ABSTRACT: The study reports whether or not oregano oil can reduce lipid oxidation and evaluate palatability variations in beef longissimus dorsi and semimembranosus muscles from various age animals (approximately 18 mo; 18 M, 30 to 60 mo; 30 M, and >60 mo; 60 M). Six muscles of each age group were halved and enhanced with a control brine containing no antioxidants (CN) or a brine containing oregano oil (OR), cut into steaks, and stored in modified atmosphere packaging for 0, 4, 7, and 11 d. Each sampling day, surface color (Minolta L*, a*, b*), lipid oxidation (TBARS), cook yield, sensory analysis, and Warner–Bratzler shear force (WBSF) were measured. OR enhancement decreased TBARS values and slowed the rate of decline in a* values (P < 0.05), but had no effect on WBSF, or sensory tenderness and juiciness scores (P > 0.05) compared to CN steaks. OR steaks had less rancidity detection, more off-flavor, lower overall acceptability in sensory analysis (P < 0.05). This indicated oregano oil can effectively reduce lipid oxidation and extend shelf-life of meat products, but further investigation would be needed to avoid off-flavor and acceptability of product quality. Practical Application: Decreases in meat consumption have led the meat industry to become more innovative in product development. Reducing lipid oxidation is a viable method to reduce rancidity, and improving product acceptability. Our research indicated that although oregano oil did reduce lipid oxidation, the adverse effects of flavor were too great, and thus would not be tolerable in fresh meat products at this concentration. However, there is potential to use oregano oil at lower concentrations and in a variety of processed products which could be beneficial to further the use of natural antioxidants.  相似文献

A new site-specific, dynamic model (SoilPlus) was developed to simulate the fate of nonionized organic chemicals in the air/litter/soil system; key features of the model are the double-layered air compartment interacting dynamically with multilayered litter and soil compartments, with seasonal dissolved organic carbon (DOC) fluxes. The model describes the soil environment calculating separate mass balances for water, chemical, and organic matter. SoilPlus underwent a process of benchmarking and evaluation in order to reach a satisfying confirmation of its predictive capability. Several simulations were performed to estimate the role of litter and DOC in affecting the fate of a model contaminant for POPs (hexachlorobenzene). The model shows that litter can behave as a buffer in the process of transferring hexachlorobenzene from air to the mineral soil and as a trap when hexachlorobenzene tends to move from a contaminated field toward clean air. DOC seems to behave as a leaching-enhancer in certain climatic conditions (heavy rainfall, high DOC concentrations), but it does not appear to move significant amounts of HCB in a year calculation.  相似文献

Microbial processes can affect the environmental behavior of redox sensitive radionuclides, and understanding these reactions is essential for the safe management of radioactive wastes. Neptunium, an alpha-emitting transuranic element, is of particular importance because of its long half-life, high radiotoxicity, and relatively high solubility as Np(V)O(2)(+) under oxic conditions. Here, we describe experiments to explore the biogeochemistry of Np where Np(V) was added to oxic sediment microcosms with indigenous microorganisms and anaerobically incubated. Enhanced Np removal to sediments occurred during microbially mediated metal reduction, and X-ray absorption spectroscopy showed this was due to reduction to poorly soluble Np(IV) on solids. In subsequent reoxidation experiments, sediment-associated Np(IV) was somewhat resistant to oxidative remobilization. These results demonstrate the influence of microbial processes on Np solubility and highlight the critical importance of radionuclide biogeochemistry in nuclear legacy management.  相似文献

