The antioxidant capacity of twenty nine rapeseed varieties was determined by using ferric reducing antioxidant power (FRAP) and 2,2′-diphenyl-1-picrylhydrazyl (DPPH) methods. Mean FRAP (3190–6326 μmol Trolox/100 g) and DPPH (3194–6346 μmol Trolox/100 g) values for methanolic extracts of rapeseed cultivars did not differ significantly. Moreover, the total content of phenolics (756–1324 mg sinapic acid/100 g), glucosinolates (4.2–87.5 μmol/g, respectively), erucic acid (0.0–56.1%) and colour parameters of the studied rapeseed cultivars were analysed. Antioxidant capacity determined by FRAP and DPPH methods correlated significantly with total phenolic content (TPC) in rapeseed cultivars (r = 0.9332, 0.9339, p < 0.001). Also, significant, inverse correlations were found between antioxidant capacity, total phenolics and luminosity (L) or red colour intensity (a) of rapeseed cultivars. Principal component analysis (PCA) allowed the rapeseed varieties to be differentiated based on their antioxidant capacities, total amounts of phenolics, glucosinolates, erucic acid and colour parameters.  相似文献

To study the polyphenols in whole grain rice varying in bran colour, the total phenolics, flavonoids and antioxidant capacities of the solvent-extractable (Free) and cell-wall bound (Bound) fractions and the profiles of proanthocyanidins and anthocyanins were determined. Red and purple bran rices had significantly higher total (sum of Free- and Bound-) phenolic (PC) and flavonoid (FC) concentrations and antioxidant capacities than light-coloured bran rice or other cereals (P < 0.05), due to their higher concentrations of proanthocyanidins and anthocyanins, respectively. The concentrations of the Bound-PC and FC accounted for approximately half of the total PC and FC in the light-coloured bran rice, but were lower than those in purple and red bran rice (P < 0.05). High correlations were found between the concentrations of total phenolics and the three antioxidant capacity assays except for those in the bound fraction when related to iron chelating capacity. The concentrations of proanthocyanidins in red bran rice was 1.27 mg/g and its composition was 6.5%, 33.5%, 30.6% and 29.4% of 1–3, 4–6, 7–10 mers, and polymer (>10 mers), respectively. Cyanidin-3-glucoside was the predominant anthocyanin and peonidin-3-glucoside was the second highest; the profiles varied between purple bran cultivars. Whole grain rice differing in bran colour contained unique polyphenol subgroups, which have been proposed to positively impact human health.  相似文献

Seven primocane fall-bearing raspberry (Rubus idaeus L.) cultivars, Nova (red), Dinkum (red), Heritage (red), Autumn Britten (red), Josephine, Anne (yellow), Fall Gold (yellow) were analysed for potential health promoting properties including their inhibitory effect on starch and fat digestive enzymes, antioxidant activities, and phenolic composition. The tested raspberry extracts showed no detectable inhibition of pancreatic α-amylase and lipase. However, all the extracts exhibited potent inhibition of α-glucosidase with IC50 from 16.8 to 34.2 μg/mL. Four phenolic compounds, ellagic acid, cyanidin-diglucoside, pelargonidin-3-rutinoside, and catechin were identified as the active α-glucosidase inhibitors. The raspberry extracts also possessed significant antioxidant activities with oxygen radical absorbance capacities (ORAC) ranging from 136.7 to 205.2 μmol Trolox equivalents (TE)/g dry weight fruit and DPPH radical scavenging activities from 305 to 351 μmol TE/g. The total phenolic content of raspberry cultivars varied significantly from 40.9 to 98.5 mg of gallic acid equivalents/g dry weight. The anthocyanin content varied widely from 0.1 to 9.5 mg cyanidin 3-glucoside equivalents/g. Nine phenolic acids were quantified in raspberries and their total amounts varied from 157.3 to 713.5 μg/g. The enzyme inhibition and antioxidant properties of raspberry cultivars were not correlated with their total phenolic, anthocyanin, and phenolic acid content. Overall, ‘Dinkum’ and ‘Josephine’ raspberry varieties possess higher total phenolic content, ORAC, DPPH radical scavenging activity, and α-glucosidase inhibitory activity than other five cultivars.  相似文献

