The growing interest in new functional foods with special characteristics and health properties has led to the development of new beverages based on fruit juice–skim milk mixtures. The proliferation of ready-to-drink beverages has caused the market to focus its interest on these products. Commercial conventionally pasteurized or sterilized beverages based on a mixture of fruit juice and skim milk were evaluated nutritionally for their concentrations of vitamin C, vitamin A and phenolic compounds and their total antioxidant capacity, taking the influence of physicochemical parameters into account. The main contribution to the total antioxidant capacity (TEAC, trolox equivalent antioxidant capacity) was provided by vitamin C, followed by phenolic compounds, in accordance with a mathematical equation obtained from the data: TEAC = −0.184 + 0.009 ∗ [vitamin A] + 0.011 ∗ [phenolic compounds] + 0.058 ∗ [vitamin C]. The R-squared value was 86.88%. Citrus fruits, such as lemons or oranges, were the fruits associated with the greatest antioxidant capacity in the samples analysed.  相似文献

Kale (Brassica oleracea var. Acephala), broccoli (Brassica oleracea var. botrytis italica), Brussels sprouts (Brassica oleracea L. var. gemmifera) and green and white cauliflower (Brassica oleracea var. botrytis) were used to determine their contents of antioxidising agents: vitamin C, carotenoids and polyphenols. The examined vegetables were found to contain between 40.6 and 107 mg/100 g FW of vitamin C, from 0.04 to 2.7 mg/100 g FW of carotenoids, and from 144 to 773 mg/100 g FW of polyphenols. Cauliflower was found to contain the smallest amount of these compounds and kale the largest. The antioxidant activity of the vegetables was determined on the basis of their ability to extinguish the ABTS free radical. The aquathermal processes to which the vegetables were subsequently subjected reduced their antioxidant activity, mainly due to escape of vitamin C and polyphenols into the water environment. These losses were largest in the case of leafy or highly fragmented vegetables.  相似文献

Vitamin C and polyphenol content as well as total antioxidative activity were investigated in fresh leaves of kale; in leaves after blanching or cooking; and in frozen and canned leaves. In 100 g fresh matter, kale leaves contained 384.9 mg polyphenols and 112.1 mg vitamin C, with a Trolox equivalent antioxidant capacity (TEAC) level of 1175 μM Trolox. Of the polyphenols identified in kale leaves, ferulic acid occurred in the highest amount (240.44 mg/100 g, constituting 62% of total polyphenols). Freezing was a better method of preserving kale leaves since the loss of nutritive constituents was lower than in the case of canning. Depending on preliminary processing and storage temperature, after one-year storage frozen leaves contained 82.9–171.3 mg polyphenols and 39.3–65.4 mg vitamin C, with TEAC at the level of 501–681 μM Trolox in 100 g. In canned leaves these values were: 91.3–94.1 mg polyphenols, 16.1–19.3 mg vitamin C and 268–293 μM Trolox.  相似文献

In this study, ascorbic acid, total polyphenols and proanthocyanidins of fresh-cut cashew apple were quantified. Antioxidant capacity was determined in whole juice and in polyphenols extracts by three methods: 2,2-diphenyl-1-picrylhydrazyl (DPPH), ferric reducing antioxidant power (FRAP) and ??-carotene bleaching. Effect of cutting and storage for 24 h at 2 °C, 27 °C and 40 °C on these compounds were also evaluated. Cashew apple presented 163 mg of ascorbic acid per 100 g of fresh weight (FW). Soluble and hydrolysable polyphenols contents were 12.79 mg GAE/100 g FW and 18.53 mg GAE/100 g FW and proanthocyanidins were 9.27 mg/100 g FW. Antioxidant capacity of juice and polyphenols extract was high for DPPH method. Storage temperatures affected bioactive compounds on cut cashew apple. The content of ascorbic acid decreased in all temperatures. Proanthocyanidins were more sensitive to 40 °C than to other temperatures. The content of polyphenols and antioxidant capacity of juice by DPPH assay did not change. However, the reducing power was lower in samples kept at high temperatures. A strong positive correlation between ascorbic acid and FRAP (r = 0.99) and a negative correlation between DPPH and FRAP (r = − 0.79) were observed. No correlations were found between polyphenols and antioxidant capacity indicating the importance of phenolic composition in the extracts. The results confirm the importance of temperature and injury on the quality of cashew apple.  相似文献

