Treatment of pre-peeled potatoes with heated ascorbic acid (AA)/citric acid (CA) solution to extend shelf-life was investigated. Potatoes were abrasion or high pressure steam peeled, heated for 5–20 min in 1% AA + 2% CA at 45–55°C cooled, and then dipped for 5 min in browning inhibitor (BI) solution containing 4% AA +1% CA +1% sodium acid pyrophosphate. Combined treatment inhibited potato discoloration for 14 days at 4°C compared to 3–6 days with BI treatment alone. Raw material and treatment conditions were selected to minimize graying and textural abnormalities encountered with some treatments. Treatment with heated AA/CA may be an alternative to use of sulfites to control browning in pre-peeled potatoes.  相似文献

The use of sweet potato and yams for product development is hindered by the discoloration from enzymatic and non-enzymatic browning. The effect of pre-soaking treatments on the nutritional changes and browning index (BI) of sweet potato and yam (greater yam and white yam) flours was investigated. Ascorbic acid (AsA), citric acid (CA), acetic acid (AA) and sodium metabisulfite (SMS) were used for soaking at three concentrations (0.25%, 0.50% and 1.00%) and two durations (1 h and 2 h). AsA and SMS removed more starch during soaking of sweet potato, while CA and AA removed more starch from greater yam and CA removed more starch from white yam. Highest removal of reducing sugars was observed in sweet potato in AA, while CA removed maximum reducing sugars from both the yams. Phenol and total free amino acid (TFA) levels were more in SMS treatment than the control sweet potato flour, and least in AA (2 h). Whilst AsA raised the phenols and TFA in greater yam, it removed phenols to the maximum in white yam. Maximum BI was in AsA treatment for the three crops, and least for flour from CA (0.25%) treated yams and AA (1.00%) treated sweet potato.Industrial RelevanceBrowning resulting from enzymatic and non-enzymatic reactions is a major drawback in the processing of sweet potato and yams for product development. The study showed that this could be successfully tackled through soaking the slices in low cost chemicals like acetic acid or citric acid and sodium metabisulfite at low concentrations. The treated slices yielded flour with very low browning indices compared to the respective native flours, which could enhance the potential of such flours in the development of food products.  相似文献

Sulphur dioxide has been used to control pericarp browning in longan fruit. However, due to health and regulatory concerns, alternative treatments should be tested. The objective of this study was to find the tolerance levels of longan fruit to low O2 (2%, 5%, 10% and 15%) and elevated CO2 (5%, 10%, 15% and 20%) at 2 °C. According to the tolerance study, controlled atmospheres (CA) of 5% O2 + 5% CO2, 5% O2 + 10% CO2 and 5% O2 + 15% CO2 were compared with normal air (control) at 2 °C. Pericarp browning and decay incidence of longan were significantly ( 0.05) higher in control than all the CA treatments. CA storage reduced polyphenol oxidase (PPO) activity, maintained L* value and slowed down a decrease in total phenolic contents (TPC). Pericarp browning was highly correlated with PPO, L* and TPC.  相似文献

The effects of 0.2 % ascorbic acid?+?0.2 % citric acid (AA?+?CA), 0.2 % ascorbic acid?+?0.2 % citric acid?+?N2 (AA?+?CA?+?N2) and 0.2 % ascorbic acid?+?0.2 % citric acid?+?CO2 (AA?+?CA?+?CO2) on the quality of banana smoothies were investigated. An obvious anti-browning effect was observed after each treatment, which resulted from a significant decrease in the polyphenol oxidase activity (p?<?0.05) and the exclusion of oxygen by infusion with inert N2 or CO2. The AA?+?CA?+?N2 treatment exhibited the lowest change of browning index (ΔBI) indicating the best anti-browning effect on the banana smoothies. Compared with the Herschel–Bulkley model, the Power Law was less complex and more suitable for describing the rheological properties of the banana smoothies. AA?+?CA, AA?+?CA?+?N2 and AA?+?CA?+?CO2 treatments all significantly increased the pectin methylesterase activity of the banana smoothies (p?<?0.05). The AA?+?CA treatment increased the cumulative volume of the larger particles in the banana smoothies. The viscosity of the banana smoothies decreased after the three different treatments. In terms of the comprehensive results, the inclusion of AA?+?CA?+?N2 in the production of banana smoothies was the best processing method applied.  相似文献