Nine red and three black rice varieties from Thailand, China and Sri Lanka were analysed to determine their proximate composition and their physicochemical and antioxidant properties. Four groups of rice varieties with different amylose contents were identified. Cyanidin 3-glucoside and peonoidin 3-glucoside were confirmed as the dominant anthocyanins in black rice varieties with contents ranging from 19.4 to 140.8 mg/100 g DM and 11.1–12.8 mg/100 g DM, respectively. Total phenolic content (TPC) differed significantly between the varieties, but not between the colours. Highest TPC was found in the red Thai rice Bahng Gawk (BG) with 691 FA equivalent mg/100 g DM, which showed as well the highest antioxidant properties. In red varieties, the major phenolic acids in the free form were ferulic, protocatechuic and vanillic acid, whereas in black varieties protocatechuic acid was dominant followed by vanillic and ferulic acid. In the bound form, ferulic acid was predominant in both colours, where contents differed significantly, followed by p-coumaric and vanillic acid. The antioxidative capacity did not differ significantly between both colours but amongst genotypes. Antioxidant capacity of rice varieties ranged within 0.9–8.1 mmol Fe(II)/100 g DM for FRAP and 2.1–12.3 mmol TEAC/100 g DM. Vitamin C and polyphenol content as well as total antioxidative activity were investigated in fresh leaves of kale; in leaves after blanching or cooking; and in frozen and canned leaves. In 100 g fresh matter, kale leaves contained 384.9 mg polyphenols and 112.1 mg vitamin C, with a Trolox equivalent antioxidant capacity (TEAC) level of 1175 μM Trolox. Of the polyphenols identified in kale leaves, ferulic acid occurred in the highest amount (240.44 mg/100 g, constituting 62% of total polyphenols). Freezing was a better method of preserving kale leaves since the loss of nutritive constituents was lower than in the case of canning. Depending on preliminary processing and storage temperature, after one-year storage frozen leaves contained 82.9–171.3 mg polyphenols and 39.3–65.4 mg vitamin C, with TEAC at the level of 501–681 μM Trolox in 100 g. In canned leaves these values were: 91.3–94.1 mg polyphenols, 16.1–19.3 mg vitamin C and 268–293 μM Trolox.  相似文献

Six raisin grape cultivars and 10 new raisin grape selections were analyzed for antioxidant activity (ABTS assay) and for total and individual phenolic compounds. Samples were freeze–dried and values are reported on a dry weight basis. Antioxidant activity across the 16 samples ranged from 7.7 to 60.9 μmol Trolox/g DW, with A95-27 exhibiting the greatest activity. Total phenolic content, determined in gallic acid equivalents using the Folin–Ciocalteau assay, ranged from 316.3 to 1141.3 mg gallic acid/100 g DW and was strongly correlated (r = 0.990) with antioxidant results. Concentrations of individual phenolics were determined by HPLC. trans-Caftaric acid was the predominant compound in all samples. A95-15 contained the lowest concentration (153.5 μg/g DW) of caftaric acid, while Fiesta contained the highest concentration (598.7 μg/g DW). Selections A56-66, A95-15, and A95-27 had much higher levels of catechin (86.5–209.1 μg/g DW) and epicatechin (126.5–365.7 μg/g DW) than the other samples.  相似文献

