The apparent viscosities of dilute solutions of guar and locust bean gums have been measured. The intrinsic viscosity [n] of guar gum solution is greater than that of locust bean gum solution, but the interaction coefficient k of guar gum solutions is less than that of locust bean gum. Addition of glucose, sucrose, or glucose syrup increases the apparent viscosity of the gum solution. The intrinsic viscosity of the gum solution is decreased but the interaction coefficient is increased.  相似文献

Guar and locust bean gums were combined with sucrose, 36 DE corn syrup and/or 42 high fructose corn syrup (HFCS) in a minimum fat (10%) ice cream formulation. A total of 27 combinations were evaluated for sweetness, iciness, chewiness and vanilla intensity. Replacing 50% of the sucrose with 42 HFCS did not significantly affect sweetness or vanilla intensity. Chewiness was enhanced when high corn syrup levels were combined with a high guar to locust bean gum ratio. Storage study data showed that ice creams containing high levels of HFCS became objectionably icy earlier than ice creams containing low levels or no HFCS. With a high guar to locust bean gum ratio ice creams became both detectably and objectionably icy sooner than if a low ratio of these gums was used.  相似文献

In this study, dielectric properties of rice cake formulations containing different gum types (xanthan, guar, locust bean, HPMC, and kappa-carrageenan) were determined at temperatures between 25 and 90°C at 2450 MHz. Moreover, thermal properties of these formulations were determined by using differential scanning calorimeter (DSC). Dielectric properties of cake batters were found to be dependent on cake formulation. Xanthan and guar gum containing cake batters had the highest dielectric constant and loss factor values at 25°C. Temperature dependence of dielectric properties was not significant until temperature of 85°C. Gelatinization enthalpy of batter increased with the addition of gums.  相似文献

In this study, the rheological properties of rice bread dough containing different gums with or without emulsifiers were determined. In addition, the quality of rice breads (volume, firmness and sensory analysis) was evaluated. Different gums (xanthan gum, guar gum, locust bean gum (LBG), hydroxyl propyl methyl cellulose (HPMC), pectin, xanthan–guar, and xanthan–LBG blend) and emulsifiers (Purawave and DATEM) were used to find the best formulation for gluten-free breads. Rice dough and wheat dough containing no gum and emulsifier were used as control formulations. The rice dough containing different gums with or without emulsifiers at 25 °C showed shear-thinning behavior with a flow behavior index (n) ranging from 0.33–0.68 (except pectin containing samples) and consistency index (K) ranging from 2.75–61.7 Pa sn. The highest elastic (G′) and loss (G″) module were obtained for rice dough samples containing xanthan gum, xanthan–guar and xanthan–LBG blend with DATEM. When Purawave was used as an emulsifier, dough samples had relatively smaller consistency index and viscoelastic moduli values compared to DATEM. The viscoelastic parameters of rice dough were found to be related to bread firmness. Addition of DATEM improved bread quality in terms of specific volume and sensory values.  相似文献

Non‐starch polysaccharides (NSPs) and celite (used as inert filler) were incorporated into wheat flour and wheat starch paste preparations at levels of 1, 2.5, and 5% in both addition and replacement modes. Pasting properties of gums were compared using a Rapid Visco Analyser. Use of guar gum and locust bean gum elevated the peak and final viscosities of the resulting pastes (when used in either addition or replacement modes), whereas arabic gum significantly reduced the peak and final viscosity properties of the pastes. Samples which comprised wheat starch yielded higher peak and final viscosity characteristics compared to wheat flour containing samples, however higher breakdown and setback values were observed for samples using wheat flour as a base compared to wheat starch. The firmness of the gels (as determined using a texture analyser) increased with the use of wheat starch compared to wheat flour. Little significant difference was observed between NSP used and mode of application (replacement or addition). In vitro starch degradation was conducted on the wheat flour gels. Guar gum and locust bean gum reduced the amount of starch degradation in these gels, whereas arabic gum and celite increased the amount of starch hydrolysis (or were similar to the control). The rate of starch hydrolysis appears to be related to the viscosity altering behaviour of the NSPs in a starch‐rich system. The results indicate that selection of NSPs is important as gum arabic has the potential to increase starch hydrolysis compared to the control.  相似文献