Our objective was to compare the effects of controlled atmosphere (CA) and modified atmosphere packaging (MAP) on fruit quality, chilling injury (CI) and pro‐ and antioxidative systems in ‘Blackamber’ Japanese plums. Matured fruit were stored for 5 and 8 weeks at 0–1 °C in normal air, CA‐1 (1% O2 + 3% CO2), CA‐2 (2.5% O2 + 3% CO2) and MAP (~10% O2 and 3.8% CO2). CA was more effective than MAP in retention of flesh firmness and titratable acidity during cold storage. Fruit stored in CA‐1 showed reduced CI and membrane lipid peroxidation after 5 and 8 weeks of cold storage. Low O2 atmospheres appeared to limit the generation of reactive oxygen species (ROS) and their efficient scavenging through the concerted action of superoxide dismutase and peroxidase. The role of ascorbate–glutathione (AsA–GSH) cycle in the regulation of oxidative stress was also studied during and after storage in different atmospheres. In conclusion, optimum CA conditions delayed fruit ripening and CI through augmentation of antioxidative metabolism and suppression of oxidative processes.  相似文献

Ohmic heating (OH) is a direct heating method that generates uniform, fast heating and increases the inactivation of bacteria and enzymes in pomelo juice in a shorter duration and at a lower temperature than those used in conventional heating (CH). This study investigated the influence of frequency and electric field strength during OH on the chemical parameters and bioactive compound content of pomelo juice, including ascorbic acid (AA), citric acid (CA), naringin, limonin, total polyphenol content (TPC), and antioxidant capacity. The frequency significantly influenced the degradation of AA, which determines the antioxidant activity. Electric field strength caused a significant decrease in AA, TPC, and antioxidant activity at low electric field strength (20 V/cm). The compound degradation was similar for OH at 30 V/cm and 60 Hz and CH. This means that the electric field did not affect the degradation of these compounds during OH if the juice was heated at those approximate parameters. OH may therefore be proposed as an effective method of pasteurizing pomelo juice.  相似文献

Sliced strawberries (cvs.‘Pajaro’ and 'G-3′) and partially ripe pears (cv.‘Bartlett’) were dipped in various solutions (citric acid, ascorbic acid, and/or calcium chloride) and stored in air or in controlled atmospheres (CA) for 7 days at 2.5°C followed by one day at 20°C. Fruit slices respired at a higher rate than whole fruits at both temperatures. CA storage suppressed respiration and ethylene production rates of sliced fruits. Firmness of strawberry and pear slices was maintained by storage in air + 12% CO2 and in a 0.5% O2 atmosphere, respectively, or by dipping in 1% calcium chloride. These treatments also resulted in lighter colored pear slices than the air control treatment.  相似文献

