In this paper, a novel method for the incorporation of the antioxidant β-carotene in hydrocolloid matrices is presented, which consists on the use of glycerol as the vehicle for incorporation. This alcohol has been observed to greatly photostabilise the carotenoid molecule within the hydrocolloid matrices without greatly affecting the mechanical properties of the materials. The UV stability of β-carotene in the different hydrocolloid films developed (including starch, soy protein, whey protein concentrate, gelatin and zein) has been studied using UV/visible spectrophotometry, colorimetry and Raman spectroscopy. Raman images of the materials were also generated in order to ascertain the dispersion of the antioxidant within the hydrocolloid materials and it was observed that β-carotene was partially agglomerated in certain areas of the film, fact that could also contribute to enhance the stability of the bioactive molecule.  相似文献

The microstructural, physical, and sensory properties of low-fat sauces made with different starches, soy protein, and inulin as a fat replacer were analyzed. Gluten-free waxy starches-rice and corn-were selected as well as soy protein to obtain sauces suitable for celiac and lactose intolerant consumers. Light microscopy was used to visualize the swollen starch granules dispersed in a protein-amylopectin-inulin phase. Inulin seemed to limit protein network development, which was related with a higher dispersion of starch granules within the sauce matrix. Therefore, the sauces made with inulin had a lower apparent viscosity (η(app) ) values (P < 0.05) in comparison with oil sauces. The sauces made with rice starches also exhibited a lower viscosity (P < 0.05) since these granules did not swell as corn granules do. All the sauces had a remarkable physical stability since there were no syneresis phenomena and color did not change significantly (P < 0.05) after 15 d of refrigeration storage (4 °C). Finally, the sensory test suggests that oil could be substituted by inulin in the preparation of low-fat sauces since no significant differences (P < 0.05) in texture and flavor were found. These results encourage further research to optimize the formulations of these types of alternative white sauces. Practical Application: Nowadays there is a great demand of ready-to-eat products due to new consumptions habits. In this context, it would be interesting to develop low-fat sauces with inulin that could be used in this type of products improving their nutritional profile. The requirement of processed food for specific groups of population, such as celiac and lactose intolerant consumers, makes it necessary to use gluten free starches and soy protein in the formulation of sauces. The characterization of structural, physical and sensory properties is required to understand the product acceptability and its behavior during its shelf life.  相似文献

Intrabody communication (IBC) is a technique that uses the human body as a transmission medium for electrical signals to connect wireless body sensors, e.g., in biomedical monitoring systems. In this paper, we propose a simple, but accurate propagation model through the skin based on a distributed-parameter circuit in order to obtain general expressions that could assist in the design of IBC systems. In addition, the model is based on the major electrophysiological properties of the skin. We have found the attenuation and dispersion parameters and they have been successfully compared with several published results, thus showing the tuning capability of the model to different experimental conditions. Finally, we have evaluated different digital modulation schemes in order to assess the tradeoffs between symbol rate, bit error rate, and distance between electrodes of the skin communication channel.  相似文献

Ferritin synthesis was evaluated in iron sulphate solutions and in fruit beverages supplemented with iron, with/without zinc in the presence of caseinophosphopeptides (CPPs), based on a system combining simulated gastrointestinal digestion and the Caco-2 cell model. In iron sulphate solutions with/without zinc, the addition of CPPs had no effect upon ferritin synthesis. When CPPs were added to the bioaccessible fraction of fruit beverages supplemented with iron, ferritin synthesis increased in the same proportion as with the addition of milk. The addition of zinc to fruit beverages supplemented with iron and to iron sulphate solutions decreased ferritin synthesis. Nevertheless, in fruit beverages with milk, this decrease in ferritin synthesis was not observed when zinc was present.  相似文献

This work deals with the study of the kinetic of aroma release, which had been previously incorporated into soy protein isolate (SPI)–lipid composite films. The aim was to determine the influence of type and amount of lipidic material on aroma (n-hexanal) release and retention, as well as the apparent diffusion coefficients. To carry out this study it have been employed SPI-based films containing two SPI:LIPID ratios (1:0.25 and 1:0.5), and two types of lipids, oleic acid (OA) and beeswax (BW), in OA:BW ratios 100:0, 70:30, 50:50, 30:70 and 0:100. The measurements were performed by a gas chromatography technique. The films that showed more retention were SPI:LIPID 1:0.5 100% BW and control film. Concerning release rate, films containing BW as unique lipid material gave the lowest aroma release rate. Apparent diffusion coefficients (Dapp) of all films are in the same order of magnitude (10−15 m2 s−1). Dapp decreases when BW increases in the film matrix and when oleic acid amount decreases. In conclusion, for encapsulating n-hexanal, SPI-BW films demonstrated the best performances, followed by control film (without lipids).  相似文献

In the last years there is an increasing demand to produce wines with higher glycerol levels and lower ethanol contents. The production of these compounds by yeasts is influenced by many environmental variables, and could be controlled by the choice of optimized cultivation conditions. The present work studies, in a wine model system, the effects of temperature, pH and sugar concentration on the glycerol and ethanol syntheses by yeasts Saccharomyces cerevisiae T73, the type strain of Saccharomyces kudriavzevii IFO 1802T, and an interspecific hybrid between both species (W27), which was accomplished by the application of response surface methodology based in a central composite circumscribed design. Results show that carbon flux could be especially directed towards glycerol synthesis instead of ethanol at low pH, high sugar concentrations and low temperatures. In general, the non-wine yeast S. kudriavzevii produced higher glycerol levels and lower ethanol content than wine strains S. cerevisiae T73 and the hybrid W27, with specific and different glycerol production profiles as a function of temperature and pH. These results were congruent with the higher glycerol-3-phosphate dehydrogenase activities estimated for this species, chiefly at low temperatures (14 °C), which could explain why S. kudriavzevii is a cryotolerant yeast compared to S. cerevisiae.  相似文献

