The present study evaluated the sensory characteristics of low temperature long time (LTLT) treated Semitendinosus from pork and beef and Pectoralis profundus from chicken. Semitendinosus and Pectoralis profundus muscles were heat treated at 53°C and 58°C for Tc + 6 h, Tc + 17 h, and Tc + 30 h (only Semitendinosus from pork and beef). Tc was the time for the samples to equalize with the temperature in the water bath. Tenderness increased with increasing heating temperature and time in pork and beef, but not in chicken. Juiciness decreased with increasing heating temperature and time in all species, and cooking loss increased with increasing temperature. A done appearance was developed with increasing heating time at 58 °C in pork and beef, while in chicken the done appearance was only affected by temperature. Flavor attributes were less affected by the LTLT treatment for all species.  相似文献

The objective of the present study was to obtain data about cooking time and temperature of kiymali pide in the restaurants and to investigate thermal inactivation of E. coli O157:H7 during experimental kiymali pide making. A field study was conducted in randomly selected 23 of 87 pide restaurants. Processing parameters including oven temperature, cooking period and post-cooking temperature were determined. Kiymali pide samples were prepared using ground beef filling experimentally inoculated with E. coli O157:H7 (7.6 log10 CFU/g). Pide samples were cooked at a conventional oven at 180 °C for 180, 240, 270, 300 and 330 s. Results of the current study suggest that cooking kiymali pide at 180 °C for at least 330 s (5.5 min) may provide sufficient food safety assurance (≥ 6 log10 CFU/g) for E. coli O157:H7.  相似文献

Heterocyclic amines (HCAs), potent mutagens and a risk factor for human cancers, are produced in meats cooked at high temperature. The aim of this study was to determine the HCA content in cooked meat products (beef, chicken, pork, fish) prepared by various cooking methods (pan frying, oven broiling, and oven baking at 170 to 230 °C) that are preferred by U.S. meat consumers. The primary HCAs in these samples were PhIP (2-amino-1-methyl-6-phenylimidazo [4,5-b]pyridine) (1.49-10.89 ng/g), MeIQx (2-amino-3,8-dimethylimidazo [4,5-f]quinoxaline) (not detected-4.0 ng/g), and DiMeIQx (2-amino-3,4,8-trimethyl-imidazo [4,5-f]quinoxaline) (not detected-3.57 ng/g). Type and content of HCAs in cooked meat samples were highly dependent on cooking conditions. The total HCA content in well-done meat was 3.5 times higher than that of medium-rare meat. Fried pork (13.91 ng/g) had higher levels of total HCAs than fried beef (8.92 ng/g) and fried chicken (7.00 ng/g). This study evaluated chemical tenderizers and cooking methods to inactivate Escherichia coli O157:H7 in ground beef patties (model system for non-intact beef). Ground beef was inoculated with E. coli O157:H7 and mixed with (i) nothing (control), (ii) calcium chloride (CC) and flavoring agents (FA), (iii) CC, FA, and acetic acid (AA), (iv) sodium chloride (SC), sodium tripolyphosphate (ST), and potassium lactate (PL), and (v) the combination of SC, ST, PL, and AA. Patties were stored in aerobic or vacuum bags at − 20, 4, and 12 °C. Samples were grilled, broiled, or pan-fried to 60 or 65 °C. Total bacterial and E. coli O157:H7 populations remained unchanged during storage. Broiling was more effective in reducing E. coli O157:H7 than grilling and pan-frying, and acidified tenderizers reduced E. coli O157:H7 more than non-acidified tenderizers in broiling. Higher reductions were observed at 65 °C than 60 °C in broiled and grilled samples. These results indicate that acidified tenderizers and broiling may be useful in non-intact beef safety.  相似文献

