In this study, probiotic gel fermentation and functional characteristics of reduced sugar yoghurt with red beetroot bioactive components and steviol glycosides from Stevia rebaudiana extracts as natural source of noncaloric sweeteners were investigated. A significant increase in Lactobacillus casei viability and fermented gel network and a decrease in syneresis were determined in yoghurt sweetened with steviol glycosides and high content of red beetroot bioactive components such as total phenolics, anthocyanins and total antioxidant capacity (DPPH and FRAP). The survival of L. casei was maintained within probiotic and therapeutic levels (>9 log10 CFU/g), due to the possible prebiotic effect of steviol glycosides and fermentable fibres and phenolic compounds of red beetroot during 28 days of cold storage of the probiotic yoghurts. Colour properties (L*, a*, b*, ΔE*, C*, h*) and such sensory properties as smoothness, sweetness astringency were significantly affected. The highest organic acid content was found in red beetroot enriched yoghurt with stevia, while the most dominant organic acids were butyric, lactic, malic and citric. As a result, it was determined that fermented milk products, which are supported by phytochemical and steviol glycoside interactions, have adequate nutritional effects, high probiotic viability and acceptable sensory properties  相似文献

In this study, the changes during storage in the physicochemical, textural and sensory properties of nonfat yoghurts fortified with whey proteins, namely whey protein concentrates (WPC), whey protein isolates and whey protein hydrolysates, were investigated. Enrichment of nonfat yoghurt with the whey protein additives (1% w/v) had a noticeable effect on pH, titratable acidity, syneresis, water‐holding capacity, protein contents and colour values on the 14th day of storage (< 0.01). The addition of whey proteins to the yoghurt milk led to increases in the hardness, cohesiveness and elasticity values, resulting in improved textural properties. The addition of WPC improved the texture of set‐type nonfat yoghurt with greater sizes in the gel network as well as lower syneresis and higher water holding capacity. This study suggests that the addition of whey protein additives used for fortification of yoghurt gave the best textural and sensory properties that were maintained constant during the shelf life.  相似文献

The physicochemical and sensory properties of skim milk yoghurts containing poly‐γ‐glutamic acid (PGA) at different levels (0.0025, 0.005 and 0.01%) were evaluated. Addition of PGA up to 0.01% to reconstituted skim milk (11%, w/v) did not affect the growth of lactic acid bacteria or the development of titratable acidity in yoghurt, whereas full‐fat control yoghurt had reduced acid production. No changes were found in viable cell counts of PGA yoghurts during storage (4 weeks at 4 °C). The addition of PGA (0.005%) significantly decreased syneresis in skim milk yoghurt and did not cause any undesirable effects in sensory acceptability.  相似文献

Abstract: The effects of the addition of cyclodextrins (CDs), β‐CD, or HP‐β‐CD (1%), on the protection of antioxidant compounds of mandarin juices enriched with pomegranate extract and goji berries juice, was studied. Juices were prepared and after their thermal treatment (98 °C, 30 s) they were stored at 4 °C during 75 d. Vitamin C content, CIE L*a*b* color, antioxidant capacity, retinol equivalents, and sensory properties were studied. Losses on vitamin C were higher (6%) for juices with β‐CD than juices with HP‐β‐CD. Retinol equivalents degradation was lower (3.4%) in juices with HP‐β‐cyclodextrins than in those treated with β‐CD. Lower losses were observed for the instrumental and sensory color intensity in juices with HP‐β‐CD addition. Finally, the antioxidant capacity was also higher in juices treated with HP‐β‐CD. Finally, the overall sensory quality of juices with HP‐β‐CD was the best one after 30 d of cold storage. Even though β‐CD addition did not cause any improvement compared with control juice (without CD addition), the benefits of adding HP‐β‐CD to this particular juice were shown in almost all parameters under study. Practical Application: The present study deals with the practical aspects of the utilization of CDs and CD‐complexes in the food industry. The molecular encapsulation of lipophilic food ingredients with CD are supposed to improve the stability of flavors, vitamins, colorants, and antioxidant activity, leading to extended product shelf life. The HP‐β‐CD treated mandarin juice enriched with pomegranate extract and juice of goji berries will have a more intense color, higher vitamin C content, retinol equivalents, and antioxidant activity during storage and shelf life than control juices, with no CD addition.  相似文献

Eri?te is a traditional cereal product in Turkey, which resembles Asian noodles. Since it is a suitable product for enrichment, it was aimed in this study to utilize some fruit processing by‐products to enrich eri?te in terms of antioxidants and to determine the effect of enrichment on physical properties of eri?te. For that purpose, eri?te samples enriched with three different proportions (10, 20 and 30%) of grape, pomegranate and rosehip seed flours were compared with the control group in terms of antioxidant activity, color, cooking, textural and sensory properties to evaluate the effect of enrichment on eri?te quality. It was determined that addition of 10% grape, pomegranate and rosehip seed increased the antioxidant activity of eri?te by 8, 4 and 5.7 times, respectively, as compared with the control. Although the sensory analysis indicate that eri?te enriched with pomegranate seed were mostly liked, antioxidant activity was found lower than the others.

