Varieties of set-type probiotic fermented milks and yoghurt were made from recombined skimmed milk powder, anhydrous milk fat and commercial starter cultures (direct-to-vat inoculation, DVI). Serum separation of fermented milks and yoghurt with high initial rates of syneresis proceeded more slowly than separation of those with low initial rates of syneresis; the decrease during the storage period was linear and the rate of decrease was dependent on the type of starter culture used. The firmness of these products increased over the time period, and the rate of increase was linear and independent of the starter culture. The production of exopolysaccharide material by the starter microflora also influenced syneresis and firmness of the probiotic fermented milks. The average profiles of organic acids of all the products were similar with the exception of two starter cultures that generated the highest level of acetic acid. After cross-validation, classification of the starter type using the organic acids values correctly predicted the type of starter culture used for 23 out of 24 samples. All the sensory attributes were influenced by the type of starter culture used and the trial, with the exception of viscosity character; acetic acid production by the microbial species of the starter cultures had the greatest influence on the flavour attribute.  相似文献

The objective of this research was to evaluate the rheological, sensorial, and chemopreventive properties of milk fermented with different exopolysaccharide (EPS)-producing lactic cultures. Reconstituted skim milk (11% wt/vol) was fermented with single strains of EPS-producing and non-EPS-producing cultures. Whey that collected on the surface of undisturbed fermented milks and after cutting was measured. All EPS-producing cultures reduced the amount of whey present on the surface of the undisturbed samples, whereas only 3 out of 5 strains reduced syneresis measured after cutting. All EPS-producing cultures except a strain of Lactobacillus delbrueckii ssp. bulgaricus reduced viscoelastic moduli in fermented milk. There was a linear correlation between ropiness and smoothness. In the chemoprevention study, 140 male Fisher rats were divided into 7 groups of 20 each. Rats in 6 groups were fed diets supplemented with fermented milks each made with a single strain of EPS-producing or non-producing cultures, whereas rats in group 7 (control) were fed a diet supplemented with milk acidified with glucono-δ-lactone (GDL). All rats were injected with azoxymethane (15 mg/kg, subcutaneous) at wk 7 and 8 of age to induce tumors and fed their respective diets ad libitum throughout the study. After 30 wk of initiation, all rats were anesthetized with ether, and their intestinal tissues were isolated and washed with cold normal saline. The number and size of tumors in the colon and small intestine were recorded. Rats fed diets supplemented with fermented milk made with 2 EPS-positive and 1 EPS-negative strains had significantly lowered incidence of colon tumor and colon tumor multiplicity. Cyclooxygenase-2 enzyme activity (the enzyme implicated in colon tumor development) was significantly lower in the colon tissue of rats fed diets containing milk fermented with 4 EPS-producing and 1 non-producing cultures than that in rats fed diets supplemented with GDL-acidified milk. Different EPS-positive cultures produced fermented milks with distinct rheological characteristics and levels of ropiness. No relationship was found between rheological properties or level of ropiness of fermented milk and its chemopreventive effect.  相似文献

动物双歧杆菌(Bifidobacterium animalis subsp. lactis,Ba)、植物乳杆菌(Lactobacillus plantarum,Lp)与传统酸奶发酵剂(Y)共培养条件下,对发酵乳的酸化特性(pH值和滴定酸度)、蛋白水解活力、胞外多糖(exopolysaccharide,EPS)含量、肽含量、1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基清除率、羟自由基清除率、Fe2+螯合能力及还原能力进行研究,以探讨共发酵对发酵乳抗氧化特性的影响。结果表明,在冷藏过程中,发酵乳的酸化能力和蛋白水解活力增加(P<0.05)。EPS主要由传统发酵剂产生,不是造成不同菌种发酵乳抗氧化能力差异的原因。发酵乳在冷藏期间肽含量和还原能力均表现出上升-下降的趋势,于第7天达到峰值。与单一Y相比,Ba或Lp与Y共发酵可提高发酵乳的蛋白水解活力、肽含量和抗氧化能力(P<0.05)。Y-Ba/Lp发酵乳在冷藏期内具有最高的DPPH自由基清除率、羟自由基清除率、Fe2+螯合能力和还原能力(P<0.05);Y-Lp比Y-Ba发酵乳有较低的DPPH自由基清除率、Fe2+螯合能力和还原能力,但有较高的羟自由基清除率(P<0.05)。本研究表明,益生菌共培养可以提高发酵乳的抗氧化能力,这种作用主要源于益生菌的蛋白水解特性。  相似文献