The main objective of this study was to determine the ability of various decontaminants to increase the prevalence of resistance to antibiotics in Escherichia coli populations on poultry. Chicken legs were dipped for 15 min into aqueous solutions (wt/vol) of trisodium phosphate (TSP; 12%), acidified sodium chlorite (ASC; 1200 ppm), ascorbic acid (AA; 2%) or citric acid (CA; 2%), or tap water (control). Samples were analyzed immediately after treatment (day 0) and after five days of storage at 7 ± 1 °C. A total of 250 E. coli isolates (50 from each group of samples; 25 on day 0 and 25 on day 5) were tested against twelve antibiotics of clinical significance by means of a standard disc-diffusion technique. A high prevalence of resistance to antibiotics was observed for E. coli strains from control samples, with three (6.0%) isolates sensitive, three (6.0%) resistant to one antibiotic and 44 (88.0%) isolates resistant to two or more antibiotics. Isolates from control samples had a lower prevalence of resistance than those from treated samples to ampicillin-sulbactam (P < 0.01, samples treated with TSP), amoxicillin-clavulanic acid (P < 0.001, ASC, AA and CA), cephotaxime (P < 0.05, TSP), trimethoprim-sulphamethoxazole (P < 0.05, AA; P < 0.01, CA), tetracycline (P < 0.01, CA), ciprofloxacin (P < 0.001, ASC; P < 0.05, AA; P < 0.01, CA) and nitrofurantoin (P < 0.01, TSP). These results suggest that the chemical decontaminants tested could favor the emergence, selection and/or proliferation of antibiotic-resistant strains in microbial populations on poultry meat.  相似文献

The objective of this study was to evaluate the influence of predrying treatments, i.e., peeling, blanching prior to inoculation, and dipping in organic acid solutions, on inactivation of Salmonella during drying (60 degrees C for 14 h) and aerobic storage (25 degrees C for 28 days) of inoculated (five-strain composite, 7.1 to 7.4 log CFU/g) Roma tomato halves. Four predrying treatments groups were established. One group received no treatment (C). In the other three groups, unpeeled-unblanched, unpeeled-blanched (steam blanched at 88 degrees C for 3 min), peeled-unblanched, and peeled-blanched tomato halves were immersed for 10 min in water (W), ascorbic acid solution (AA; 3.40%, pH 2.48), or citric acid solution (CA; 0.21%, pH 2.51). Appropriate dilutions of homogenized tomato samples were spread plated on tryptic soy agar with 0.1% pyruvate and XLT4 agar for bacterial enumeration during drying and storage. Ten minutes of immersion in W, AA, or CA reduced bacterial populations by 0.7 to 1.6 log CFU/g. After 14 h of dehydration, total log reductions in the populations of bacteria were 3.2 to 4.5 (C), 3.7 to 4.9 (W), > 5.6 to > 6.1 (AA), and 4.5 to 5.5 (CA) log CFU/g, depending on type of agar used and condition of tomato samples. During drying and storage, the order of pathogen inactivation for predrying dipping treatments was AA > CA > W > C, with AA and CA rendering bacterial populations below detectable levels ( < 1.3 log CFU/g) prior to storage and between 7 and 14 days of storage, respectively. The results also indicated that peeling and blanching of tomatoes prior to inoculation may not necessarily affect destruction of Salmonella during the drying process. Use of predrying acid dipping treatments of tomatoes, especially in AA, may improve destruction of Salmonella during the dehydration process.  相似文献

The effect of modified atmosphere packaging (MAP) on the quality changes of Pacific white shrimp (Litopenaeus vannamei) treated with or without green tea extract (1 g/L; GTE) in combination with or without ascorbic acid (0.05 g/L; AA) during refrigerated storage of 10 days was investigated. Shrimp without treatment stored under MAP had lowered psychrotrophic bacteria, enterobacteriaceae and H2S-producing bacteria count (P < 0.05) but similar lactic acid bacteria count (P > 0.05), in comparison with shrimp stored in air (control). The coincidental lowered rate of increase in pH, total volatile base (TVB) content and thiobarbituric acid reactive substances (TBARS) were obtained in shrimp stored under MAP (P < 0.05). However, MAP slightly lowered melanosis formation and improved likeness score to some extent. When shrimp were treated with GTE and stored under MAP, the lower microbiological and chemical changes as well as the lowest melanosis formation were observed, compared to shrimp kept under MAP without treatment and the control (P < 0.05). GTE treatment in combination with MAP could retard chemical changes and melanosis formation, regardless of AA incorporation (P > 0.05). Nevertheless, GTE in combination with AA had higher inhibition on microbial growth and yielded the shrimp with higher likeness, compared with the other treatments (P < 0.05). Therefore, shrimp treated with GTE in combination with AA prior to MAP had the lowest losses in quality during refrigerated storage.  相似文献