Conformations of simulated galacomannans with different mannose/galactose ratios were investigated using molecular modelling software (Insight II/Discover_3 and RIS program, Version 4.0.0). The mannose/galactose ratios used in the present study were 4/1, 3/1, 2/1 and 1/1 respectively to simulate locust bean gum, tara gum, guar gum and fenugreek gum. Conformational parameters, Lp, C and Rg, were calculated. The results showed that the insertion of galactosyl groups could cause bending of the chains. The conformation of locust bean gum was much stiffer than the other three gums. Among the other three gums, fenugreek gum behaved as the most compact and flexible chain which might be due to the interactions along the side groups; guar gum behaved as the stiffest chain among the three gums, and tara gum was in the middle range. No ordered structures were observed in the fully substituted fenugreek gum chain. It was assumed that intra-chain interactions, both through side groups or smooth regions, could affect chain conformations. The results could explain the synergistic interactions between galactomannans and cellulosic polysaccharides: a more flexible chain can help with penetrating through networks in solutions, while the side groups can help with forming stronger “hyperentanglements” which themselves could increase viscosity; the stiffer chain with more unsubstituted regions can form junction zones with the cellulosic molecules.  相似文献

Dynamic rheological properties of acetylated sweet potato starch (ASPS) pastes mixed with 3 commercial gums (guar gum, locust bean gum, and xanthan gum) were investigated at different gum concentrations. The dynamic moduli of the ASPS-gum mixtures were higher than those of the control, and they increased with an increase in gum concentration. In particular, the G′ value of xanthan and G″ value of guar gum at a 0.6% gum concentration were much higher as compared to those of other mixtures. Tan δ values of ASPS-xanthan mixtures were much lower than those of other samples, indicating that the elastic properties in the ASPS-gum mixture systems were strongly affected by the additions of xanthan. These results suggest that the presence of gums in ASPS modifies the viscoelastic properties, and that these modifications are dependent on the gum type and gum concentration.  相似文献

Flax seed (Linwn usitatissimum L.) mucilage was prepared by extraction of seeds with water followed by evaporation, precipitation with ethanol and freeze drying of extract. Proximate composition, solubility, foamability and moisture sorption characteristics were determined. The mucilage contained less carbohydrates, more minerals and more protein than commercial locust bean and guar gums. Its solubility, however, was higher than locust bean and guar gums, and lower than gum arabic. Flax seed mucilage exhibited good foam stability properties in aqueous solutions at 1.0% (w/v). Very diluted solutions exhibited Newtonian-like behavior while shear thinning was shown at concentrations above 0.2% (w/v). The viscosity was maximum at a pH range 6.0–8.0 and it was reduced in solutions containing NaCl.  相似文献

BACKGROUND: Lallemantia royleana (Balangu) is a mucilaginous endemic plant which is grown in different regions of world. The flow behaviour of Balangu seed extract (BSE) and its mixture with xanthan, guar and locust bean gums at 1:3, 1:1 and 3:1 ratios, in addition to control samples (0% BSE), were evaluated. To describe the rheological properties of samples, the power law model was fitted on apparent viscosity–shear rate data. To evaluate the interaction between BSE and selected hydrocolloids in dilute solutions, the relative viscosity was also investigated. RESULTS: There was no significant difference between the consistency coefficient of guar and locust bean solutions and their blends substituted with 250 g kg?1 BSE. The BSE–xanthan mixture at 1:3 and 1:1 ratios had consistency index equal to xanthan solution. BSE–locust bean gum at all ratios, BSE–xanthan at 1:3 ratio and BSE–guar gum at 1:1 and 3:1 ratios indicated relative viscosity lower than values calculated assuming no interaction. The intrinsic viscosity value of BSE was determined 3.50 dL g?1. CONCLUSION: The apparent viscosities of BSE, selected hydrocolloids and their blends were the same at a shear rate of 293 s?1 and the commercial gums can be substituted by 250 g kg?1 and 500 g kg?1 BSE. Capillary electrophoresis (CE) was utilized in the characterization of various galactomannans. Standards of gums were extracted with 50% CH3CN to remove the residual proteins from the gum matrix. Separation buffers were optimized with respect to pH, buffer concentration and presence of sodium dodecyl sulphate, yielding protein profiles from which the desired information could be obtained. Examples are given of the profiles generated by various gums and gum blends to aid in the verification of component presence, and to demonstrate levels of adulteration detectable under the buffer conditions used.  相似文献

The effects of three levels (0.1, 0.3 and 0.5%) of locust bean gum, guar gum and sodium alginate on zinc and iron availability were evaluated in milk and soy systems. Availability was estimated as metal solubility after digestion with pepsin-HCl followed by addition of bicarbonate and digestion with pancreatic and bile extracts. Locust bean gum (0.5%) and guar gum (0.5%) reduced zinc solubility by 23.5 and 69.6%, respectively, in the milk and by 41.1 and 40.1% in the soy. Smaller reductions were observed at lower gum levels. The two gums also caused significant reductions in iron solubility from soy. Sodium alginate exerted little effect on mineral solubility.  相似文献