In this work, the effect of skim milk powder (0, 5%, 10%, 15% w/v) and sugar (0%, 10% w/v) on the viability of probiotic micro‐organisms and on the quality of fermented milks was investigated. Fermented milks were submitted to physicochemical, microbiological and sensory analyses on the 1st, 10th and 21st days after production. Sugar inclusion did not affect the probiotic growth in fermented milks, but milk powder levels of 10–15% influenced positively the probiotic counts, which were above six log colony‐forming units (cfu)/g. These findings can be useful for small dairy industries that are interested in producing flavoured fermented milks without decreasing the viability of probiotic micro‐organisms during its shelf life.  相似文献

从甘肃牧区传统发酵乳制品中分离筛选适合发酵乳生产的乳酸菌,对分离纯化的乳酸菌进行了发酵性能检测,筛选出产酸快、发酵活力高、凝乳时间短、后酸化能力弱、遗传性状稳定的菌株。筛选的6株菌株单菌发酵牛乳,均在6.5 h内凝乳,发酵乳酸度>70 °T,乳酸菌活菌数>1×108 CFU/mL,发酵乳组织状态、滋味、气味等感官指标良好,可作为生产发酵乳的优良乳酸菌菌种进行开发利用。  相似文献

研究凝固型的绵羊奶与牛奶酸奶发酵特性和贮存期特性,利用pH计、酸度滴定、质构仪、电子舌、活菌计数及感官评价对其pH值、滴定酸度、质构特性、味觉特点、活菌数和感官评分进行分析。结果表明:在发酵过程中绵羊奶与牛奶有相同的pH值变化规律,即前2.5 h下降非常缓慢,之后迅速下降,在凝乳前0.5 h下降变缓直到凝乳结束,达到发酵终点的时间分别为5 h和4.5 h;在4 ℃贮存0~24 d期间,酸奶的pH值都在逐渐下降,牛奶酸奶比绵羊奶酸奶下降更大;滴定酸度方面起始时绵羊奶比牛奶高,达到发酵终点时也明显高于牛奶;质构测定结果为YSM(添加益生菌干酪-张发酵的凝固型绵羊奶酸奶)、JDM(嗜热链球菌与保加利亚乳杆菌共同发酵的经典凝固型绵羊奶酸奶)具有更高的硬度和稠度,黏聚性和黏性指数也显著高于JDN(嗜热链球菌与保加利亚乳杆菌共同发酵的经典凝固型牛奶酸奶),奶的种类为影响酸奶硬度、稠度、黏聚性和黏性指数的主要因素,益生菌干酪-张的添加对这些指标的影响很小;电子舌测定结果为丰富性味感值绵羊奶酸奶明显高于牛奶酸奶,酸感值则低于牛奶酸奶,甜、苦、咸、涩、鲜感值差异不明显;感官评价方面绵羊奶酸奶综合评分高于牛奶酸奶,差异性主要体现在滋味、组织状态和喜爱程度上,在色泽和气味方差异不明显;在4 ℃、21 d贮存期间酸奶的活菌数都在逐渐降低,添加益生菌干酪-张的绵羊奶酸奶活菌数最多,第21天时活菌数分别是普通绵羊奶酸奶和牛奶酸奶的10 倍和100 倍以上,干酪-张对绵羊奶酸奶4 ℃贮存期间活菌数的维持有较好作用。同时,实验结果表明:益生菌干酪-张可以作为发酵剂之一与经典的酸奶发酵剂嗜热链球菌和保加利亚乳杆菌搭配用于凝固型绵羊奶酸奶的制作,以增加其功能价值。  相似文献

