Temperature changes during pressure-shift freezing (400 MPa) of potato cubes and its effects on the drip loss (weight and conductivity), texture (shear and compression tests), colour (L, a, b values), drying behaviour, rehydration properties (water uptake, texture after rehydration) and visible cell damage after thawing (micrographs) were investigated and compared with conventional freezing (0.1 MPa, -30 °C), subsequent frozen storage (-18 °C) or pressure treatment (400 MPa) at +15 :C. Pressure-shift freezing resulted in increased crystallization rates compared to conventional freezing at -30 °C. Crystallization and cooling to ?8 =C took 2.5 min during and after pressure release versus 17 min at atmospheric pressure. Drip loss was reduced from 12.0 to 10.8g/100g. Water uptake during 10 min of rehydration (93.9g/100g compared to 77.4g/100g and incomplete rehydration) and texture values were improved. Browning after thawing or after fluidized bed drying was reduced (increased a value, lower L value), suggesting partial enzyme inactivation during pressure treatment. Differences in colour and texture to the untreated controls were smaller after pressure-shift freezing than after conventional freezing. Cooling to ?30 °C after pressure-shift freezing did not significantly affect the results, whereas subsequent frozen storage at ?18 °C resulted in quality deterioration, as observed after frozen storage of conventionally frozen samples. The improved preservation of cell structure was demonstrated using scanning electron microscopy.  相似文献

Instant rice produced from a conventional process consisting of the cooking, washing and drying steps possesses poorer eating quality compared with that of freshly cooked rice. The objective of this work was therefore to study the effects of cooking, pretreatment and drying methods on microstructure, textural properties and starch digestability of instant rice after rehydration; jasmine white rice was chosen as a test material. Conventional boiling method and electric rice cooking were selected as the methods to prepare cooked rice. In the case of boiling, cooked rice was frozen at −20 °C or cooled at 4 °C for 24 h prior to drying, while the cooked rice from an electric rice cooker was washed with ambient or cool water for 30 s prior to drying. After pretreatment the cooked rice was dried either by freeze drying or hot air drying at 80 °C. Based on the scanning electron microscopic results it was found that the cooking, pretreatment and drying methods all affected the rice morphology. The hardness and stickiness of instant rice after rehydration were lower for samples prepared from the rice cooker than those of freshly cooked rice, while both textural properties appeared to be improved significantly for the samples from boiling. The texture of the freeze-dried products was not different from that of the air-dried one. The freezing pretreatment provided the texture and glycemic index of instant rice after rehydration similar to those of the freshly cooked rice. On the other hand, the cooling pretreatment resulted in the harder texture and higher glycemic index of the samples.  相似文献

为获得较优的芒果干燥方法,以复水性、感官为评价指标,比较微波真空冷冻干燥、热板真空冷冻干燥和热风干燥3种不同干燥方法对芒果干制品品质的影响。结果表明:真空冷冻干燥法的产品各项指标均优于热风干燥法。微波真空冷冻干燥的产品复水性最好,25℃与100℃最大复水比分别为3.363、3.674;其次为热板真空冷冻干燥,两温度条件下与微波真空冷冻干燥产品复水比相差较小;热风干燥产品复水性最差,分别为2.140、3.028。感官指标中色泽、香气和口味3方面均为:微波真空冷冻干燥>热板真空冷冻干燥>热风干燥。  相似文献