Nutritional composition of five cultivars of chinese jujube   总被引:8,自引:0,他引:8  
The proximate composition of five cultivars of Chinese jujube, along with mineral, vitamin and total phenolic contents were determined. Investigations showed that Chinese jujube contained 80.86–85.63% carbohydrate, 57.61–77.93% reducing sugar, 0.57–2.79% soluble fibre, 5.24–7.18% insoluble fibre, 4.75–6.86% protein, 0.37–1.02% lipid, 17.38–22.52% moisture and 2.26–3.01% ash. The soluble sugars of Chinese jujube included fructose, glucose, rhamnose, sorbitol and sucrose. Fructose and glucose were identified as the major sugars while sorbitol was present in much lesser amounts. Potassium, phosphorus, calcium and manganese were the major mineral constituents in Chinese jujube. Iron, sodium, zinc and copper were also detected in appreciable amounts. The contents of vitamin C, thiamine and riboflavin were found to be 192–359, 0.04–0.08 and 0.05–0.09 mg/100 g, respectively. Total phenolic contents ranged from 5.18 to 8.53 mg/g. No correlation between total phenolic contents and antioxidant capacities or antioxidant capacities and vitamin C contents of Chinese jujube was found.  相似文献

Commercial samples of German chamomile (Chamomilla recutita (L.) Rauschert) tea (n = 13), packaged in different countries and purchased in Estonia either at food markets (9) or at retail pharmacies (4), were analysed for the essential oil and terpenoid content and constituents by GC-MS. Also the tea infusions were analysed for polyphenols spectrophotometrically and chromatographically by LC-DAD-MS/MS. The oils were obtained from chamomile flowers with yields of 0.10 - 0.61%. The existence of two types of chamomile tea, one rich in bisabolol oxides and the other in (−)-α-bisabolol, was established. The total content of polyphenols in gallic acid equivalents, estimated by the classical Folin-Ciocalteu method (TPFC), was almost independent of the sample origin, but the total content of polyphenols (in chlorogenic acid equivalents) calculated on the basis of net areas under the chromatographic curves (AUC) of the infusions at 280 nm (TPAUC) showed a significant variability as well as content of total flavonols (0.29-1.21%) or total phenolic acids (7.7-91.4 mg/200 ml). The major phenolic compounds in the chamomile infusions were chlorogenic acids, ferulic acid glycosides, dicaffeoyl quinic acids and apigenin glycosides. Based on the amounts of essential oil, terpenoids, total flavonols and major phenolic compounds, the quality of the commercial chamomile teas was very variable, and the chamomile teas available in pharmacies should be preferred for the medical purposes.  相似文献

Functional milk beverages (FMB100 and FMB200) fortified with phenolic compounds (100 and 200 mg/l) extracted from olive vegetable water, and fermented with γ-amino butyric acid (GABA)-producing (Lactobacillus plantarum C48) and autochthonous human gastro-intestinal (Lactobacillus paracasei 15N) lactic acid bacteria were manufactured. A milk beverage (MB), without addition of phenolic compounds, was used as the control. Except for a longer latency phase of FMB200, the three beverages showed an almost similar kinetic of acidification, consumption of lactose and synthesis of lactic acid. Apart from the beverage, Lb. plantarum C48 showed a decrease of ca. Log 2.52-2.24 cfu/ml during storage. The cell density of functional Lb. paracasei 15N remained always above the value of Log 8.0 cfu/ml. During fermentation, the total concentration of free amino acids markedly increased without significant (P > 0.05) differences between beverages. The concentration of GABA increased during fermentation and further storage (63.0 ± 0.6-67.0 ± 2.1 mg/l) without significant (P > 0.05) differences between beverages. After fermentation, FMB100 and FMB200 showed the same phenolic composition of the phenol extract from olive vegetable water but a different ratio between 3,4-DHPEA and 3,4-DHPEA-EDA. During storage, the concentrations of 3,4-DHPEA-EDA, p-HPEA and verbascoside of both FMB100 and FMB200 decreased. Only the concentration of 3,4-DHPEA increased. As shown by SPME-GC-MS analysis, diactetyl, acetoin and, especially, acetaldehyde were the main volatile compounds found. The concentration of phenolic compounds does not interfere with the volatile composition. Sensory analyses based on triangle and paired comparison tests showed that phenolic compounds at the concentrations of 100 or 200 mg/l were suitable for addition to functional milk beverages.  相似文献