微囊化纯培养发酵剂发酵奶与藏灵菇奶的比较研究   总被引:1,自引:0,他引:1  
利用从藏灵菇中分离出的优势菌,进行混合发酵,比较了这种纯培养菌种发酵的酸奶与藏灵菇发酵奶在感官、主要风味成分以及优势菌株数量的差异。HPLC检测结果表明,这2种发酵奶的乳酸产量分别为7.62 g/L和7.85 g/L,无显著差异;GC检测结果表明,微囊化纯培养发酵剂发酵奶中丁二酮的含量明显高于传统藏灵菇奶;GC-MS检测结果表明,2种发酵奶中挥发性风味成分有90%相同;感官评定表明微囊化纯培养发酵剂发酵奶的可接受程度显著高于藏灵菇奶。表明,微囊化纯培养发酵剂发酵奶既保持了藏灵菇奶原有的特征,又在风味上得到了进一步的提高,表明微囊化纯培养发酵剂可以替代藏灵菇进行这类发酵奶的规模化生产。  相似文献

The aim of this research was the evaluation of the effects of milkfat content, nonfat milk solids content, and high-pressure homogenization on 1) fermentation rates of the probiotic strain Lactobacillus paracasei BFE 5264 inoculated in milk; 2) viability loss of this strain during refrigerated storage; and 3) texture parameters, volatile compounds, and sensorial properties of the coagula obtained. The data achieved suggested a very strong effect of the independent variables on the measured attributes of fermented milks. In fact, the coagulation times were significantly affected by pressure and added milkfat, and the rheological parameters of the fermented milk increased with the pressure applied to the milk for added nonfat milk solids concentrations lower than 3%. Moreover, the polynomial models and the relative response surfaces obtained permitted us to identify the levels of the 3 independent variables that minimized the viability loss of the probiotic strain used during refrigerated storage.  相似文献

Yeasts are present in indigenous African fermented milks in numbers up to log 8 cfu g(-1), together with a varied lactic acid bacteria (LAB) flora, and therefore potentially contribute to product characteristics. However, interaction between yeasts and LAB in these products has received little notice. In studies of indigenous fermented milk in Zimbabwe and Uganda, many samples contained more than one species of yeast, but Saccharomyces cerevisiae was most commonly isolated. Other frequent isolates were other species of Saccharomyces and several species of Candida. Most yeast isolates were lactose-negative but usually galactose-positive. Some strains assimilated lactate and citrate. The growth in milk of strains of yeasts and LAB, isolated from naturally soured milk in Zimbabwe, and their interaction when selected pairs of strains were grown together has been studied. Interactions were shown by the significantly different amounts of certain metabolites produced, such as acetaldehyde and malty aldehydes, when co-cultures were compared to pure cultures. Preliminary sensory acceptance tests did not show, however, that milks made from a co-culture with Candida kefyr and LAB were preferable to the pure LAB culture. Further work is still needed to elucidate the reactions that may be taking place in fermented milk between varying LAB and yeast populations. The potential for use as starter cultures depends on various aspects, including the final product being prepared. The role of other microorganisms in naturally fermented milk also needs to be studied.  相似文献

Proteolysis and electrophoretic pattern of casein were determined in Friesian cows' skim milk, buffaloes' skim milk and in these milks fermented spontaneously (leben rayeb) and by Streptococcus lactis subsp. diacetylactis DRC3 (nonfat buttermilk) or by zabadi starter (zabadi). The highest proteolysis, as evidenced by the amount of released leucine, occurred in zabadi and the lowest in leben rayeb. The highest amount of tyrosine was liberated in the nonfat buttermilk. Proteolysis seems not to depend on the kind of milk used. A band of a relatively high density appeared to be released from alpha s-casein by the cell-wall proteinase of the microflora of raw milk and by heating at 90 degrees C for 1 min. Cows' skim milk, raw or heated, showed the presence of 2 probable proteose-peptone components; buffaloes' skim milk 3 and 2. These components underwent slow or rapid degradation, depending on the type of fermented milk during skim milk coagulation.  相似文献