The aim was to investigate the effect of different cooking regimes on the cook yield and tenderness of non-injected and brine injected (0.5% residual NaCl) bovine M. triceps brachii caput longum (TB), M. supraspinatus (SP) and M. pectoralis profundus (PP). Injected and non-injected TB, SP and PP muscle sections (400 g) were (a) conventionally oven cooked to 72 °C or cooked slowly (using a Δ10 programme) to 72 °C or (b) cooked in a water bath to 72 °C or cooked in a water bath to 55 °C and held at this temperature for 2 h before heating to 72 °C. In addition, injected PP muscle sections were oven cooked to 69 °C and held at this temperature for up to 12 h. Slow cooking using a Δ10 programme had no significant (P < 0.05) effect on WBSF values of injected or non-injected SP and TB muscles but significantly (P < 0.05) decreased the WBSF values of injected and non-injected PP muscles when compared to conventional cooking. Slow cooking significantly (P < 0.05) increased % cook yield of injected PP, SP and TB muscles. Staged cooking significantly (P < 0.05) decreased the WBSF values and had no significant effect on sensory tenderness ratings of non-injected TB, SP and PP muscles and injected PP muscles. Staged cooked injected or non-injected PP, SP and TB muscles had lower % cook yield values than those cooked straight to 72 °C. Increasing the cooking time of injected PP muscles at 69 °C to 8 and 12 h decreased % cook yield, decreased WBSF values and increased sensory tenderness ratings. It also alleviated the problem of residual chewiness which was evident in PP muscles cooked using the other regimes.  相似文献

Commercial samples of beef and turkey meat were prepared by commonly used cooking methods with standard cooking times: (1) broiled at 200 °C for 10 min, (2) broiled at a medium temperature (140 °C) for 10 min, (3) cooked by microwave (MW) for 3 min and then grilled (MW/grill) for 7 min, (4) cooked in a domestic microwave oven for 10 min, and (5) boiled in water for 10 min. The raw and cooked meats were then analysed to determine the carnosine, anserine, homocarnosine, pentosidine, and thiobarbituric acid-reactive substance (TBARS) contents. It was observed that boiling beef caused a loss of approximately 50% of the carnosine, probably because of the high water solubility of carnosine and its homologues; cooking by microwave caused a medium loss of the anti-oxidants of approximately 20%; cooking by MW/grill led to a reduction in carnosine of approximately 10%. As far as the anserine and homocarnosine contents were concerned, a greater loss was observed for the boiling method (approximately 70%) while, for the other cooking methods, the value ranged from 30% to 70%. The data oscillate more for the turkey meat: the minimum carnosine decrease was observed in the cases of MW/grill and broiling at high temperature (25%). Analogously, the anserine and homocarnosine contents decreased slightly in the case of MW/grill and broiling at a high temperature (2-7%) and by 10-30% in the other cases. No analysed meat sample showed any traces of pentosidine above the instrumental determination limits. The cooked beef showed an increased TBARS value compared to the raw meat, and the highest values were found when the beef was broiled at a high temperature, cooked by microwave or boiled in water. The TBARS value of the turkey meat decreased for all the cooking methods in comparison to the TBARS value of the fresh meat.  相似文献

There is no systematic procedure described in the literature to establish a robust and accurate reference method for determining the moisture content in any solid food product. In this paper, we are proposing a new approach based on simultaneous thermogravimetry and differential thermal analysis (TG–DTA), with data for several amorphous food powders that result from spray-drying, freeze-drying or extrusion. In the first step, by heating a representative sample of about 20 mg at 2 °C/min we would detect the temperature and the mass loss at the inflection point that characterises, if there is an inflection, the end of the drying and the onset of chemical reactions. In cases of not too much sensitive products, the mass loss at the inflection may be considered as a good estimation of the moisture content. At 2 °C/min heating rate, the inflection temperature Ti is an indicator that allows estimating the optimal isothermal drying temperature Td about 15–30 °C below Ti, depending on the product sensitivity to heat treatments and the kinetics of water molecule diffusion through the amorphous matrix. Then, a series of three isothermal drying are performed at about Td−12 °C, Td and Td+8 °C, and a simple multilinear model allows calculating the best oven temperature to achieve the optimal moisture content determination in 2 h. This procedure is described and results are shown for several dehydrated food products: milk, coffee, cereal and pet food. This fast procedure may be applied either for establishing optimal oven conditions for most amorphous new products or for revising conditions that have been established in the past but are not robust enough for several ones.  相似文献