We evaluated alternatives to cautery disbudding of goat kids using physiological measures of immediate and longer-term pain. Fifty Saanen doe kids were randomly assigned to 1 of 5 treatments (n = 10/treatment): (1) cautery disbudding (CAUT), (2) caustic paste disbudding (CASP), (3) liquid nitrogen disbudding (CRYO), (4) clove oil injected into the horn bud (CLOV), or (5) sham disbudding (SHAM). Serum cortisol and haptoglobin concentrations were measured from blood samples collected immediately before treatment (baseline) and at 15, 30, 60, and 120 min and then again at 6 and 24 h post-treatment. An infrared thermography camera was used to take images of the horn buds 24 h pre- and 24, 48, and 72 h post-treatment to measure skin temperature. Body weight was measured daily for 1 wk to assess weight change post-treatment. Images of the horn buds were taken at d 1, 2, and 7 and at 6 wk post-treatment to assess tissue damage and wound healing. Mean cortisol concentrations were elevated in CASP kids 1 h post-treatment relative to CAUT kids. Cortisol concentrations of CRYO kids were higher than those of CAUT kids 30 min post-treatment; concentrations for CLOV kids were similar to CAUT kids post-treatment. Mean haptoglobin concentrations were similar across treatments over time; however, CLOV kids had higher concentrations at 24 h post-treatment than all other treatments. Skin temperatures of CASP and CLOV kids were elevated relative to CAUT kids at all time points post-treatment, and all disbudded kids had skin temperatures above those of SHAM kids at 72 h post-treatment. Treatment did not influence weight gain. The CAUT kids had large, open wounds exposing bone; small scabs were still evident 6 wk post-treatment. The CASP kids had red and open, raw wounds that generated large eschars, apparent for up to 6 wk. The CRYO kids had closed, dry wounds initially, but over time lesions appeared that caused open wounds; small scabs were present 6 wk post-treatment. The CLOV kids had closed, dry wounds with blackened skin; healed skin and minimal scabs were present 6 wk post-treatment. Caustic paste and cryosurgical disbudding appeared to cause more pain compared with cautery disbudding; thus, these methods may not provide good alternatives to cautery disbudding. Clove oil appeared to cause a similar pain response as cautery disbudding and smaller wounds with earlier tissue repair; this method shows promise as an alternative to cautery disbudding.  相似文献

Hydraulic conductivity and swell index tests were conducted on a conventional geosynthetic clay liner (GCL) containing sodium-bentonite (Na-B) using 5, 50, 100, 500, and 1000 mM ammonium acetate (NH4OAc) solutions to investigate how NH4+ accumulation in leachates in bioreactor and recirculation landfills may affect GCLs. Control tests were conducted with deionized (DI) water. Swell index of the Na-B was 27.7 mL/2 g in 5 mM NH4+ solution and decreased to 5.0 mL/2 g in 1000 mM NH4+ solution, whereas the swell index of Na-B in DI water was 28.0 mL/2 g. Hydraulic conductivity of the Na-B GCL to 5, 50, and 100 mM NH4+ was low, ranging from 1.6–5.9 × 10?11 m/s, which is comparable to the hydraulic conductivity to DI water (2.1 × 10?11 m/s). Hydraulic conductivities of the Na-B GCL permeated with 500 and 1000 mM NH4+ solutions were much higher (e.g., 1.6–5.2 × 10?6 m/s) due to suppression of osmotic swelling. NH4+ replaced native Na+, K+, Ca2+, and Mg2+ in the exchange complex of the Na-B during permeation with all NH4+ solutions, with the NH4+ fraction in the exchange complex increasing from 0.24 to 0.83 as the NH4+ concentration increased from 5 to 1000 mM. A Na-B GCL specimen permeated with 1000 mM NH4+ solution to chemical equilibrium was subsequently permeated with DI water. Permeation with the NH4+ converted the Na-B to “NH4-bentonite” with more than 80% of the exchange complex occupied by NH4+. Hydraulic conductivity of this GCL specimen decreased from 5.9 × 10?6 m/s to 2.9 × 10?11 m/s during permeation with DI water, indicating that “NH4-bentonite” can swell and have low hydraulic conductivity, and that the impact of more concentrated NH4+ solutions on swelling and hydraulic conductivity is reversible.  相似文献

Experimental simulations of model well‐bore flows in laboratory pipelines show that frictional energy losses (i.e., pressure drops) are reduced when water is present with heavy oil. The reduction has been shown to increase with the water fraction. The mixtures are not oil in water emulsions in the classical sense of the term. At the low axial velocities which characterize wellbore flows, the flow regime is inherently intermittent. Using a variety of methods the structure of the flow has been examined to identify the flow regime and the cause of the reduced pressure gradients. It has been found that the water travels as large slugs and that oil is invariably present at the wall when the mixture flows through a steel pipe. The evidence suggests that a significant fraction of the oil is transported within the water slugs. A tentative flow regime boundary between the regions of intermittent and continuous water‐assisted flow is proposed in terms of the mixture Froude number and the injected water fraction.  相似文献