Sodium stearoyl‐2‐lactylate (SSL), diacetyl tartaric acid esters of monoglyceride (DATEM), glycerol monostearate (GMS) and distilled glycerol monostearate (DGMS) surfactant gels were made with water. Addition of surfactant gels decreased water absorption by the bread while xanthan, karaya, guar and locust bean gums increased the same. Only DGMS or GMS and gum combinations further improved water absorption. All the gums except for guar along with surfactant gels improved dough stability. Both surfactant gels and gums improved the extensograph dough properties of wheat flour to varying degrees. Alveograph characteristics of wheat flour improved to varying extents with surfactant gels while the gums influenced the viscoelastic properties in differing ways. Different combinations of surfactant gels and gums showed varied influences on rapid visco analyzer characteristics of wheat flour. Both surfactant gels and gums improved the bread making quality. Among surfactants, SSL in combination with gums, and among gums locust bean in combination with surfactant gels improved the bread making quality of wheat flour to a maximum extent.  相似文献

Effect of Anionic Gums on the Texture of Pickled Frankfurters   总被引:2,自引:0,他引:2  
The addition of the anionic gums, xanthan and carrageenan, stabilized the texture of frankfurter emulsions against acid deterioration at 37°C in vinegar pickle. The proteins collagen, casein, and gluten, and the gums guar, arabic, and locust bean had no effect. The cationic gum, chitosan, formed an acid-stable gel but the gel would not hold the emulsion. The process of acid deterioration had an initial period of firming of the gel texture. Shear (rupture) and elasticity did not show a corresponding initial increase. Subsequent deteriorative changes were less in the emulsions with xanthan gum than in any of the other emulsions. The gum gel is formed at the expense of the protein-fat structure, probably through a gum-protein interaction.  相似文献

This study examined the steady flow and dynamic rheological behaviors of hydroxypropylated sweet potato starch (HPSPS) pastes mixed with guar gum (GG), locust bean gum (LBG), and xanthan gum (XG) at different concentrations (0, 0.3, and 0.6%). The HPSPS–gum mixtures had higher shear‐thinning fluid characteristics than the control (0% gum) at 25°C. The addition of the gums resulted in an increase in the consistency index (K) and apparent viscosity (ηa,100). The dynamic moduli (G′, G″) and complex viscosity (η*) values of the HPSPS–gum mixtures were higher than those of the control, and they increased with an increase in gum concentration. In particular, the presence of XG at 0.6% in the HPSPS–gum mixture systems gave rise to the greatest viscoelastic properties among the gums examined at different concentrations. The tan δ (ratio of G″/G′) values (0.35–0.57) of the HPSPS–GG and HPSPS–XG mixtures were much lower than those of the control (0.82) and HPSPS–LBG (0.88–1.06), indicating that the elastic properties in the HPSPS–gum mixture systems were strongly affected by the additions of GG and XG. These steady flow and dynamic rheological parameters indicated there were synergistic interactions between the HPSPS and gums. The synergistic effects of the gums and modified starch were hypothesized by considering the molecular incompatibility and molecular interactions between the gums and HPSPS.  相似文献

Mixture design was used to investigate the effects of four different gums (xanthan gum, guar gum, alginate and locust bean gum) and their combinations on the rheological properties of a prebiotic model instant hot chocolate beverage (including 3.5% inulin) and to determine their interactions in the model beverage. Simplex centroid mixture design was applied to predict the physicochemical (soluble solids, pH, colour properties) and rheological parameters (consistency index (K), flow behaviour index (n) and apparent viscosity (η 50)) of the samples. In the model, the optimum gum combination was found by simplex centroid mixture design as 59% xanthan gum and 41% locust bean gum, and the highest K value was 33.56 Pa s n . The increase of guar gum and alginate in the gum mixture caused a decrease in the K value of the sample.  相似文献

Locust bean gum (E-410) and guar gum (E-412) are high molecular weight galactomannans used by the food industry as versatile food additives. The compounds, although chemically closely related, do not have the same functional properties when used in foods, and the substitution or unadvertised addition of either could change the desired qualities of the product. Analytical discrimination between E-410 and E-412 is technically difficult since they only differ in their galactose: mannose ratios, being 1 : 4 and 1 : 2 for locust bean gum and guar gum, respectively. A qualitative DNA-based method is reported for the authentication of additives E-410 and E-412 in finished food products (ice cream, dehydrated desserts, milk derivatives, dehydrated soups, salad dressing, marmalade and meat) from small quantities of food. DNA sequences from the nuclear ribosomal spacers of Ceratonia siliqua and Cyamopsis tetragonoloba, the plant sources of E-410 and E-412, respectively, were used to design polymerase chain reaction primers specific for each additive (PA23/PA21 and PG22/PG21). Twenty-two foods were analysed for the presence of E-410 and E-412 additives by this single-step polymerase chain reaction-based method. Positive DNA amplifications with the E-410 and/or E-412 primers were obtained in all 19 samples reported to contain either additive.  相似文献