The polyphenolic content and antioxidant capacity in the seeds of 11 red grape varieties (five international and six native) widely cultivated in Turkey were investigated. Total phenolic, total flavanol and total polymeric procyanidin content ranged from 79.2 to 154.6, 89.2 to 179.4, and 27.0 to 43.3 mg/g seed, respectively. While (+)-catechin (4.71–23.8 mg/g seed) was found as main flavanol, galloylated catechin monomer and dimeric procyanidin amounts varied between 2.89–17.2 and 0.97–2.97 mg/g seed, respectively. All seed extracts showed remarkable DPPH radical scavenging activity (EC50) and oxygen radical scavenging capacity (ORAC) ranging from 2.71 to 4.62 μg/mL and 1425.9 to 3009.2 μmol Trolox equivalent/g seed, respectively. With high amount of total phenolic content and antioxidant activity, seeds of Okuzgozu, Papaz Karasi, Ada Karasi and Kalecik Karasi varieties could be evaluated as dietary supplement.  相似文献

The influence of ultrasound power (1000–3000 W/L), citric acid concentration (0–3%) and solid:liquid ratio (1:5–1:15) on the phenolic compounds recovery and antioxidant capacity of Syrah grape skin extracts were evaluated. Total phenolic compounds varied from 6485 to 11732 mg gallic acid/100 g and monomeric anthocyanin content from 453 to 685 mg malvidin-3-glucoside/100 g. The antioxidant capacity measured by ORAC and ABTS methods ranged from 230 to 516 μmol Trolox/g and from 442 to 939 μmol Trolox/g, respectively. The most suitable conditions chosen for extraction, within the studied ranges, were 3000 W/L of power, 2.5% citric acid and solid:liquid ratio of 1:15. The extraction yield was satisfactory, with a recovery of 59% of the quantified phenolic compounds, with only 3 min of processing. Ultrasound was considered a suitable method as compared to the conventional extraction, improving the extraction of phenolic acids and facilitating their release.  相似文献

Fatty acids (FA), phytosterols, tocopherols, phenolic compounds, total carotenoids and hydrophilic and lipophilic ORAC antioxidant capacities were evaluated in 16 cultivars of Sacha inchi (SI) seeds with the aim to valorise them and offer more information on the functional properties of SI seeds. A high α linolenic (α-Ln) fatty acid content was found in all cultivars (ω3, 12.8–16.0 g/100 g seed), followed by linoleic (L) fatty acid (ω6, 12.4–14.1 g/100 g seed). The ratio ω6/ω3 was within the 0.83–1.09 range. γ- and δ-tocopherols were the most important tocopherols, whereas the most representative phytosterols were β-sitosterol and stigmasterol. Contents of total phenolics, total carotenoids and hydrophilic and lipophilic antioxidant capacities ranged from 64.6 to 80 mg of gallic acid equivalent/100 g seed; from 0.07 to 0.09 mg of β-carotene equivalent/100 g of seed; from 4.3 to 7.3 and, from 1.0 to 2.8 μmol of Trolox equivalent/g of seed, respectively, among the evaluated SI cultivars. Results showed significant differences (p < 0.05) among the evaluated SI cultivars in the contents of ω3, ω6, antioxidant capacities and other evaluated phytochemicals. SI seeds should be considered as an important dietary source of health promoting phytochemicals.  相似文献

Optimisation of the germination process of different cultivars of broccoli (Brassica oleracea var. italica cv. Lucky, cv. Tiburon and cv. Belstar) and radish (Raphanus sativus cv. Rebel and cv. Bolide) seeds in relation to the content of glucosinolates (GLS), vitamin C and total antioxidant capacity was carried out in order to maximise the health-promoting properties of Brassica sprouts. The content of total and individual GLS varied between species, among cultivars, and germination time. Glucoraphanin in broccoli and glucoraphenin in radish were the predominant GLS in raw seeds (61–77 and 63–129 μmol/g DM, respectively) and, although their content decreased during germination, they were maintained in rather large proportions in sprouts. Vitamin C was not detected in raw seeds and its content increased sharply in broccoli and radish sprouts (162–350 and 84–113 mg/100 g DM, respectively). Raw brassica seeds are an excellent source of antioxidant capacity (64–90 and 103–162 μmol Trolox/g DM in broccoli and radish, respectively) and germination led to a sharp increase. Germination of broccoli cv. Belstar and radish cv. Rebel for 4 days provided the largest glucoraphanin and glucoraphenin content, respectively, and also brought about large amounts of vitamin C and antioxidant capacity.  相似文献