Four Citrus species (C. sinensis, cvs. Pera and Lima; C. latifolia Tanaka cv. Tahiti; C. limettioides Tanaka cv. Sweet lime and C. reticulate, cv. Ponkan) grown in Brazil were characterised in relation to contents of minerals, ascorbic acid, total polyphenols and antioxidant capacity of pulps and peels. In general, the peels demonstrated significantly higher contents of all compounds than the pulps (< 0.05), with the exception of the Pera orange pulp that presented the highest acid ascorbic content (68 mg/100 ml), while the Tahiti lime peel presented the lowest (8 mg/100 g). Citrus showed high levels of potassium, calcium and magnesium, and the peels were considered sources of these minerals. The Ponkan mandarin peel presented the highest antioxidant capacity. The antioxidant capacity of citrus was correlated both to vitamin C and phenolics. Aside from citrus pulps, the peels are also good sources of bioactive compounds and minerals, and can be explored for their health promoting values in food products.  相似文献

The polyphenol (phenolic acids, flavanols and flavonols) and glycoalkaloid (α-chaconine and α-solanine) contents of potato tubers grown in Luxembourg were analyzed by UPLC–DAD and HPLC–MS/MS separately in peel (approx. 2 mm), outer (approx. 1 cm) and inner flesh. Polyphenol contents decreased from the peel via the outer to the inner flesh and differed among the cultivars. The cultivars Vitelotte and Luminella had the highest polyphenol contents (5202 and 572 μg/g dry weight (DW) in the outer flesh), whereas Charlotte and Bintje had the lowest contents (19.5 and 48.0 μg/g DW). Chlorogenic acid and its isomers (neo- and cryptochlorogenic acid) were the major polyphenols. Glycoalkaloid contents were highest in the peel and lowest in the inner flesh, values in the flesh were below guideline limits in all cultivars. In conclusion, potatoes contribute to the daily intake of polyphenols and their consumption, thereby, may have positive effects on health.  相似文献

In this study, determination of phenolic acids as well as investigation of antioxidant activity of methanolic extracts from the fruits and leaves of Chenopodium album is described. Extracts were subjected to acidic hydrolysis in order to obtain total free phenolic acids. However, some of phenolic acids were identified and quantified by HPLC-DAD. The results were confirmed by LC-MS equipped with MS-ESI. In addition, Folin–Ciocalteu method was applied to determine the total phenolic contents. The antioxidant activity of C. album extracts was examined by using DPPH and hydroxyl radical-scavenging activity assays. Results revealed that the leaves extract exhibits better performance in antioxidant assays and in the higher total phenolic contents (3066 mg of GAE/100 g) when compared to fruits extract (1385 mg of GAE/100 g). From these results it has been revealed that the methanolic extracts of C. album from fruits and leaves have great potential as a source for natural health products.  相似文献

The aim of this study was to evaluate the effects of high hydrostatic pressure treatment at three pressure levels (300, 400 and 500 Mpa) on the functional and quality characteristics of Aloe vera gel including vitamin C and E, aloin, minerals, phenolic content and antioxidant activity. The results show that HHP exerted a clear influence on minerals content, vitamin C and E content, antioxidant activity, total phenolic and aloin content. After 35 days of storage all treated samples presented a decrease in mineral content, except for phosphorus. Total phenolic content and vitamin C and E content decreased at high pressures (500 MPa), while all pressurised samples showed a higher antioxidant activity and aloin content than untreated sample after 35 days of storage. The maximum values of antioxidant activity and aloin were 6.55 ± 1.26 μg/ml at 300 MPa and 24.23 ± 2.27 mg/100 g d.m. at 400 MPa.  相似文献

Pomegranate peels are one of the most valuable by-products of the food industry in terms of polyphenols which are conventionally extracted from plant materials by organic solvents, especially with methanol. Pressurised water extraction was investigated for the extraction of polyphenols from pomegranate peels. The most important factors affecting the extraction results were found to be particle size, temperature, and static time. The results indicated that pressurised water extraction was as effective as conventional methanol extraction for the recovery of polyphenols from pomegranate peels. Total phenolic contents of pomegranate peels obtained by pressurised water extraction at optimised conditions and conventional solid–liquid methanol extraction were determined as 264.3 and 258.2 mg/g tannic acid equivalents, respectively. Hydrolyzable tannins were the predominant polyphenols of pomegranate peels corresponding to 262.7 mg/g tannic acid equivalents. Punicalagin content of pomegranate peels by pressurised water extraction was found to be 116.6 mg/g on dry matter basis.  相似文献