Practical applications

Using by products and wastes of foods like fruit seeds for enrichment is a promising alternative for utilization. Grape, pomegranate and rosehip seeds have very high antioxidant levels with natural antioxidants like proanthocyanidins, resveratrol, tocopherols etc; rich in dietary fiber, also unsaturated and essential fatty acids. For this purpose; cooking, textural, sensory, color and antioxidant properties of enriched samples were compared with traditional Turkish noodle.  相似文献

The effect of encapsulated (En) and nonencapsulated (NE) grape seed extract (GSE) at 1% level added to milk before its fermentation was evaluated on the physicochemical properties, total phenolic content and antioxidant activity of the resulting yoghurt. Encapsulated GSE resulted in a product comparable to the control, based on sensory properties, acidity, water‐holding capacity, viscosity and colour, along with a threefold increase in total phenolic content and fourfold increase in antioxidant activity. The GSE addition resulted in no effect on the viability of Streptococcus thermophilus and Lactobacillus bulgaricus subsp. delbrueckii counts. The product with NE‐GSE had poor sensory properties and lesser polyphenol stability during storage as compared to En‐GSE yoghurt.  相似文献

利用低聚果糖作为脂肪替代物,低聚果糖按照1%、2%和3%的比例加入到低脂凝固型发酵乳中,考察低聚果糖对低脂凝固型发酵乳酸度、硬度、黏度、持水率、脱水收缩率、颜色和感官评价等的影响。结果表明,冷藏过程中,低聚果糖的添加可以有效改善低脂凝固型发酵乳pH值偏高、滴定酸度偏低的问题;增加低脂凝固型发酵乳的硬度,利于凝固型酸奶发酵过程中的成型;降低低脂凝固型发酵乳的黏度;增加持水率和降低脱水收缩率,提高低脂凝固型发酵乳的稳定性;避免由脂肪氧化产生的变红趋势。在感官评价方面,低聚果糖可以改善低脂凝固型发酵乳的颜色和外观,但在整体接受度、风味和气味方面与全脂发酵乳仍有差距。  相似文献

In the present work, yoghurts were made from sheep’s milk with two different somatic cell count (SCC), at low (200 000 cells mL?1) and high (750 000 cells mL?1) levels. The characteristics of the final product were analysed for pH, acidity, protein, total solids, fat, syneresis, water holding capacity (WHC) and apparent viscosity. Samples were analysed on days 1, 7 and 14 after production of yoghurts. The SCC had no significant effect either on the acidity or pH of the yoghurt at 24 h (P > 0.05) but a significant effect (P < 0.05) was observed at 168 h. No effects of SCC were observed on total solids and fat content of the yoghurt after 24 and 168 h. High SCC (HSCC) yoghurt had higher protein content (P < 0.05). The yoghurt with the highest SCC had the highest level of syneresis. Viscosity of HSCC yoghurt was higher than that of the low SCC yoghurt on days 1, 7 and 14 of storage. The flow properties also showed that the low SCC yoghurt was softer than that from milk with high content in somatic cells.  相似文献

This study was aimed at investigating the fortification of probiotic yoghurt with rice bran to increase nutritional properties of the product. The different levels of rice bran (0.3%, 0.6%, 0.9% and 1.2%) were incorporated into milk. The yoghurt samples were produced after pasteurisation, addition of starter culture and 1% Lactobacillus acidophilus suspension (6 × 108 CFU mL?1) and incubation. During sample storage in refrigerator, the viability of L. acidophilus, viscosity and physicochemical and sensory properties of product were investigated. Rice bran significantly increased the viability of L. acidophilus (< 0.05). In addition, all probiotic yoghurts incorporating rice bran indicated higher viscosity and acidity and lower pH and syneresis compared to plain yoghurts. Furthermore, increments in rice bran incorporation levels resulted in a reduction in consumers' sample preferences. In general, the addition of rice bran at a suitable level could increase L. acidophilus viability and improve quality attributes of yoghurt.  相似文献