The antioxidant capacity of pomegranate juices (PJs) obtained from eight cultivars were determined by the scavenging activity against 1,1-diphenyl-2-picrylhydrazyl (DPPH), 2,2′-azino-bis(3-ethyl-benzothiazoline-6-sulfonic acid) (ABTS) and β-carotene-linoleate model system. Total phenolic content (TPC) and total anthocyanin content (TAC) were also determined and found to vary between the range of 208.3–343.6 mg catechin equivalents and 8.1–36.9 mg cyanidine-3-glucoside equivalents per 100 ml of PJ, respectively. Cultivar Izmir 8 showed the highest scores for trolox equivalent antioxidant capacity (TEAC) as 418.3 ± 5.2 mg/100 ml of PJ, anti-lipid peroxidative activity (ALPA) as 93.5 ± 1.8% and efficient concentration (EC50) as 29.8 ± 2.9 ml of PJ/g of DPPH. The hierarchy of PJs for antioxidant capacity with respect to their TEAC and ALPA values was I8 > I1499 > I10 > I1264 > I1479 > I26 > I23 > Zivzik. Interrelationships among the analyzed parameters and PJs obtained from eight cultivars were investigated by principal component analysis (PCA). Dimension of data set was reduced to two components by PCA accounting for the 93% of the total variance. Eight PJs were classified into three groups by cluster analysis (CA).  相似文献

Anthocyanins were identified and quantified in various cultivars of blueberries grown in Australia. Those were Crunchie, Star and Sharpe (highbush, Vaccinium corymbosum L.) and Climax, Powderblue and Brightwell (rabbiteye, Vaccinium ashei). A method was developed involving liquid chromatography–mass spectrometry and UV–visible spectroscopy. The repeatability of injection was less than 2% relative standard deviation (RSD) while the repeatability of sample preparation was less than 10% RSD in most cases. The method was linear between 7% and 100% of the original concentration. The anthocyanin profile was similar in all cultivars but proportions of each compound were cultivar-dependent. Highbush had more early eluting peaks, i.e. more polar anthocyanins, than rabbiteye cultivars. Delphinidin, petunidin and malvidin were the major contributors to total anthocyanin content. Climax had the highest total anthocyanin content (13.7 ± 1.4 g cyanidin 3-glucoside equivalent kg−1 dry weight) and antioxidant activity (using 2,2-diphenyl-1-picrylhydrazyl as a free radical) of all tested cultivars. Rabbiteye had significantly higher total anthocyanin content than the highbush cultivars.  相似文献

Exopolysaccharide (EPS) was produced in a mycelial liquid culture of the Cordyceps sinensis fungus, Cs-HK1, at a rate proportional to mycelial growth. The crude EPS isolated from the culture medium by ethanol precipitation contained 65–70% sugar and about 25% protein, suggesting that the EPS was composed of polysaccharide–protein complexes. It exhibited a wide molecular weight (MW) range from about 5 kDa to more than 200 kDa. The intrinsic viscosity as an index of average MW of EPS, increased during the period of rapid mycelial growth to 11.0 dL/g on day 5, and remained relatively stable between day 5 to day 8 (stationary growth period). Both infrared spectrometry of EPS and gas chromatography of acetylated EPS suggested that the EPS had a β-d-glucan backbone. The EPS showed moderate antioxidant activities with a Trolox equivalent antioxidant capacity of 35–40 μmol Trolox/g and a ferric reducing ability of plasma of 50–52 μmol Fe(II)/g.  相似文献