A total of 63 strains of Dekkera bruxellensis and 32 strains of Pichia guilliermondii isolated from wine related environments were identified by restriction analysis of the 5.8S-ITS region of the rDNA. These strains were subjected to intraspecific discrimination using mtDNA restriction and RAPD-PCR analysis. The isolates identified as D. bruxellensis yielded 3 different molecular patterns of mtDNA restriction using the endonuclease HinfI. The pattern A was the most frequent (58 strains) among strains from different sources, regions and countries. Pattern B (4 strains) and C (one strain) were determined in isolates from Portuguese wines. The discrimination among the pattern A strains was achieved by a RAPD-PCR assay with 3 primers (OPA-2, OPA-3 and OPA-9). A total of 12 haplotypes were obtained with the combination of the patterns provided by the 3 OPAs. The pattern 2 was the most frequent and extensively distributed being found in strains from different countries and from different sources like wine, barrique wood and insects. The strains of P. guilliermondii were characterized with restriction of mtDNA using the endonuclease HinfI yielding 7 different restriction patterns. These patterns were associated with different efficiencies of 4-ethylphenol production. Patterns A to D corresponded to 19 strains producing low levels of 4-ethylphenol (<1 mg/l) while patterns F and G grouped 13 strains producing high levels of 4-ethylphenol (>50 mg/l), when grown in synthetic media supplemented with 100 mg/l of p-coumaric acid. The high degree of polymorphism observed shows that intraspecific typing is essential for accurate yeast dissemination studies in wine related environments.  相似文献

Modern lifestyles, new demographic trends, and the expansion of the European Community are changing the European countryside. At stake are cultural landscapes, their richness in wildlife, historical interest, scenic beauty, and the recreational opportunities they provide. Visible phenomena of change are symptoms of a growing socio-economic and ecological disparity between different regions. Agreements on AGENDA 2000 European policy provide a new platform for regional and agricultural development. The paper explores which landscape dynamics are in store. Employing examples from rural Germany, the paper presents corridors of possible futures for unique, and at the same time, dynamic places. Modern strategies of landscape and urban planning are discussed which aim at closer co-operation between a multitude of stakeholders, policy makers, planners, and other agents of change. Methods and tools are needed to build consensus among ever increasing numbers of participants representing potentially wide ranges of values.  相似文献

Different approaches have been reported to enhance penetration of small drugs through physiological barriers; among them is the self-assembly drug conjugates preparation that shows to be a promising approach to improve activity and penetration, as well as to reduce side effects. In recent years, the use of drug-conjugates, usually obtained by covalent coupling of a drug with biocompatible lipid moieties to form nanoparticles, has gained considerable attention. Natural products isolated from plants have been a successful source of potential drug leads with unique structural diversity. In the present work three molecules derived from natural products were employed as lead molecules for the synthesis of self-assembled nanoparticles. The first molecule is the cytotoxic royleanone 7α-acetoxy-6β-hydroxyroyleanone (Roy, 1) that has been isolated from hairy coleus (Plectranthus hadiensis (Forssk.) Schweinf). ex Sprenger leaves in a large amount. This royleanone, its hemisynthetic derivative 7α-acetoxy-6β-hydroxy-12-benzoyloxyroyleanone (12BzRoy, 2) and 6,7-dehydroroyleanone (DHR, 3), isolated from the essential oil of thicket coleus (P. madagascariensis (Pers.) Benth.) were employed in this study. The royleanones were conjugated with squalene (sq), oleic acid (OA), and/or 1-bromododecane (BD) self-assembly inducers. Roy-OA, DHR-sq, and 12BzRoy-sq conjugates were successfully synthesized and characterized. The cytotoxic effect of DHR-sq was previously assessed on three human cell lines: NCI-H460 (IC50 74.0 ± 2.2 µM), NCI-H460/R (IC50 147.3 ± 3.7 µM), and MRC-5 (IC50 127.3 ± 7.3 µM), and in this work Roy-OA NPs was assayed against Vero-E6 cells at different concentrations (0.05, 0.1, and 0.2 mg/mL). The cytotoxicity of DHR-sq NPs was lower when compared with DHR alone in these cell lines: NCI-H460 (IC50 10.3 ± 0.5 µM), NCI-H460/R (IC50 10.6 ± 0.4 µM), and MRC-5 (IC5016.9 ± 0.5 µM). The same results were observed with Roy-OA NPs against Vero-E6 cells as was found to be less cytotoxic than Roy alone in all the concentrations tested. From the obtained DLS results, 12BzRoy-sq assemblies were not in the nano range, although Roy-OA NP assemblies show a promising size (509.33 nm), Pdl (0.249), zeta potential (−46.2 mV), and spherical morphology from SEM. In addition, these NPs had a low release of Roy at physiological pH 7.4 after 24 h. These results suggest the nano assemblies can act as prodrugs for the release of cytotoxic lead molecules.  相似文献

In computer vision, motion analysis is a fundamental problem. Applying the concepts of congruence checking in computational geometry and geometric hashing, which is a technique used for the recognition of partially occluded objects from noisy data, we present a new random sampling approach for the estimation of the motion parameters in two- and three-dimensional Euclidean spaces of both a completely measured rigid object and a partially occluded rigid object. We assume that the two- and three-dimensional positions of the vertices of the object in each image frame are determined using appropriate methods such as a range sensor or stereo techniques. We also analyze the relationships between the quantization errors and the errors in the estimation of the motion parameters by random sampling, and we show that the solutions obtained using our algorithm converge to the true solutions if the resolution of the digitalization is increased.  相似文献