This study investigated the possibility of using yeast strains in fermented milks to obtain products with high Angiotensin I-converting enzyme (ACE) inhibitory activity and low bitter taste. Ninety-three yeast strains isolated from Colombian Kumis in different geographic regions were molecularly identified, and their milk fermentation performances were determined. Molecular identification evidenced that Galactomyces geotrichum, Pichia kudriavzevii, Clavispora lusitaniae and Candida tropicalis, were the dominant species. Eighteen out of 93 strains produced fermented milk with ACE-inhibitory (ACEI) activity values ranging from 8.69 to 88.19%. Digestion of fermented milk samples by pepsin and pancreatin demonstrated an increase in ACEI activity, with C. lusitaniae KL4A as the best producer of ACEI peptides. Moreover, sensory analysis of the products containing the major ACE-inhibitory activity pointed out that P. kudriavzevii KL84A and Kluyveromyces marxianus KL26A could be selected as potential adjunct starter cultures in Kumis, since they made a considerable contribution to the ACE inhibitory activity and produced fermented milk without bitter taste. In this study we observed that Colombian Kumis can be an excellent vehicle for the isolation of yeasts with a potential to enhance bioactive peptides produced during milk fermentation.  相似文献

The growth of bacteria normally used to produce yoghurt was compared in soymilk and cow milk. Whether or not Bifidobacterium ssp. was present, fermented soymilks [soyoghurt (S), soyoghurt + bifi-dobacteria (SB)] were less acidic than fermented cow milks [yoghurt (Y), yoghurt + bifidobacteria (YB)]. When bifidobacteria were present (in SB), streptococci were more numerous than lactobacilli. Bifidobacteria in YB stimulated maximal growth of both yoghurt bacteria. In comparison to nonfermented milks, acetaldehyde and diacetyl increased in all cultures. Ethanol increased only in S/SB and acetone was detected only in Y/YB. Quantities of volatile products in Y/'YB were slightly lower than those in Y/S. In all cultures, n-hexanal was almost totally absent.  相似文献

The effect of milk processing on rheological and textural properties of probiotic low‐fat yogurt (fermented by two different starter cultures) was studied. Skim milk fortified with skim milk powder was subjected to three treatments: (1) thermal treatment at 85C for 30 min; (2) high hydrostatic pressure (HHP) at 676 MPa for 5 min; and (3) combined treatments of HHP (676 MPa for 5 min) and heat (85C for 30 min). The processed milk was fermented using two different starter cultures containing Streptococcus thermophilus, Lactobacillus delbrueckii ssp. bulgaricus, Lactobacillus acidophilus and Bifidobacterium longum at inoculation rates of 0.1 and 0.2%. Rheological parameters were determined and a texture profile analysis was carried out. Yogurts presented different rheological behaviors according to the treatment used, which could be attributed to structural phenomena. The combined HHP and heat treatment of milks resulted in yogurt gels with higher consistency index values than gels obtained from thermally treated milk. The type of starter culture and inoculation rate, providing different fermentation pathways, also affected the consistency index and textural properties significantly. The combined HHP and heat treatment of milks before fermentation, and an inoculation rate of 0.1% (for both cultures), led to desirable rheological and textural properties in yogurt, which presented a creamy and thick consistency that does not require the addition of stabilizers.  相似文献

Organoleptic properties of skimmed milk fermented gels are progressively demanding to produce optimal quality yogurts. Chr‐Hansen trademark registered cultures were used to produce low‐protein (3.4%) gels to assess the ability to redesign the sensorial and textural properties with the choice of starter culture. Resulting gels were assessed for sensorial, textural, rheological, and microstructural properties and compared with a commercial control (4.5% protein). Mouth thickness, syneresis, firmness, elasticity, and consistency values were lower for polysaccharides‐producing cultures. Such cultures contributed to the higher creaminess and tended to give higher ropiness. Observed differences among microstructures of the gel were minute. Microstructural and rheological data corresponded and reflected the instrumental and sensory interpretations. Strong correlations were observed between sensory and instrumental data. Nonprobiotics cultures resulted in promising overall gel properties compared with probiotic cultures according to the principal component analysis. Yet probiotic cultures resulted in lower syneresis than nonprobiotic cultures. Thus, the choice of bacterial culture modifies the sensorial and textural properties of fermented gel with strong correlations, as a result of altered gel network formation with the production of polysaccharides. Inferior textural and sensorial quality aspects, particularly at low protein levels, have negative impact on consumer demand of low protein yogurts. Thus, we attempted to gain required gel textural and sensorial properties with a choice of starter culture with a low protein level. Resulting gel properties at lowered protein content with different starter cultures are not fully known. The present study compares the effect of probiotic and nonprobiotic starter cultures on gel properties, as gel texture and sensory properties are of great interest and thus not willing to be compromised. In addition, we examined the overall texture profile of studied cultures and correlate with sensory properties. Therefore, reducing protein level in milk and achieving required gel properties with the choice of appropriate starter culture is of great commercial interest as a cost‐cutting strategy to produce low‐cost optimum quality yogurt.  相似文献