Food texture preference and product acceptance are hypothesized to be influenced by mouth behavior. Recent work identified four mouth behavior (MB) groups that describe most consumers in the United States: Chewers, Crunchers, Smooshers, and Suckers. While these behavioral preferences are thought to play a significant role in food selection and purchasing decisions, it is unknown how closely they relate to body and oral cavity measures as well as masticatory apparatus performance. Our objectives were twofold: to determine whether MB groups are related to (a) morphological variation in body, head, and oral cavity size and (b) masticatory apparatus performance (i.e., maximum jaw gape, maximum bite forces at the incisors and first molar). Measurements were collected following an online MB assessment (JBMB Mouth Behavior Typing Tool) where participants self-identified as one of the four types of consumers. As expected, univariate associations were observed between masticatory performance and overall body as well as oral cavity size. These relationships did not persist when assessed with multivariate methods. MB groups did not differ by body, head, or oral cavity measurements; maximum gape; or maximum bite force. Because of small sample sizes for Smooshers and Suckers—a reflection of their limited prevalence in the U.S. population—we interpret the results for these groups with caution. We can more confidently conclude based on our sample that Chewers and Crunchers do not differ in size, bite force, or maximum gape, suggesting other factors primarily drive food texture choice and preference in these individuals.  相似文献

Omega-3 and omega-6 fatty acids are important for neonatal development and health. One mechanism by which omega-3 and omega-6 fatty acids exert their effects is through their metabolism into oxylipins and specialized pro-resolving mediators. However, the influence of oxylipins on fetal growth is not well understood. Therefore, the objective of this study was to identify oxylipins present in maternal and umbilical cord plasma and investigate their relationship with infant growth. Liquid chromatography–tandem mass spectrometry was used to quantify oxylipin levels in plasma collected at the time of delivery. Spearman’s correlations highlighted significant correlations between metabolite levels and infant growth. They were then adjusted for maternal obesity (normal body mass index (BMI: ≤30 kg/m2) vs. obese BMI (>30 kg/m2) and smoking status (never vs. current/former smoker) using linear regression modeling. A p-value < 0.05 was considered statistically significant. Our study demonstrated a diverse panel of oxylipins from the lipoxygenase pathway present at the time of delivery. In addition, both omega-3 and omega-6 oxylipins demonstrated potential influences on the birth length and weight percentiles. The oxylipins present during pregnancy may influence fetal growth and development, suggesting potential metabolites to be used as biomarkers for infant outcomes.  相似文献

Stress is known to alter physiological homeostasis and distort experimental results. In particular, stress associated with restraint and group‐interaction may modify the lethality of toxic substances. Median lethal concentrations (LC50) for carbon monoxide (CO) were determined using restrained or unrestrained mice exposed for 30 min as groups or individuals. To evaluate stress levels, the serum concentration of corticosterone (COS) was determined for each exposure configuration by radioimmunoassay. Additional LC50 values for CO were determined after treating groups of restrained mice with mifepristone (10 mg/kg), to block the effects of COS, and groups of unrestrained mice with exogenous COS (2 mg/kg), to elevated the serum level. The LC50 value obtained using restrained mice exposed in groups (0.26%) was significantly lower (p<0.05) than the values derived from all other exposure configurations (0.41–0.58%). The higher LC50 values did not differ significantly, although the highest values were obtained from individual exposures. Levels of COS were strongly correlated with CO toxicity (r=0.90). The LC50 obtained from mifepristone‐treated mice (0.41%) was significantly higher (p<0.05) than that obtained from restrained groups of untreated mice (0.26%). However, treatment with COS did not alter the LC50 obtained from unrestrained groups of mice (0.41%). The results suggest that restraint and interaction must be coupled to significantly modify estimates of toxicity, and that effective interaction between restrained mice can occur (probably mediated by olfactory cues). Both factors appear to elevate stress levels in mice, and stress appears to increase the sensitivity of mice to intoxication by CO. Secondary ethers can be obtained from meadow-foam-derived delta lactones or 5-hydroxy fatty acids by using Lewis or Brønsted acid catalysts in good yield (70–90%). The conversion of δ-lactone or 5-hydroxy fatty acid to 5-ethers is performed under atmospheric pressure between 67 and 125°C with 0.5–6.4 mole equivalents of acid catalyst in the presence of 2–40 equivalents of alcohol and a reaction time of 1–140 h. Acid catalysts include mineral acids, such as perchloric and sulfuric; Lewis acids, such as boron trifluoride; and heterogeneous catalysts, such as clays and ion-exchange resins. Primary alcohols, such as methanol, butanol, decanol, and oleyl alcohol, or branched-chain alcohols, such as 2-ethylhexanol, can be used to make secondary ether fatty esters. The 5-ether fatty esters and the process for their formation have not been previously known and appear to be limited to structures where stabilized cations can be formed. The novel ethers were fully characterized by nuclear magnetic resonance and gas chromatography-mass spectrometry.  相似文献