The properties of buffalo and bovine milk differ and the procedures developed to make bovine yoghurt may require optimisation for the production of buffalo yoghurt. This study aimed to apply cryo-scanning electron microscopy and confocal laser scanning microscopy to determine the optimal temperature for processing buffalo yoghurt. Milk was fermented at three different temperatures (37, 40 and 43 °C), stored for 28 days and the yoghurt microstructure, physicochemical and rheological properties assessed. Yoghurt fermented at 37 °C had a compact microstructure and the probiotic Lactobacillus acidophilus La-5 was more viable on storage. In contrast, yoghurt produced from a faster fermentation at 43 °C was firmer with a more porous microstructure that exhibited a higher degree of syneresis. The rheological properties during storage including the thixotropy, consistency coefficient and flow behaviour index were not significantly affected by temperature nor were the concentration of lactose, ionic calcium or titratable acidity. This study shows how changes to processing can be used to alter the microstructure of buffalo products and suggests that a decrease in fermentation temperature could be used to improve the quality of buffalo yoghurt.  相似文献

This study was conducted in order to evaluate the effects of transglutaminase (TGase) addition on some properties of set-type yoghurts such as titratable acidity, lactic acid, tyrosine, viscosity, gel firmness, syneresis, aroma compounds, sensory analysis, and micro-structural properties. The enzyme was added to yoghurt-milk at different production steps (after homogenization, after pasteurization and together with starter culture addition) and two different incubation times (10 min and 1 h) were used. Five TGase treated yoghurt samples and control sample were analyzed on 1st, 10th, and 20th days of storage. TGase addition did not cause significant changes on chemical properties of yoghurts. However, enzyme addition after pasteurization increased the gel strength and decreased the syneresis. Results of electron microscope showed that enzyme addition led proteins to be distributed more evenly in gel network due to the formation of cross-links between proteins.  相似文献

The purpose of this study was to investigate the impact of adding nano-stabilisers on some properties of yoghurt. Carboxymethyl cellulose (CMC), sodium alginate (SA) and kappa-carrageenan (K-C) were used at 0.2%, 0.2% and 0.02% in their original forms and 0.15%, 0.15% and 0.015% in nano-form, respectively. The effects of these additives on yoghurt pH, titratable acidity, viscosity, syneresis, texture, colour, starter culture bacterial count, mould and yeast count, coagulation time and microstructure were studied. The use of nano-stabilisers increased viscosity, hardness and coagulation time; reduced syneresis and Streptococcus thermophilus count; and improved colour. Results indicated that nano-stabilisers improved the rheological and technological characteristics of yoghurt.  相似文献

Minas Frescal cheeses produced with the addition of the probiotic culture Bifidobacterium Bb‐12 and without (C1) or with (C2) lactic acid were evaluated in relation to the microbiological, physicochemical and sensory properties. After 28 days of storage, the cheeses without lactic acid showed lower moisture and pH, in addition to higher acidity and syneresis. This behaviour influenced the texture profile of the cheeses, making them harder and chewier. The colour attributes L* and b* diminished during the storage. The majority of the consumers classified the cheeses as having good acceptability and they would buy this type of functional food.  相似文献

The objectives of this study were to determine pasting properties of non‐roasted (NR) and roasted quinoa (RQ) and to investigate the effect of RQ on consumer acceptance and physicochemical properties of an allergen‐free, gluten‐free cake formulation. Quinoa seeds were roasted at 177 °C for 15 (R15), 30 (R30) and 45 min (R45), and flours were analysed for pasting properties. Five cakes including a commercial chocolate cake (CCC) and cakes made with NR and RQ flours were evaluated for preference by fifty panelists. Quality parameters included colour, water activity, moisture content, firmness, weight and height. Peak and final viscosity increased with roasting time. The NR cake had the highest sensory scores for appearance, colour and texture. On flavour and overall acceptability, CCC was the highest. Regarding quality data, CCC, NR and R15 cakes had similar L* values, while CCC had the lowest a*, b*, aw, moisture content and firmness values.  相似文献

Growing interest in processed frozen products with similar characteristics to natural products has generated the study of new products in the food industry field. The characteristics of each matrix, the process of elaboration, composition, and structure of the additives and the interactions amongst these modify the food's texture, structure, physical and sensory properties and, hence, interfere directly with consumer acceptance. This research studied the effect of adding cryoprotectors during frozen storage on the rheological, physicochemical, structural, and microbiological properties in a Mafafa‐quinoa‐olive oil puree. To carry out the study, the rheological properties were determined through dynamic oscillatory tests and in steady state; likewise, the physicochemical properties (humidity, color, pH, and syneresis) were analyzed. Regarding physicochemical properties, the humidity content in the purees formulated varied between 57 and 74%, without important variation (p > .05) with respect to the formulation, however, in the storage during the freezing/thawing process, this parameter diminished in greater proportion in those purees containing carrageenan as cryoconservant. Both the addition of cryoconservants and the storage time affected significantly (p < .05) the puree's syneresis, with the degree of exudation being lower in the formulation containing xanthan gum at 1% w/w. During the freezing/thawing process, decreased apparent viscosity was noted. Additionally, the analysis of the viscoelastic properties of the purees evidences that already described, given that a significant effect (p < .05) was observed of the formulation of purees in the elastic component G′, in contrast with a notable decrease in the viscous component G″.  相似文献