Important health-promoting compounds, including six types of anthocyanins, phytoestrogenic flavonoids and ellagic acid were determined individually in pomegranate juices (Punica granatum L.) of eight Iranian cultivars by high performance liquid chromatography coupled to UV–vis detector (HPLC–UV) using individual calculation from the peak area based on standard curves of each component. Total phenolics and antioxidant activities were determined by Folin–Ciocalteu and 2,2-diphenyl-1-picrylhydrazyl (DPPH) methods, respectively, and compared among the cultivars. The predominant anthocyanins were delphinidin 3,5-diglucoside (372–5301 mg/l) followed by cyanidin 3,5-diglucoside (242–2361 mg/l), delphinidin 3-glucoside (49–1042 mg/l) and pelargonidin 3,5-diglucoside (7–90 mg/l), respectively. The highest level of total tannins was found in Sweet Alak cultivar (3 mg/l). Saveh Black Leather showed the highest level of ellagic acid (160 mg/l). Antioxidant activity varied among the cultivars (18–42 Trolox equivalents antioxidant capacity) and was directly related to the total phenolics in each type of juice.  相似文献

The antioxidant capacities, total polyphenolic content and monomeric anthocyanin content of eleven types of sour cherry juice obtained from different varieties of sour cherries were investigated. Antioxidant capacity, total polyphenolic content and monomeric anthocyanin contents of the juices were within the ranges 20.0–37.9 mmol/L, 1510–2550 and 350.0–633.5 mg/L, respectively. The main anthocyanin compound in sour cherry juice was cyanidin-3-glucosylrutinoside at concentrations between 140.3 and 320.9 mg/L. Cyanidin-3-glucosylrutinoside was followed by cyanidin-3-rutinoside within a concentration range of 25.5–85.5 mg/L. Cyanidin-3-sophoroside and cyanidin-3-glucoside contents were relatively low (2.6–21.5 and 2.0–9.9 mg/L). Anthocyanin capacity and total polyphenol content were fairly well correlated (r = 0.742, p < 0.01), whereas the correlation between antioxidant capacity and monomeric anthocyanin content was insignificant (r = 0.423, p > 0.05). The correlation between antioxidant capacity – cya-3-glucosylrutinoside (r = 0.606, p < 0.01) and antioxidant capacity – cya-3-rutinoside (r = 0.628, p < 0.01) was significant.  相似文献

Little is known about the content and development of pyranoanthocyanins, pigments mainly formed during red wine ageing, in commercial wines. Some of the major pyranoanthocyanins in a wide selection of 1–10 years-old Spanish Tempranillo wines and also in a 29 years wide-vertical series of Tempranillo wines from an individual cellar have been determined. Great variability in pyranoanthocyanin concentrations was found (range, mg/l): vitisin A, 0–10.76; pinotin A, 0–4.26; and malvidin 3-glucoside-4-vinylphenol, 0.03–1.37. Vitisin A and malvidin 3-glucoside-4-vinylphenol were already present in 1–2 years-old wines, whereas pinotin A was only detectable in a few of the 1 and 2 years-old wines. Vitisin A tended to decrease with wine age, while hydroxyphenyl-pyranoanthocyanins showed the reverse trend. However, the aforementioned trends were interrupted by various temporary maxima, most likely due to some “refreshment” of the oldest wines (i.e., addition of young wine), as suggested by unexpected high concentrations of malvidin 3-glucoside, in contrast to the results found in the wine vertical series. The effects of addition of young wine on aged wine pyranoanthocyanin concentrations were confirmed by wine refreshment experiments.  相似文献

Antioxidant activity of bran extracts from five wheat varieties indigenous to Pakistan, i.e. Punjab-96, Bhakkar-2002, Uqab-2000, SH-2002, and Pasban-90, has been evaluated. All the bran extracts exhibited appreciable total phenolic content (2.12-3.37 mg gallic acid equivalent/g bran), total flavonoid content (epicatechin equivalent 262-304 μg/g bran), chelating activity (ethylenediaminetetracetate equivalent 597-716 μg/g bran), 2,2′-diphenyl-1-picrylhydrazyl radical scavenging activity (51-79%), ABTS radical cation scavenging activity (Trolox equivalent 27-36 μmol/g), oxygen radical absorbance capacity (97-123 μmol/g), and total anthocyanin content (30-38 mg/kg bran). Tocopherol (22-26 ppm) and tocotrienol content (59-74 ppm) were determined by RP-HPLC. For confirmation of tocopherol content, polarographic study was conducted, which further authenticated the results (21-25 ppm). All the varieties exhibited appreciable antioxidant potential and significant differences were observed among the varieties in different systems of antioxidant activity evaluation.  相似文献