Rheological properties of solutions prepared using xanthan (XG), locust bean (LBG) or sodium carboxymethyl cellulose (CMC) gums, and their binary mixtures were studied. The influence of shear rate, total gum content, measurement time and temperature on the apparent viscosity was investigated. In the binary mixtures, the presence of different gum ratios at several total gum content was also analysed. XG solutions were always the most stable, providing high viscosity values which rose notably with increasing gum content. XG/LBG and CMC/XG mixtures depicted high values of viscosity for very low gum amounts. Viscosity did not change with measurement time in mixtures containing XG, whereas varied with measurement temperature. This variation was lower for samples with larger total gum content. The viscosity was also modified when different gum ratios were tested. A mathematical model was proposed to evaluate the combined effect of temperature, concentration and shear rate on the apparent viscosity.  相似文献

本文主要研究了沙蒿胶对冷冻面团品质的影响,并将其作用效果与刺槐豆胶进行了比较。采用拉伸仪、差示扫描量热仪、扫描电镜分别测定了空白面团(未添加任何胶体的冷冻面团)和添加沙蒿胶面团在冷冻储藏1、2、3、4w后抗拉伸性能、可冻结水含量以及微观结构的变化,同时比较了添加沙蒿胶和刺槐豆胶后上述参数的不同。结果表明:(1)随着冷冻储藏时间延长,面团的抗拉伸阻力逐渐减小,而面团的延伸性却逐渐增:赶;当冷冻储藏时间相同时,添加沙蒿胶面团的抗拉伸阻力最大,其次是添加刺槐豆胶面团的抗拉伸阻力,最差的是空白面团的抗拉伸阻力;相对应添加沙蒿胶面团的延伸性最小,其次是添加刺槐豆胶面团的延伸性,最大的是空白面团的延伸性。(2)随着冷冻储藏时间延长,面团可冻结水含量逐渐增大;在同~冷冻储藏时间时,含沙蒿胶和刺槐豆胶面团中的熔化焓均小于空白面团,其中含刺槐豆胶面团的熔化焓最小,但在冷冻储藏4w时,两者基本相同。(3)冷冻储藏2w后,含沙蒿胶和刺槐豆胶面团中面筋蛋白胶束的破坏程度均减小,而沙蒿胶的作用效果明显强于刺槐豆胶。  相似文献

The flow properties of the fluid portion of fruit fillings were assessed to investigate the effects of gums. Results indicated that the shear rate–shear stress relations of the fluid portion of commercial fruit fillings and the model fillings made of waxy corn starch, fructose, citrate buffer, and a gum which could be guar gum, locust bean gum, CMC, xanthan gum or κ-carrageenan, fit well into the Herschel–Bulkley equation for pseudoplastic fluids. The fluid portion of the commercial fruit fillings was characterized with a yield stress between 39–51 Pa, a consistency index between 52–104 Pa·sn, and a flow index (n) around 0.4. In addition, the shear rate–shear stress relations could be fitted into a modified Herschel–Bulkley equation with a flow index fixed at 0.4. Addition of guar gum, locust bean gum and CMC increased while xanthan gum and κ-carrageenan decreased the consistency and flow indices in the modified Herschel–Bulkley equation. The effect of gum addition on the apparent viscosity of model fillings varies with the type of gum, amount of addition, and shear rate.  相似文献

SUMMARY— The electrophoretic characteristics of locust bean gum, guar gum, arabic gum, carboxymethylcellulose, K- and h-carrageenan, alginate and the non-dialyzable fraction of corn syrup solids were studied by moving boundary electrophoresis. The physical properties of these colloids require the use of modified techniques in order to eliminate boundary disturbances which otherwise might be interpreted as heterogeneity of composition.
A high degree of homogeneity was observed for carboxymethylcellulose, arabic gum, alginate and X-carrageenan. In contrast, K-carrageenan was composed of a mixture of migrating components. The colloidal fractions of guar gum, locust bean gum, and corn syrup solids did not migrate in the electrical field.
Mixtures of carboxymethylcellulose with guar gum or gum arabic could be separated at pH 7. Mixtures of carboxymethylcellulose with carrageenan could be effectively separated at pH 2. Electrophoretic separation at 23°C of different stabilizer mixtures was unsatisfactory and the patterns showed evidence of interactions.  相似文献