The ability to perform Warner–Bratzler and slice shear force on the same beef top loin steak was investigated. Three, 2.54-cm steaks from top loins (n = 99) were allotted to either Warner–Bratzler only (WBS), slice shear force only (SSF), or Warner–Bratzler and slice shear force (WBS/SSF). Steaks were thawed at 2 °C for 48 h prior to cooking. Steaks were cooked to 71 °C using a conveyor convection oven and allowed to cool at room temperature for a minimum of 4 h. Steaks allotted to WBS used six 1.27-cm cores and steaks allotted for WBS/SSF used four cores. Steaks allotted to SSF and WBS/SSF used one, 1 cm × 5 cm slice. Correlations among WBS and SSF for all steaks ranged from 0.49 to 0.69 (P < 0.0001). When correlations were generated for steak location within the top loin, the relationships among WBS and SSF performed in the same steak ranged from 0.53 to 0.70 (P < 0.05). These results indicate that it may be feasible to conduct WBS and SSF on the same top loin steak, and that the steak taken 2.54 cm from the 13th rib is the optimal location for this combination of procedures.  相似文献

Pre-cooked Pacific white shrimp (Litopenaeus vannamei) is an important shrimp product. However melanosis, especially in the cephalothorax including carapace and internal organs, is more likely caused by the remaining polyphenol oxidase (PPO) after pre-cooking. Thus, PPO from carapace and proteases from hepatopancreas of Pacific white shrimp were characterised and the remaining activities of both enzymes were monitored in pre-cooked shrimp during storage at 4 °C. Based on activity staining using L-β-(3,4 dihydroxylphenyl) alanine as a substrate, PPO consisted of two isoforms with apparent molecular weight of 210 and 220 kDa. No difference in activity band was observed when analysed under reducing and non-reducing condition. Proteases from hepatopancreas were able to activate PPO to some degree. For the in vitro study, both enzymes were quite stable when heated at temperature up to 70 °C but the loss in activities increased with increasing heating time (0-120 s). When Pacific white shrimp were pre-cooked to obtain different core temperatures (50-90 °C), different PPO and protease activities were retained. Higher core temperatures were associated with lower PPO and protease activities, but higher cooking loss. When the shrimp were pre-cooked at 80 °C, the residual PPO and protease activities were 3.9% and 5.4%, respectively and cooking yield of 95.6% was obtained. The resulting pre-cooked shrimp possessed lower melanosis score during 7 days of storage at 4 °C. Thus, pre-cooking of shrimp to obtain a core temperature of 80 °C, with a holding time of 30 s, could prevent the severe cooking loss and lower melanosis during subsequent storage.  相似文献

Evaporative weight loss from food leads to both loss of saleable weight and quality deterioration so it need to be minimized. The effect of isothermal and fluctuating conditions on frozen dough weight loss was measured and compared with kinetic, physical and artificial neural network (ANN) models. Frozen dough samples were regularly weighed during storage for up to 112 days in loose-fitting plastic bags. The storage temperatures were in the range of −8 to −25 °C with fluctuations of ±0.1 °C (isothermal), ±1, ±3 or ±5 °C about the mean. For each combination of temperature and fluctuation amplitude, the rate of dough weight loss was constant. The rate of weight loss at constant temperature was nearly proportional to water vapour pressure consistent with standard theories for evaporative weight loss from packaged foods but was also accurately fitted by Arrhenius kinetics. Weight loss increased with amplitude of temperature fluctuations. The increase could not be fully explained by either the physic model based on water vapour pressure differences or the kinetic model alone. An ANN model with six neurons in the input layer, six neurons in hidden layers and one neuron in the output layer, achieved a good fit between experimental and predicted data for all trials. However, the ANN model may not be accurate for product, packaging and storage systems different to that studied.  相似文献

Electronic nose to study postharvest dehydration of wine grapes   总被引:1,自引:0,他引:1  
Montepulciano grapes were dehydrated at 10 and 20 °C, 45% RH and 1–1.5 m/s of air flow. Samplings were performed at 10%, 20%, 30%, and 40% of weight loss (wl). TSS (total solids content) increased up to 43° and 36° Brix at 20 and 10 °C, respectively, in 27 and 48 days. A straight regression line between M (kg water/kg dry matter) loss and days of dehydration with R2 values, equal to 0.97, was found but an angular coefficient of −0.048 and −0.038, respectively at 20 and 10 °C indicated a different rate of weight loss. Volatiles compounds profile changed significantly with the temperature during the dehydration process. Anaerobic metabolites such as ethanol, acetaldehyde, and ethylacetate were much higher at 20 °C than at 10 °C and rose progressively, while at 10 °C, the significant rise was observed between 30% and 40% weight loss. Alcohols and esters prevailed at 20 °C while at 10 °C larger abundances of aldehydes and terpene alcohols are observed. PCA analysis of GC/MS confirmed the volatiles compounds separation between the samples held at 20 and 10 °C. A progressive evolution of the profile is observed for the samples held at 20 °C while those held at 10 °C show a change of volatiles compounds profile only at 40% wl. Loadings analysis show that aldehydes and terpenols are oriented towards the direction of 10 °C samples while alcohols and esters in that of 20 °C samples. The behaviours of GC/MS data were partially corroborated by the data of electronic nose. Electronic nose was able to follow the progressive change of aroma profile at 20 °C while at 10 °C grouped the responses obtained at 10%, 20%, 30% wl all together but at 40% wl, it discriminated the aroma response. This result opens a window on the potential use to monitor commercially the grape dehydration.  相似文献