Packaging fresh lamb in a vacuum (VAC) versus a 100% CO2 modified atmosphere (MAP) may influence product shelf-life and the bacterial communities. While VAC is a common packing method and 100% CO2 MAP is used in some countries, there is little information about how these different techniques affect the growth of spoilage bacteria and sensory attributes of lamb. The aim of this study was to assess changes in microbiological and organoleptic properties, and determine differences in microbial communities by terminal restriction fragment length polymorphism (TRFLP) and 454 pyrosequencing, in bone-in (BI) and bone-out (BO) MAP- and VAC-packed lamb shoulders stored at −0.3 °C over 12 wk. VAC and MAP lamb shoulders were acceptable in sensory test scores over 12 wk of storage at −0.3 °C, despite total viable count (TVC) and lactic acid bacteria (LAB) levels increasing to 8 log10 CFU/cm2 for VAC lamb and 4–6 log10 CFU/cm2 for MAP lamb. Similar to the sensory results, there were no significant differences in microbial communities between BI and BO product. However, types of bacteria were different between VAC and MAP packaging. Specifically, while VAC shoulder became dominated by Carnobacterium spp. in the middle of the storage period, the MAP shoulder microbial population remained similar from the start until later storage times.  相似文献

The combined effect of dipping in a chitosan solution (1 g/100 ml) and packaging under modified atmosphere (MAP, 70% CO2, 30% N2) on shelf life extension of refrigerated chicken fillets was investigated. Microbiological (Total Viable Counts, Pseudomonas spp., Lactic Acid Bacteria and Enterobacteriaceae), physicochemical (headspace gas composition, pH, color and Thiobarbituric Acid test) and sensory (odor and taste) parameters were monitored for up to 14 days. TVC were 3.9–4.9 log cfu/g lower on day 6 of storage in treated vs. untreated air-packaged samples with the strongest effect being shown by the combination of chitosan plus MAP. A similar reduction in LAB, Pseudomonads and Enterobacteriaceae was recorded during storage. pH values varied between 5.73 (day 8, for acetic acid treated samples) and 6.28 (day 6, for air-packaged samples). Malondialdehyde (MDA) values ranged between 0.19 and 0.80 mg/kg indicating negligible oxidation of lipids. The color parameter L* decreased with time in the air-packaged samples but remained unaffected in all other treatments. Parameters a* and b* were not significantly affected by the chitosan or the MAP treatments. Based on the microbiological and sensory data, shelf life of air-packaged, chitosan-treated, MAP-treated and chitosan/MAP treated samples was 5, 11, 12 and 14 days, respectively.  相似文献

The effect of storage conditions and physical tissue damage on membrane peroxidation in minimally processed cucumber tissue was investigated. Lipid peroxidation in samples stored under modified atmospheric packaging (MAP) and in covered Petri dishes (non-MAP) were determined by the FOX2 and TBARS assays. The initial level of lipid hydroperoxides and TBARS were found as 1.44–2.00 and 0.11–0.20 nmol/g, respectively. The levels of lipid hydroperoxides increased by five- to sixfold in chilled non-MAP tissues over 10 days. MAP with higher levels of oxygen was generally more effective in reducing the generation of lipid hydroperoxides and TBARS. The effect of dipping treatments using solutions containing CaCl2 and/or ascorbic acid on peroxidation were also investigated. Tissue hardness of MAP sealed samples increased for the first 3 days for all tissues but chilled tissues started to soften on the sixth day.  相似文献