SUMMARY— A study was made to develop high Quality juice powders from four tropical fruits. Guava and mango puree, passion fruit and pineapple juice were dehydrated in a vacuum-puff freeze-drying process. Sucrose in amount (25–40%) approximating nectar formulations was mixed with single-strength juice or puree samples, blended 2 min, and frozen. Freezing temperatures of various samples were measured in a constant temperature bath of −21.6°F. Samples initially frozen in blast freezers at −40°F or 0°F with 0.25–1.0 lb/ft2 were vacuum-puffed and freeze dried on aluminum trays at 50μ Hg and 120–130°F shell temperature for 6–9 hr to 1–2% moisture. Puffing was affected by (1) rapid freezing of the juice-sucrose mixture; (2) artificially entrapping some gas in the mixture before freezing; (3) changing the pressure or temperature in the chamber to effect gas expansion; and (4) increasing the mixture viscosity to limit bubble sizes. Results of drying over 160 different samples showed that: (1) added sucrose to give a 40° 5° Brix in the mixture resulted in a stable 'puffed' structure; (2) several permissible calcium salts and silica at 0.1–0.5% (w/w) added to the mixture before drying, improve the free-flowing properties of the dried product. 为了解不同干燥方法对乌贼干后品质及微观结构的影响,采用自然晾晒干燥、热风干燥和真空冷冻干燥3种方法对乌贼进行处理,研究其对乌贼感官特征、色泽、收缩率、风味、甲醛含量和微观结构的影响,以及在后续复水过程中复水率和复水完成后质构参数的变化。结果表明,干制后乌贼的收缩率变化为:自然晾晒干燥热风干燥真空冷冻干燥,且差异显著(P0.05)。真空冷冻干燥的乌贼在色泽、复水率方面优于其他两组,在第9小时的纯水复水率可达524.25%,为自然晾晒干燥组的2.5倍,而在质地和风味方面的品质一般,其微观肌肉纤维形变较小,纤维间孔径较大;热风干燥后的样品在感官、质地以及风味方面具有显著优势,呈味氨基酸含量总和达1 519.20 mg/100 g,显著高于其他干燥组(P0.05),但样品中的甲醛含量较高,为260.83 mg/kg,是新鲜样品的4.7倍,且肌肉纤维形变大,排列致密;自然晾晒干燥的乌贼肌肉纤维形变较小,排列较致密,其甲醛含量较低,仅为22.06 mg/kg,感官品质和色泽还有待进一步提高。  相似文献

Spinach (Spinacea oleracea) was dehydrated at 70 °C, partially dehydrated frozen (dried to its critical moisture ratio and frozen at ?20 °C) and frozen at ?20 °C. Results indicated that the time required for spinach dehydration was 7 h. Thus, the moisture ratio was 10.1 and 0.054 for the fresh and dried spinach, respectively. The critical moisture ratio during dehydration process was 2.20 after 2.65 h of drying time. Reducing sugars, free amino nitrogen, ash, iron and magnesium were slightly decreased in the partially dehydrated frozen spinach relative to the fresh samples. Dehydration markedly degraded the total chlorophyll, chlorophyll a, chlorophyll b, carotenoides and ascorbic acid whereas the freezing of partially-dehydrated spinach and freezing process were less effective. On the other hand, freezing of partially dehydrated spinach increased phaeophytin. There were no changes in pH-values of studied preserved samples. Freezing of partially dehydrated spinach improved the reconstitution of product at 100 °C and at room temperature (25 °C) comparing to dehydration. The drip loss of frozen spinach was 16.4% after 105 min of thawing time. Cooked fresh and frozen spinach were better in colour, flavour, texture, appearance and shape and over-all acceptability than that of dehydrated cooked one. Moreover, freezing of partially dehydrated spinach improved the aforementioned properties.  相似文献

The objective of this study was to examine how the drying kinetics and physical properties of apples are affected by pre-treatment with 95% ethanol or freezing at –18 °C before microwave-assisted air dehydration at 50, 60 and 70 °C. Microwave heating was used to obtain these temperatures in the centre of the apple cubes. After dehydration the shrinkage and rehydration capacity were measured. The texture of dehydrated and rehydrated samples was analysed with a puncture test in a texture analyser. Samples were also analysed with confocal laser scanning microscopy to determine the correlation between physical and microstructural properties. Diffusivity in the different dehydration processes was calculated. Ethanol-treated apples showed both high rehydration and high effective rehydration capacity compared with the other samples. Freezing before dehydration increased the diffusivity and reduced the firmness of rehydrated apples compared with no pre-treatment.  相似文献

The effect of freezing on fibre and crude protein fractions of forages was determined. Fresh and ensiled lucerne and fresh bromegrass were processed immediately after collection or stored at ?25°C for 1 day or 1, 6 or 12 months before drying at 55°C. Samples were frozen quickly by submersion in liquid nitrogen or slowly at ?25°C. Samples which were not frozen were processed immediately or after 1 h delay at room temperature. All treatments were replicated (n = 3). Samples were analysed for crude protein (CP), trichloroacetic acid soluble CP (TSCP), phosphate buffer soluble CP (BSCP), neutral detergent insoluble CP (NDCP), acid detergent insoluble CP (ADCP), neutral detergent fibre (NDF), acid detergent fibre (ADF), acid detergent sulphuric acid lignin (lignin) and ash. Freezing decreased BSCP and increased NDCP by more than 40% for bromegrass. Freezing also changed NDF, ADF, lignin, ash, CP and ADCP in different ways depending on forage type and length of time frozen. No significant effects were observed for method of freezing or a 1-h delay in processing. An additional experiment showed that freeze-drying resulted in less insoluble protein than ovendrying. Prior freezing of forages appeared inconsistently to change the extent of gaseous loss during drying, and resulted in precipitation of protein. These changes also affected fibre estimates. Fresh forages should not be frozen and thawed before analysis of protein or fibre fractions.  相似文献