Arbutus unedo is a widespread shrub with economic importance, derived from the use of its berries in the production of alcoholic beverages and in folk medicine. This work intends to evaluate for the first time the effect of fruit ripening stage on antioxidant activity, total phenolic content, fatty acid profile and tocopherol composition. Ripe fruits shown higher extraction yield (45.04 ± 2.23%) when compared to other fruit ripening stages. By contrast, total phenol contents were higher in the unripe and intermediate stage of ripeness (108 and 111 mg GAES/g dry fruit, respectively, against 60 mg/g dry fruit when ripe). Ripe and intermediate fruits shown the lower EC50 values on the DPPH radicals (0.25 ± 0.02 mg/mL) and reducing power assay (1.09 ± 0.05 mg/mL), respectively. A significant correlation was established between antioxidant activity and fruits ripening stage. Fatty acid profiles were very similar between the ripening stages, being alfa-linolenic, linoleic and oleic, the three major ones. Polyunsaturated fatty acids (PUFA) represent as much as 60% of the total fatty acids, with a highly favorable omega 3/omega 6 ratio. From the analysis of the vitamin E vitamers, the most important was ??-tocotrienol, with a clear reduction in the total free vitamin E content with ripening.These results highlight that the fruits of intermediate ripeness can be regarded important sources of biologically active compounds with a fatty acid profile rich in omega-3 PUFA, properly supplemented with high vitamin E amounts.  相似文献

Water, water/methanol (1/1), methanol and ethanol crude extracts from a brown alga Stypocaulon scoparium were examined for total phenolic contents (TPC) using Folin–Ciocalteu method. DPPH scavenging assay was performed to measure the radical scavenging activities (RSA) of the extracts. Results showed a significant association between the antioxidant potency and the TPC. The aqueous extract showed both, the highest antioxidant activity and highest phenolic contents. The identification and quantification of phenolic antioxidants were carried out with a rapid and simple method of reverse phase high performance liquid chromatography (RP-HPLC). This method was developed for the simultaneous analysis of 14 polyphenols, namely gallic acid, catechin, epicatechin, rutin, p-coumaric acid, myricetin, quercetin and protocatechuic, vanillic, caffeic, ferulic, chlorogenic, syringic and gentisic acids. The chromatographic separation of 14 polyphenols was achieved in less than 40 min by RP-HPLC (Varian, Pursuit XRs C18 column, 5 μm, 250 mm × 4.6 mm) using linear gradient elution of methanol and water (0.1% formic acid) with a flow rate of 1 ml/min. The feasibility of minimal processing and modified atmosphere packaging (5%O2+5%CO2) to preserve color attributes and bioactive compounds of fresh-cut tomato from different cultivars (Rambo, Durinta, Bodar, Pitenza, Cencara and Bola) was evaluated through storage under refrigeration. The phenolic compounds and vitamin C content of the six cultivars varied between 187.4 and 335.9 mg/kg fw and from 69.6 and to 212.3 mg/kg fw, respectively. The highest content of lycopene was found in Bodar tomatoes (80.5 mg/kg fw) while the concentration in the other cultivars ranged between 20.0 and 43.1 mg/kg fw. Antioxidant capacity, measured on the basis of the DPPH stable radical, was higher than 9.8% of DPPH inhibition. Neither the content of health-related compounds (lycopene, vitamin C and phenolic compounds) nor the antioxidant capacity changed significantly between whole and just-processed fresh-cut tomatoes. Furthermore the initial colors of fresh-cut tomatoes as well as vitamin C were maintained for 3 weeks under cold storage. The antioxidant capacity was well correlated with vitamin C and phenolic content, whereas lycopene was directly related to color measurements (a*, L* and H*). Minimal processing maintains the main antioxidant compounds and color parameters of slices tomatoes for 21 days at 4 °C, thus preserving their initial nutritional value.  相似文献

Sausages are quite common in the Norwegian diet. Presently the vitamin C content in sausages is listed as zero in the Norwegian Food Composition Table as well as in several other countries’ food composition tables. In the present study, five different kinds of sausages were analysed for relevant nutrients including vitamin C. One composite sample consisting of 15–16 subsamples was analysed for each sausage type. Vitamin C was measured by high-performance liquid chromatography (HPLC) with electrochemical detection as the sum of l-ascorbic acid and dehydro-ascorbic acid. The vitamin C content in the analysed sausages varied from 11 to 40 mg/100 g. This is explained by addition of vitamin C as an antioxidant by the manufacturer mainly to preserve colour. When recalculating vitamin C intakes from the most recent Norwegian national dietary surveys in adults, children and youths using the updated vitamin C values, total vitamin C intake increased by 3–10%. Other processed meat products such as cold cuts may also contain vitamin C as an antioxidant, and a larger impact on vitamin C intake may be seen if also these products turn out to contain considerable amounts of vitamin C. When planning analytical projects for food composition databases, care should be taken to include vitamin C for products where this vitamin may have been added for antioxidant purposes.  相似文献