Heterocyclic aromatic amines (HAA) are carcinogenic compounds found in the crust of fried meat. The objective was to examine the possibility of inhibiting HAA formation in fried beef patties by using marinades with different concentrations of hibiscus extract (Hibiscus sabdariffa) (0.2, 0.4, 0.6, 0.8 g/100 g). After frying, patties were analyzed for 15 different HAA by HPLC-analysis. Four HAA MeIQx (0.3–0.6 ng/g), PhIP (0.02–0.06 ng/g), co-mutagenic norharmane (0.4–0.7 ng/g), and harmane (0.8–1.1 ng/g) were found at low levels. The concentration of MeIQx was reduced by about 50% and 40% by applying marinades containing the highest amount of extract compared to sunflower oil and control marinade, respectively. The antioxidant capacity (TEAC-Assay/Folin–Ciocalteu-Assay) was determined as 0.9, 1.7, 2.6 and 3.5 μmol Trolox antioxidant equivalents and total phenolic compounds were 49, 97, 146 and 195 μg/g marinade. In sensory ranking tests, marinated and fried patties were not significantly different (p > 0.05) to control samples.  相似文献

Anthocyanins are among the most important and widely consumed natural pigments in foods, and have attracted increased attention as natural food colourants and potent bioactive agents. However, anthocyanins are generally unstable and may undergo chemical changes that include oxidative and polymerisation reactions during processing and storage. The role of anthocyanin polymerisation reactions on in vitro intestinal absorption and anti-cancer properties has not been assessed. This study investigated the chemical composition, antioxidant properties, antiproliferative activity, and in vitro absorption of monomeric and polymeric anthocyanin fractions from açai fruit (Euterpe oleracea Mart.). Cyanidin-3-rutinoside (58.5 ± 4.6%) and cyanidin-3-glucoside (41.5 ± 1.1%) were the predominant compounds found in monomeric fractions, while a mixture of anthocyanin adducts were found in polymeric fractions and characterised using HPLC–ESI-MSn analyses. Monomeric fractions (0.5–100 μg cyanidin-3-glucoside equivalents/ml) inhibited HT-29 colon cancer cell proliferation by up to 95.2% while polymeric anthocyanin fractions (0.5–100 μg cyanidin-3-glucoside equivalents/ml) induced up to 92.3% inhibition. In vitro absorption trials using Caco-2 intestinal cell monolayers demonstrated that cyanidin-3-glucoside and cyanidin-3-rutinoside were similarly transported from the apical to the basolateral side of the cell monolayers (0.5–4.9% efficiency), while no polymeric anthocyanins were transported following incubation for up to 2 h. The addition of polymeric anthocyanin fractions also decreased monomeric anthocyanin transport by up to 40.3 ± 2.8%. Results from this study provide novel information regarding the relative size, absorption, and bioactive properties of anthocyanin monomers and polymer adducts.  相似文献

Berries of Vaccinium meridionale Swartz native to Colombia were analysed for chemical composition, total phenolic content, anthocyanin content, and antioxidant activity. In addition, high-performance liquid chromatography with photodiode array detection (HPLC–DAD) and HPLC-electrospray ionisation tandem mass spectrometry (ESI–MS/MS) were used to determine anthocyanin and phenolic composition. Anthocyanin content was 329.0 ± 28.0 mg cyanidin 3-glucoside equivalents/100 g (fresh weight) FW and total phenolic content was 758.6 ± 62.3 mg gallic acid equivalent/100 g FW. Cyanidin 3-galactoside was the major anthocyanin while the most abundant non-anthocyanin phenolic was chlorogenic acid.  相似文献