Frozen blueberries (Vaccinium corymbosum L cv. 'Elliott') were dried in a microwave and spouted bed combined dryer (MWSB) at 70C air temperature and 3.7 W/g microwave power (wet material). the effect of pretreatment using a 2.5% Ethyl Oleate & 0.2 NaOH dipping solution followed by sucrose osmotic treatment was investigated. the drying kinetics of MWSB drying was compared with spouted bed (SB) drying with dipping treatment, and with tray drying. the rehydration ratio, the color, and the bulk density of MWSB dried blueberries were compared with those of freeze, tray, and SB drying. the drying time needed to reduce blueberry moisture content from 82.5% to 15% (wet basis) using MWSB drying was 1/19 and 1/24 (with and without pretreatment) of the time for tray drying. the MWSB drying resulted in a low bulk density and more reddish and less blue color compared with other methods. MWSB dried frozen blueberries exhibited a higher rehydration ratio in short soaking times. Analysis of flavor volatiles by GC/MS identified ten heat-generated compounds. Microwave heating generated three unique flavor compounds (2-Butanone, 2-methyl butanal, and 3-methyl butanal). Freeze-dried frozen blueberries lost several flavor compounds including the typical blueberry aroma, the 1, 8-Cineole.  相似文献

为获得复水性较好的干香菇,研究了热风干燥(hot-air drying,HAD)、中短波红外干燥(infrared radiation drying,IRD)和真空冷冻干燥(freeze drying,FD)香菇的复水特性及复水后的综合品质。结果表明:FD香菇具有均匀的多孔结构,使得干香菇的复水速率明显高于HAD香菇和IRD香菇,复水60?min即可达最大复水体积比(9.22),且复水香菇的外观与鲜样接近。同时,复水后FD香菇的剪切力(1?352.99?g)和咀嚼性(232.54?g)最小,表明其质地柔软、易被切分。此外,FD复水香菇和其他两种复水香菇具有相似的电子鼻响应值曲线,表明其香气无差异。复水时FD香菇的蛋白质和VB2的溶出率最高,分别为0.42?mg/g和0.71×10-3?mg/g,说明FD复水香菇富含营养成分,且加工时较易溶出。综上,FD可作为一种较好的干燥方式来制备复水性较好的高品质香菇。  相似文献

Thermal processing of vegetables has pronounced effects on the cell structure, often lowering the final textural properties of the product. In order to investigate the effect of thermal processing on carrot, slices were subjected to different blanching and freezing treatments before frozen storage. Microwave-, steam- or water-blanched material was frozen and then stored at −24 °C. Steam-blanched carrots were subjected to blast freezing or cryogenic freezing at different temperatures before frozen storage. The influence of these process conditions on the texture (maximum load and slope), microstructure, dry matter, sugars, carotene and drip loss was investigated. Microwave blanching differed from the other blanching methods by resulting in a heterogenic cell structure. The content of dry matter, carotene and sucrose was higher following microwave blanching. Blast freezing resulted in low maximum load which seemed to be caused by major tissue damage. Concerning cryogenic freezing, lowering the temperature from −30 °C to −70 °C resulted in better preservation of the native microstructure together with an increase in maximum load, which was most pronounced after one month of storage. No significant effect was observed when lowering the temperature from −30 °C to −70 °C for any of the other measured parameters. © 1999 Society of Chemical Industry  相似文献

为研究预处理方式对丰水梨压差闪蒸干燥的影响,以丰水梨为原料,探讨热烫预处理、深冻预处理、柠檬酸浸渍预处理和果葡糖浆浸渍预处理对丰水梨干燥产品色泽、硬度、脆度、复水性、感官、可溶性固形物含量、可滴定酸含量、总糖含量、总酚含量、总黄酮含量、抗坏血酸含量和微观结构等的影响。结果表明:适当的热烫预处理有利于干燥产品感官品质的提高;深冻预处理虽有助于产品总酚和抗坏血酸的保留,但其硬度较小,膨化效果不明显;柠檬酸浸渍预处理的硬度较大,可滴定酸含量最高,口感偏酸,感官评价喜好度为中等;果葡糖浆浸渍预处理有助于增加干燥产品可溶性固形物和总糖含量,但其硬度较大,脆度较小,失去商品性质。综合比较,热烫处理是丰水梨压差闪蒸干燥较适宜的预处理方式。  相似文献