Twenty red deer carcasses were included in the study. Two treatments were applied to the carcasses; control (air chilling) and spray chilling (n = 10 for each treatment). Carcass weight and temperature change were registered during over-night chilling. Meat moisture content was measured in the shoulder, loin, flap and leg before and after the chilling treatments; purge, cooking loss and tenderness were measured in loin samples stored at −1.5 °C for 3 and 9 weeks. Microbiological status was assessed on swabs taken at the lumbar end of the loin before and after the chilling treatments. Spray chilling reduced carcass weight loss significantly; air chilled and spray chilled carcasses lost 1 kg and less than 0.01 kg, respectively. No effects of spray chilling on tenderness, purge and cooking loss were found. Bacterial levels were low in general even after 9 weeks of vacuum packaged chilled storage.  相似文献

The effect of storage length and temperature on the shelf life of three ground beef formulations (lean:fat: 73:27, 81:19 and 91:9) was investigated. Coarsely ground beef was stored at − 1.7 or 2.3 °C for up to 28 d. Traditional overwrap packages were produced every 7 d prior to retail display for 24 h. Lipid oxidation (TBARS), subjective color, instrumental color, and aerobic bacteria were evaluated after 0 and 24 h of display. Formulation influenced initial L* and subjective color values (P < 0.05). Storage temperature did not affect initial color, but product stored at 2.3 °C was more discolored after 24 h (P < 0.05). Aerobic bacteria increased as storage d and temperature increased (P < 0.05). Initial TBARS increased through d 21, but were lower after 28 d. Overall, initial characteristics depended on formulation; however, ground beef shelf-life and stability were largely influenced by storage length and storage temperature.  相似文献

Selected physical and chemical characteristics of faba beans (Vicia faba L.) cv. Fiesta were studied after 12 months storage at 5, 15, 25, 37, 45 or 50 °C (±2 °C) in relation to the hard-to-cook phenomenon. In comparison with control (seeds stored at 5 °C), seeds stored at 15 and 25 °C demonstrated non-significant (p?0.05) changes in most of the physical and chemical characteristics including hydration and swelling coefficients, acid detergent fibre, lignin and tannin contents, whereas seeds stored at ?37 °C demonstrated significant changes (p?0.05). Solutes and electrolytes leaching after 18 h soaking substantially increased with increased temperature. Faba bean hardness tested by the hard-to-cook test also increased substantially with increased storage temperature. After 8 h soaking followed by 2 h cooking, the puncture force required for seeds stored at 5 °C was 3.3 N seed−1 whereas seeds stored at 50 °C required a much higher puncture force of 15.2 N seed−1. There was a high negative correlation (r2=0.98) between storage temperature and cooking ability of faba bean. Substantial increases in acid detergent fibre and lignin contents occurred with increased storage temperatures. There was a three-fold increase in lignin content of faba bean stored at 50 °C compared to those stored at 5 °C and it was correlated with bean hardness (r2=0.98). Storage at high temperatures for 12 months led to a substantial reduction in total free phenolics especially in the testa and there was a greater reduction with increasing storage temperature. Reduction in free phenolics was negatively correlated (r2=0.75) with bean hardness.  相似文献

