relationship between molecular structure and viscosity–temperature behaviour of a lubricant system is a subject of considerable importance. The quantitative distribution and types of different classes of hydrocarbons such as aromatics, paraffins (normal and iso) and naphthenes determine the physico‐chemical behaviour of a lubricant system. The study of molecular structure and molecular alignment of hydrocarbons constituting a lubricant helps in the development of lubricating oil with desired physico‐chemical properties. The present study highlights the application of nuclear magnetic resonance spectroscopic technique for deriving detailed hydrocarbon structural features present in API groups II and III base oils produced through catalytic hydrocracking/isodewaxing processes. The viscosity–temperature and viscosity–pressure properties, such as viscosity index, pour point, elastohydrodynamic film thickness and cold cranking simulator viscosity, were determined. The structural features of these base oils such as various methyl branched structures of isoparaffins and branching index, which are characteristics of high performance molecules, were correlated with the above‐mentioned properties to explain their physico‐chemical properties, particularly low temperature properties. The molecular dynamics parameters such as diffusion coefficient and T1 relaxation times estimated from the nuclear magnetic resonance spectral studies have provided sufficient evidence for the dependence of these properties on these high performance molecules present in various types of methyl structures of isoparaffins of groups II and III base oils compared with conventional group I base oils. Results are explained on the basis of molecular structural differences of hydrocarbons present in these base oils and diffusion measurement studies. We report the first optically stimulated luminescence (OSL; blue light stimulated luminescence (BLSL) and infrared light stimulated luminescence (IRSL)) results on colored diamonds and present experimental evidence that electron beam treatment (EBT) increases the radiation sensitivity of diamonds to a level that makes them suitable for low level radiation dosimetry. A suite of seven samples was examined. These comprise a white, three brown and three yellow diamond pieces. The FT-IR spectra of these diamonds revealed the nature and concentration of nitrogen impurity. The white diamond was kept as a control. The brown and yellow (with varied saturation) diamonds were irradiated by a 1.7 MeV electron beam. These turned blue/dark green; three of them were then heated in vacuum in the temperature range of 850-900 °C for two hours. Heating turned the irradiated diamonds to lemon yellow, pink, and purple colors. The irradiated and unheated blue samples were designated as 2C and 2D.The control sample, an un-irradiated white type Ia diamond, did not yield any significant IRSL/BLSL with doses up to 100 Gy. The BLSL/IRSL sensitivity of irradiated and heat treated diamonds was very poor, and depended on the heat cycle and hence were not pursued. Sample 2C exhibited significant BLSL and negligible IRSL sensitivity. Sample 2D gave an intense orange red emission under IR excitation as also responded to BLSL. The dose response of the BLSL signal in 2C suggested a minimum detectable dose of ~ 0.1 Gy and its use as a tissue equivalent dosimeter.Based on supporting experiments such as laser excited photoluminescence, we suggest that the BLSL process in 2C is primarily driven by carbon vacancies, which release a mobile hole when excited by GR2 band in the blue region. BLSL intensity exhibited a maximum around 285 °C. Given that TL glow peak also occurs near this temperature and that the nitrogen-interstitial carbon (N-Ci) complex also forms at this temperature (as reported in the literature), and it appears that the e-h recombination at sites with N-Ci complex could be involved in BLSL production. Laser excited photoluminescence (PL) at wavelengths 325, 514 and 785 nm and absorption spectra in UV-Visible range gave insights into the contrasting BLSL/IRSL responses of 2C and 2D. These differences were due to differences in nitrogen impurity complexes and the concentration of carbon vacancies produced by EBT in 2C and 2D. In 2D, the presence of Ni as NE8 center (four nitrogens coordinated to Ni) giving 800 nm emission on 785 nm excitation, appeared to suppress BLSL and sensitize IRSL in the orange window. 相似文献

The evaluation of the creep deformation and fracture behavior of a 2.25Cr-1Mo steel base metal, a 2.25Cr-1Mo/2.25Cr-1Mo similar
weld joint, and a 2.25Cr-1Mo/Alloy 800 dissimilar weld joint at 823 K over a stress range of 90 to 250 MPa has been carried
out. The specimens for creep testing were taken from single-V weld pads fabricated by a shielded metal arc-welding process
using 2.25Cr-1Mo steel (for similar-joint) and INCONEL 182 (for dissimilar-joint) electrodes. The weld pads were subsequently
given a postweld heat treatment (PWHT) of 973 K for 1 hour. The microstructure and microhardness of the weld joints were evaluated
in the as-welded, postweld heat-treated, and creep-tested conditions. The heat-affected zone (HAZ) of similar weld joint consisted
of bainite in the coarse-prior-austenitic-grain (CPAG) region near the fusion line, followed by bainite in the fine-prior-austenitic-grain
(FPAG) and intercritical regions merging with the unaffected base metal. In addition to the HAZ structures in the 2.25Cr-1Mo
steel, the dissimilar weld joint displayed a definite INCONEL/2.25Cr-1Mo weld interface structure present either as a sharp
line or as a diffuse region. A hardness trough was observed in the intercritical region of the HAZ in both weld joints, while
a maxima in hardness was seen at the weld interface of the dissimilar weld joint. Both weld joints exhibited significantly
lower rupture lives compared to the 2.25Cr-1Mo base metal. The dissimilar weld joint exhibited poor rupture life compared
to the similar weld joint, at applied stresses lower than 130 MPa. In both weld joints, the strain distribution across the
specimen gage length during creep testing varied significantly. During creep testing, localization of deformation occurred
in the intercritical HAZ. In the similar weld joint, at all stress levels investigated, and in the dissimilar weld joint,
at stresses ≥150 MPa, the creep failure occurred in the intercritical HAZ. The fracture occurred by transgranular mode with
a large number of dimples. At stresses below 150 MPa, the failure in the dissimilar weld joint occurred in the CPAG HAZ near
to the weld interface. The failure occurred by extensive intergranular creep cavity formation. 相似文献