Ascorbic acid (AA) and dehydroascorbic acid (DHA) are reduced and oxidized forms of vitamin C, which are ubiquitously found in various fruits and vegetables. The present study has evaluated and optimized various factors responsible for AA and DHA stability in grapefruit samples. Furthermore, the optimized method was used to quantify these compounds in different fruits and vegetables. The AA stability in the samples was evaluated by extracting grapefruit juice using 1, 3 and 5 g/100 mL metaphosphoric acid (MPA) and trichloro acetic acid (TCA). The AA levels were stable in grapefruit samples extracted with 1, 3 and 5 g/100 mL MPA, whereas TCA extracts showed degradation in 48 h. Among the three reducing agents studied, tris(2-carboxy ethyl) phosphine hydrochloride (TCEP) has efficiently converted DHA at all concentrations and the samples were stable for 48 h at 2.5 mmol/L TCEP. Lower pH favored complete conversion of DHA by TCEP than dithiothreitol. Among various fruits and vegetables analyzed, the highest levels of AA (260.1 mg/100 g) were observed in guava and DHA (58.6 mg/100 g) in parsley samples. The current optimized method prevents the degradation of AA and DHA from fruit and vegetable samples stored at room temperature for two days.  相似文献

Long-life Calibra tomatoes (Lycopersicum esculentum Mill.) were minimally fresh processed in slices or wedges and packaged in polypropylene (PP) trays. Passive and active (3 kPa O2+0 kPa CO2 and 3 kPa O2+4 kPa CO2) modified atmosphere packages (MAP) were used at 0 and 5 °C. After 14 days, the gas composition within passive MAP packages was 11–13 kPa O2+5.5–6 kPa CO2 and 8–9.5 kPa O2+10.5–11.5 kPa CO2 at 0 and 5 °C, respectively. The gas composition reached in active MAP at both temperatures for both types of cuts was around 7–10.5 kPa O2 and 7–9 kPa CO2. The highest C2H4 level (15 L L–1) was found in passive MAP at 5 °C, while in active MAP at both temperatures about 6 L L–1 C2H4 accumulated. After 7 days of storage at 0 °C, the tomato pieces showed better aroma, appearance and overall quality than those stored at 5 °C. No difference between MAP treatments was found, although both led to a better appearance and overall quality than controls in air. After 14 days at 0 °C, only MAP treatments kept a good flavour, overall quality and texture, with no differences between them. After 14 days at 5 °C in all treatments, the flavour fell below a fair condition and the slices showed a slight senescence. MAP significantly reduced total plate counts (TPC) of slices at 5 °C, although only active MAP reduced TPC in wedges after 14 days at 5 °C. A visibly better appearance and overall quality was found in slices than in wedges. The main factors influencing the quality of tomato pieces were the storage duration and temperature. To keep the quality of fresh-cut tomatoes, one should consider three factors for selection: a suitable low chilling sensitive tomato cultivar, an adherent placenta and optimal maturity stage at harvest.  相似文献

To control browning phenomenon, an edible coating of cassava starch along with ascorbic acid (AA) (combined treatment) was applied to minimally processed sweet potatoes var cv. ‘Blanca Correntina’. The samples were stored at 4 °C for 16 days, and the activities of polyphenol oxidase, peroxidase and phenylalanine ammonia lyase were studied; also, surface colour, antioxidant capacity, ascorbic acid, chlorogenic acid content were evaluated. The combined treatment showed a beneficial impact on the quality of the product, avoiding browning when compared with untreated samples and individual treatments (coating without AA or immersion in AA solution). The improvements were evidenced by the absence of changes in hue, minor changes in a* parameter and a major inhibitory effect of AA on the activity of the three enzymes. Ascorbic acid content and antioxidant capacity increased (P < 0.05). The combined treatment not only was effective in preventing enzymatic browning but also retained freshness and improved nutritional value.  相似文献