The texture of lotus root is hard and crispy, and the root can maintain its appearance and mouth feel after cooking at 100 °C for over 60 min. This study tried to elucidate relationships between pressurized cooking treatments (at 100 °C for 1, 3, 5, 10, 20, 30, 60 min and at 110 °C, 121 °C and 132 °C for 1, 3, 5, 10, 20, 30 min, respectively) and changes in its chemical composition and texture. Results showed that the contents of hemi-cellulose and cellulose of lotus root decreased with increasing pressurized cooking temperature/duration during heat treatment while lignin content remained almost the same. The NDF contents decreased more than did the ADF contents. Relative hardness of lotus root decreased with increasing pressurized cooking temperature/duration while solid loss increased (P < 0.05). These results could be used as references for the lotus root industry, as well as an academic basis for future development.  相似文献

This study evaluated the effect of brining with phosphates on the physico-chemical and sensory features of sous-vide and roasted cooked lamb. Lamb loins (n = 48) were injected with either 10% w/w of distilled water or a solution containing 0.2% or 0.4% (w/v) of a mixture of phosphate salts. After injection, samples were either sous-vide cooked (12 h—60 °C) or oven roasted (180 °C until 73 °C of core temp.). Expressible moisture, cooking loss, instrumental color, pH, water holding capacity, instrumental texture and sensory properties were evaluated. Brining with phosphates led to lower cooking loss in both sous-vide and oven roasted samples, but only the former showed significantly higher moisture content. Phosphates increased instrumental hardness and shear force values in sous-vide samples, while this effect was not as evident in roasted ones. Toughness was reduced and juiciness was improved as a consequence of phosphate addition. Overall, injection of a phosphate solution appears as a potential procedure for improving sensory textural features of cooked lamb whole cuts.  相似文献

The effect of trans-cinnamaldehyde (TC) on the inactivation of Escherichia coli O157:H7 in undercooked ground beef patties was investigated. A five-strain mixture of E. coli O157:H7 was inoculated into ground beef (7.0 log CFU/g), followed by addition of TC (0, 0.15, and 0.3%). The meat was formed into patties and stored at 4 °C for 5 days or at −18 °C for 7 days. The patties were cooked to an internal temperature of 60 or 65 °C, and E. coli O157:H7 was enumerated. The numbers of E. coli O157:H7 did not decline during storage of patties. However, cooking of patties containing TC significantly reduced (P < 0.05) E. coli O157:H7 counts, by >5.0 log CFU/g, relative to the reduction in controls cooked to the same temperatures. The D-values at 60 and 65 °C of E. coli O157:H7 in TC-treated patties (1.85 and 0.08 min, respectively) were significantly lower (P < 0.05) than the corresponding D-values for the organism in control patties (2.70 and 0.29 min, respectively). TC-treated patties were more color stable and showed significantly lower lipid oxidation (P < 0.05) than control samples. TC enhanced the heat sensitivity of E. coli O157:H7 and could potentially be used as an antimicrobial for ensuring pathogen inactivation in undercooked patties. However detailed sensory studies will be necessary to determine the acceptability to consumers of TC in ground beef patties.  相似文献

The viscoelastic characteristics of reconstituted cassava dough were evaluated using a stress-relaxation test. Cassava parenchyma (peeled root) processed under different cooking conditions and left at either −5 or −20 °C for 24 h was used to obtain flour, which was reconstituted into dough. Two stress-relaxation models (Maxwell two-termed and Peleg) were fitted to experimental data. Both models were valid for quantifying the relaxation behaviour; but the Maxwell model was better to predict experimental data. Most dough rheological attributes depend on the cooking method and the storage temperature. Dough samples made with flour from parenchyma boiled and left at −20 °C for 24 h had higher values of elasticity moduli, higher viscosity values and lower values of Peleg constants.  相似文献

The changes in the histology and the texture of beef cuts during ohmic thawing were compared with those during conventional thawing method. The beef cut samples were thawed from −18 to 10 °C by applying different voltage gradients (10, 20 and 30 V/cm) during ohmic treatment whereas conventional thawing was applied at constant temperature (25 °C, 95% RH) in the controlled incubator. There were significant differences between the effects of thawing methods in terms of hardness, chewiness, gumminess of beef cut samples (p < 0.05). The sample treated ohmically at 30 V/cm voltage gradient was significantly different from the other thawed samples in terms of springiness, cohesiveness and resilience (p < 0.05). The change in the textural properties was explained by investigating the histological changes of beef cuts for both thawing method. Ohmic thawing provided the thawed meat sample having lower textural and histological changes rather than conventionally thawed ones.  相似文献