BACKGROUND: This research was undertaken to study the effects of different cut‐types (cube, parallelepiped, cylinder and sphere) on the quality and shelf‐life of papaya cv. Sunrise Solo. Physicochemical analyses were carried out during 10 days of storage at 4 °C to determine colour, firmness, pH, titratable acidity, total soluble solids, weight loss and vitamin C content. Microbiological analysis and sensory evaluation were also performed. RESULTS: Papaya spheres (1.55 cm radius) presented the most favourable physicochemical and microbiological properties (smaller changes in colour parameters L*, a*, b*, chroma and hue angle, firmer texture, lower increase in pH, higher titratable acidity, almost constant total soluble solids, reduced weight loss, high vitamin C content and lower microbial loads) and sensory characteristics on day 10, while papaya cubes (1.4 cm side) proved to be the least acceptable. CONCLUSION: The results of physicochemical, microbiological and sensory analyses performed on different cut‐types of papaya indicated acceptable fresh‐cut produce during 10 days of storage at 4 °C. The potential shelf‐life at 4 °C is therefore 10 days, provided that no contamination occurs in the postharvest period and during minimal processing operations. In an attempt to develop a fermented, non‐dairy product based on oats, a new kind of oat base, Adavena® M40, was fermented with two different yoghurt cultures. Adavena® M40 is a concentrated liquid (with a dry matter content of 16 or 18%) derived entirely from oats, with maltose as the main carbohydrate source and an intact β‐glucan content. The oat base was heat treated for 5 min at 85 °C prior to inoculation. Additives in the form of stabiliser, fat and flavours were used. Texture, syneresis, colour and sensory parameters were evaluated. Yoghurt was used as a control. The final product had an acidity and viscosity similar to those of yoghurt. Addition of xanthan gum (0.03% w/v) improved the texture and overall appearance of the product. The product had the same texture as yoghurt but showed less syneresis. The mixture was less white than the control. The oat‐based, yoghurt‐like product showed high acceptability in terms of acidity, texture and overall appearance. The addition of flavours resulted in a higher acceptance of the final products by the panellists. The β‐glucan content was still high after the fermentation process. The results indicated the potential for a new, fermentable, oat‐based product with high acceptance and a high final β‐glucan content. © 2001 Society of Chemical Industry  相似文献

This work investigated effects of cross-linked inulin with different degrees of polymerisation (DP, average = 7 and 15) on physicochemical and sensory properties of set-style yoghurt. Compared with set-style yoghurt made with native inulin (average DP = 4 and 11), yoghurts with cross-linked inulin had higher acidity and lower syneresis values, with a shelf-life of 14 days. Supplementation of cross-linked inulin with higher DP resulted in enhanced firmness and adhesiveness of yoghurts. In addition, bacterial counts showed that yoghurts with cross-linked inulin exhibited longer retention of Streptococcus thermophilus and Lactobacillus delbrueckii ssp. bulgaricus cell viability than that with native inulin. Sensory evaluation indicated that yoghurt with cross-linked long-chain inulin received higher scores for overall acceptability than other samples. However, different types of inulin did not significantly affect odour and colour of set-style yoghurt. Consequently, cross-linked inulin prepared can be exploited as a prebiotic to prolong shelf-life of yoghurt.  相似文献

Bacillus coagulans 13002 (13002) as a new potential starter was incorporated into the yoghurts for fermentation in this study. We compared three groups of yoghurt, including Streptococcus thermophilus and Lactobacillus delbrueckii subsp. bulgaricus (SL), 13002 (BCS), and 13002 and SL (BCS + SL). Compared with the combination of SL and BCS, the group of BCS + SL exhibited better flavour, higher titratable acidity, cohesiveness and richer volatile compounds, suggesting that the combination of BCS and SL was more efficient to produce the best sensory properties of yoghurt (P < 0.05). The production of volatile compounds in fermentation with and without the addition of BCS was mainly affected by aldehydes, ketones, esters and hydrocarbons, respectively. Furthermore, BCS additions into traditional starters resulted in increasing organic acids and speeding up the usage of sucrose and lactose during the fermentation period of yoghurt. Our study suggested that BCS is a favourable starter supplement for improving the quality of probiotic yoghurts.  相似文献