The influence of carbonation on the evolution of lactose, galactose and glucose in fermented milks with added probiotic bacteria (Lactobacillus casei, Lactobacillus acidophilus and/or Bifidobacterium bifidum) was evaluated and related to beta-galactosidase activity of starter strains. During incubation and first days of refrigeration, lactose hydrolysis resulting in the liberation of galactose and glucose occurred in CT (Streptococcus thermophilus/Lb. casei), AT (Str. thermophilus/Lb. acidophilus) and ABT fermented milks (Str. thermophilus/Lb. acidophilus/Bifid. bifidum). Levels of galactose were higher than those of glucose and could be related to the preferential consumption of glucose by actively growing bacteria. Through the incubation, lactose and monosaccharide levels were not affected by milk carbonation. However, during refrigerated storage the presence of this gas was associated with slightly lower content of lactose and higher levels of galactose and glucose in AT and ABT products but not in CT fermented milks. Through the refrigeration galactose was moderately utilised by Lb. acidophilus in AT products whereas the presence of Bifid. bifidum seems to prevent the consumption of this sugar in ABT fermented milks. Glucose remained constant, with minor variations in CT products but a continuous increase of this sugar occurred in carbonated AT and ABT fermented milks during storage. Beta-galactosidase activity displayed by Str. thermophilus strains was similar at pH 6.5 (initial pH of non-carbonated samples) and pH 6.3 (initial pH of carbonated samples) whereas Lb. acidophilus LaA3 showed greater beta-galactosidase activity at pH 6.3 than at higher pH values. Thus, the enhanced metabolic activity of Lb. acidophilus caused by the low initial pH of carbonated milk also promoted higher cellular beta-galactosidase activity that could have released greater amounts of galactose and glucose from lactose in AT and ABT fermented milks through the refrigerated period. In CT fermented milks, similar beta-galactosidase activity levels of Str. thermophilus at pH 6.5 and 6.3 together with the absence of beta-galactosidase activity in Lb. casei could explain the lack of differences on glucose and galactose content between carbonated and non-carbonated samples.  相似文献

BACKGROUND: Soy skim milks fermented with lactobacilli contain various phytochemicals such as isoflavones and peptides. We used lactobacilli‐fermented soy skim milk as a nutritional supplement for 6 weeks to investigate its anti‐osteoporosis effect in 13‐month‐old female BALB/c aging mice. Freeze‐dried powder of soy skim milk fermented by Lactobacillus paracasei subsp. paracasei NTU 101 (NTU 101F) and L. plantarum NTU 102 (NTU 102F) were used in this study. RESULTS: The trabecular bone volumes in mice fed NTU 101F and NTU 102F increased by a factor of 3.48 and 2.16 compared with control values, respectively. The network density and thickness of distal metaphyseal trabecular bone in mice fed with NTU 101F and NTU 102F milks were significantly denser than that of control mice; moreover, the NTU 101F group had the largest resting area ratio and smallest resorbing area compared with other groups. The beneficial effect may due to isoflavones as well as higher amounts of polysaccharide and peptide in NTU 101F milk. CONCLUSION: The results suggest that dietary supplement with fermented soy skim milk can attenuate aging‐induced bone loss in BALB/c mice and possibly lower the risk of osteopenia or osteoporosis in aging.