The effect of pre-treatment variables such as freezing rate and method of cutting the meat, and of product surface temperature during freeze-drying as well as dehydration per se on quality were studied in multifactorial experiments. Very high freezing rate, using liquid nitrogen spray, resulted in lowered reconstitution ability after freezedrying and marked paleness of both dried and reconstituted meat, compared with freezing rates in the range spanned by conventional freezing methods. Cutting the meat before freezing impaired reconstitution ability compared with slicing it in the semifrozen state or sawing it in the frozen state before freeze-drying, but improved colour of the dry product. Comparisons between freeze-dried and frozen beef indicated a quality loss inherent in the dehydration method itself, while drying in the range of surface temperatures from +20° to +60° resulted in no appreciable difference in quality with temperature. The results obtained are in fair agreement with published data where they have been available.  相似文献

The combined effects of aging, freezing rate, frozen storage and cooking method on beef quality and yield were studied in a multifactorial experiment, using 1.5 cm slices of LD muscles from young steers. Aging for 2 wk resulted in significantly more tender, but slightly less juicy frozen meat than aging for 4 days. Prolonged frozen storage gave tougher meat and a larger tenderness difference between aging times. Freezing rates of 13, 2.0 and 0.04 cm/h differed but little in their effect on sensory quality, but slightly lower yield and redness value were noted for the lowest rate. Pan frying directly from the frozen state resulted in slightly higher juiciness and cooking yield, with larger differences in yield between freezing rates, than cooking after previous thawing. 对比研究真空冷冻干燥、真空干燥和热风干燥对三七内部结构和复水品质的影响。采用微CT技术对干燥样品进行扫描和图像重构,计算干燥样品的孔隙率和复水比,对3种干燥方法所得样品的复水品质进行对比分析。结果表明:3种干燥方法对孔隙率和复水比都有极显著影响(P<0.01)。从内部结构的保持和复水品质角度来看,真空冷冻干燥优于其他两种干燥方法,较适于工业生产。  相似文献

Freeze-dried coffee powders were evaluated to determine the effect of freezing method and chamber pressure during drying on the retention of coffee flavor components. Headspace gas chromatography revealed at least 14 components of coffee aroma, but minor chromatograph peaks were re moved from consideration, and evaluation was based on the total area of the eight remaining peaks. The results showed that volatile retention was greatest when slowly frozen samples were dried at low chamber pressure. Samples that were foamed prior to slow freezing showed sizably reduced retentions. Slowly frozen samples showed gradually decreasing volatile retention as the pressure increased up to 0.7 torr, and drying at 0.8 torr resulted in a large reduction. Samples which were processed at different chamber pressures so as to give the same powder color showed significant differences in their flavor retention. Almost all the test samples had higher volatile contents than the commercial samples which were tested, though it cannot be sure that this does not reflect differences in coffee extracts.  相似文献

Effect of freezing on bacteriologic culturing of mastitis milk samples   总被引:4,自引:0,他引:4  
The objective was to determine the effect of freezing and length of freezing in a commercial freezer on the qualitative results of bacteriologic culturing of milk collected from glands of cows with clinical or subclinical intramammary infections. A total of 182 milk samples from cows with clinical mastitis and 55 milk samples of cows with subclinical mastitis were taken from four problem herds. Samples were split into four equal sub-samples. Three of these were frozen immediately at -20 degrees C and 1 was submitted fresh for bacteriologic analysis. At 4, 8, and 16 wk after collection, samples were thawed and submitted for bacteriologic culturing. Freezing and increased length of storage resulted in 1) a decrease in the number of samples that had cultures of Escherichia coli or Actinomyces pyogenes; and 2) an increase in the number of samples that had cultures of coagulase-negative staphylococci. Freezing had no effect on streptococci and Staphylococcus aureus.  相似文献

ABSTRACT: Mexican oregano ( Lippia berlandieri Schauer) was dried using a freeze drier, conventional hot air drier, and a recently developed vacuum-microwave drier. The effect of the drying method on the relative content of major flavor volatiles, rehydration rate, color, and structural integrity of the herb was evaluated. Dynamic headspace analysis of volatiles present in fresh or dried oregano revealed that β-myrcene, α-terpinene, γ-terpinene, p-cymene, and thymol were the major volatile compounds of the plant. The level of thymol in vacuum-microwave-dried oregano was found to be comparable to that of fresh or freeze-dried samples (1.3 times the thymol concentration of air-dried). Air-dried samples of oregano were darker, were less green, and exhibited lower rehydration rates than those prepared by vacuum-microwave or freeze-drying. Structures of vacuum-microwave and freeze-dried oregano appeared to be quite similar as observed on electron micrographs.  相似文献