Caseins of cow, buffalo, goat and camel milks were hydrolysed using pepsin, trypsin and chymotrypsin. The rate and degree of casein hydrolysis and the antioxidant activity (AA) of the casein hydrolysates (CH) were followed. Camel casein showed the highest rate and degree of hydrolysis with pepsin and trypsin, while cow casein was more rapidly hydrolysed with chymotrypsin than other caseins studied. The AA of all CH increased to a maximum after 24 h of hydrolysis. The AA of tryptic hydrolysates was higher (P < 0.002) than that of peptic hydrolysates. Camel CH exhibited higher AA than hydrolysates of other caseins.  相似文献

Sensory profiling was performed for a Danish lightly fermented heat-processed cold cut pork product termed ‘rullepølse’. Product samples were stored under modified atmosphere (MAP, 30% CO2/70% N2) for 0, 28 and 34 days and with subsequent aerobic storage for 4 days (MAP–OPEN) at temperatures of 4 °C and 8 °C. Microbial growth and metabolism was also measured with a focus on lactic acid bacteria (LAB) and their organic acid metabolites including lactic acid, acetic acid and α-ketoisocaproic acid. These acids were examined for sensory shelf life indexing potential for the ‘rullepølse’. Storage temperature exerted distinct impacts on the sensory characterised shelf life of ‘rullepølse’ stored under MAP and MAP–OPEN conditions. The MAP stored ‘rullepølse’ with subsequent 4 days storage in air (MAP–OPEN) could be stored for at least 28 days at 4 °C without a decrease in the sensory quality when opened. Whilst MAP stored ‘rullepølse’ at 8 °C with subsequent open storage (MAP–OPEN), compared to the lower temperature displayed a reduced shelf life of less than 28 days if sensory quality of the ‘rullepølse’ was to be maintained. The stage of sensory deterioration was correlated with high bacterial counts exceeding 106 CFU g−1. With respect to indexing ability of the examined organic acids none were found to have clear potential for prediction of the sensory deterioration.  相似文献

The effects of nitric oxide (NO) on enzymatic browning of harvested longan fruit in relation to phenolic metabolisms were investigated. Fruits were dipped for 5 min in 1 mM sodium nitroprusside (SNP), a nitric oxide donor, then packed in 0.03 mm thick polyethylene bags, and finally stored for 6 days at 28 °C. Changes in pericarp browning and pulp breakdown were evaluated, while total phenol content, activities of phenolic-associated enzymes, polyphenol oxidase (PPO), peroxidase (POD) and phenylalanine ammonia lyase (PAL), and concentrations of total soluble solids, titratable acidity and ascorbic acid were measured. SNP treatment delayed pericarp browning, inhibited activities of PPO, POD and PAL and maintained a high total phenol content of longan fruit during storage. Furthermore, NO showed a significant inhibition of the in vitro activities of PPO and POD, indicating that the beneficial effect of NO was direct. Moreover, application of NO resulted in a lower pulp breakdown and maintained relatively high levels of total soluble solids and ascorbic acid.  相似文献

Combined effects of modified atmosphere packaging (MAP) and refrigeration (7±1 °C) were studied on shelf-life extension of ready-to-bake pizza. The gas atmospheres in the present study included four variables, namely viz. MAP1, air (control); MAP 2, 100% CO2; MAP 3, 100% N2; and MAP 4, 50%CO2/50%N2. The effect of MAP variables was observed for moisture content, water activity, pH, titratable acidity, free fatty acids, peroxide value, thiobarbituric acid, tyrosine content, lycopene content and L* a* b* values. The results indicated that MAP with 100% CO2 significantly inhibited the lipid oxidation, reduced proteolysis and prevented total acidity (less decrease in pH). Also, the MAP (MAP 2) showed preservative effect on colour indices and shelf life higher than other treatments. Sensory analysis showed that the control samples had a limited shelf life of 5 days while a significant increase in shelf life of 15 days (300% increase) was achieved under modified atmospheres for unbaked pizza samples.  相似文献