The present study demonstrated that defatted soybean flour (DSF) can sorb polyphenols from blueberry and cranberry juices while separating them from sugars. Depending on DSF concentration and juice dilution, the concentration of blueberry anthocyanins and total polyphenols sorbed to DSF ranged from 2-22 mg/g and 10-95 mg/g, respectively while the concentration of anthocyanins and proanthocyanidins in cranberry polyphenol-enriched DSF ranged from 2.5-17 mg/g and 21-101 mg/g, respectively. Blueberry polyphenols present in one serving of fresh blueberries (73 g) were delivered in just 1.4 g of blueberry polyphenol-enriched DSF. Similarly, one gram of cranberry polyphenol-enriched DSF delivered the amount of proanthocyanidins available in three 240 ml servings of cranberry juice cocktail. The concentration of blueberry anthocyanins and total polyphenols eluted from DSF remained constant after 22 weeks of incubation at 37 °C, demonstrating the high stability of the polyphenol-DSF matrix. LC-MS analysis of eluates confirmed that DSF retained major cranberry and blueberry polyphenols intact. Blueberry polyphenol-enriched DSF exhibited significant hypoglycaemic activities in C57bl/6J mice, and cranberry polyphenol-enriched DSF showed antimicrobial and anti-UTI activities in vitro, confirming its efficacy. The described sorption process provides a means to create protein-rich food ingredients containing concentrated plant bioactives without excess sugars, fats and water that can be incorporated in a variety of scientifically validated functional foods and dietary supplements.  相似文献

Several Opuntia cactus fruits of different pulp colours from Argentina were studied at their physiological mature states. Analyses of these fruits showed very variable total soluble solid values and ascorbic acid contents ranging from 0.26 to 0.48 mg/g. Total phenolic compounds contents were between 0.54 and 1.2 mg of gallic acid/g, respectively. Purple Opuntia spp., dark purple Opuntia ficus-indica and orange Opuntia megacantha presented the highest levels amongst the samples studied. The antioxidant activity of Opuntia fruits was very variable and presented vitamin C equivalent values (VCEAC) between 0.25 and 0.57 mg/g. Purple Opuntia ficus-indica showed the highest antiradical ability. Besides, the antioxidant activity, ascorbic acid and phenolic compound contents in yellow and orange Opuntia megacantha fruits were monitored in different stages during their ripening process. Concentration changes of betalains and chlorophylls comparing skin and pulp and other physicochemical parameters were also measured in these fruits.  相似文献

The antioxidant potentials of buntan pumelo (Citrus grandis Osbeck) and its fermented products were determined. The essential oil from peel had higher total phenolic (214 mM) and flavonoid (134 mg QE/g of dried material) contents than those of different solvent extracts from fruit pulp. In addition, DPPH free radical-scavenging activity and ferric-reducing antioxidant power values determined for the essential oil were 26.1 ± 1.2% and 2.3 ± 0.3 mM, respectively, which were significantly higher than those of various fruit pulp extracts. The ethanol-fermented products of pumelo juice had higher total phenolic and flavonoid contents than those of fresh juice. For maintenance of the substantial antioxidant properties of pumelo products, ethanol-fermented juice rather than fresh or acetate-fermented juice is recommended. Through correlation analysis, the phenolic compounds in the fermented pumelo products were found to be the major contributors to the free radical-scavenging activity and ferric-reducing power.  相似文献

Frequent consumption of nuts has been linked to a lowered risk of cardiovascular disease. Phytochemicals, especially phenolics, in nuts may be considered to be the major bioactive compounds for health benefits. Nine types of tree nuts and peanuts commonly available in the United States were evaluated for total phenolic and flavonoid contents, antioxidant, and antiproliferative activities. The profiles of total phenolics and flavonoids, including both soluble free and bound forms, were investigated by utilizing solvent extraction, base digestion, and solid-phase extraction methods. Walnuts had the highest total phenolic and flavonoid contents (1580.5 ± 58.0 mg/100 g, 744.8 ± 93.3 mg/100 g, respectively). Walnuts also possessed the highest total antioxidant activity (458.1 ± 14.0 μmol of vitamin C equiv/g of nut). Both soluble phenolic and flavonoid contents were positively correlated with total antioxidant activity (R2 = 0.9901, p < 0.05; and R2 = 0.9749, p < 0.05, respectively). The proliferation of HepG2 and Caco-2 cells was significantly inhibited in a dose-dependent pattern after exposure to the extracts of nuts, with walnuts and pecans exhibiting the highest antiproliferative activity. These results provide new knowledge about health functions of nuts and may influence consumers toward purchasing nuts exhibiting greater potential health benefits.  相似文献
