There are hundreds of traditional leafy vegetables and wild food plants of horticultural and nutritional significance in Africa. These lesser‐known crops and wild food plants that are highly adapted to harsh growing conditions thrive with little care and are available when other sources of food fail or are out of season. They are rich in micronutrients and are often the cheapest sources of many essential vitamins and minerals in many localities. Many of them are very important functional foods in African traditional diets and are rich in nutraceuticals, including polyphenols, tannins, flavonoids and flavonols, that exert demonstrable antioxidant, free radical scavenging and enzyme inhibition activities and have antimicrobial properties that provide scientific justification and possible mechanisms for their use in the management of a wide range of ailments, including diet‐related, non‐communicable diseases such as diabetes, hypertension and cardiovascular diseases. African traditional leafy vegetables are invaluable in promoting food security and wellness in Africa on account of their availability and affordability, their great nutritional value, chemotherapeutic and health‐promoting properties and other unique qualities. Long recognised by the rural populace as quality food items, they are becoming more popular even with the more affluent urban elites. There is the need to develop improved management practices for these super vegetables to promote their cultivation and boost their exploitation for food security and wellness in Africa. © 2018 Society of Chemical Industry  相似文献

Vitamin A deficiency remains a public health problem in the developing world. The highest prevalence of vitamin A deficiency is in Africa and Asia (>30%). Dietary modification, a long‐term strategy to address vitamin A deficiency, complements food fortification and vitamin A supplementation programmes. Provitamin A carotenoids from foods of plant origin are more affordable than preformed vitamin A from animal foods, and many resource‐poor households rely on yellow/orange‐fleshed vegetables and fruits and dark‐green leafy vegetables as their main source of vitamin A. The provitamin A carotenoid content in plant foods varies widely and differences among cultivars of the same food exist. Several factors influence the bioavailability of provitamin A carotenoids. The potential contribution of plant foods to vitamin A status depends on the retention of provitamin A carotenoids after storage, preparation and processing. Home‐gardens can provide households with direct access to provitamin A‐rich vegetables that are not readily available or within their financial reach. BACKGROUND: Onions (Allium cepa L.) generally are harvested based on percentage of tops broken over. Since plant metabolism changes over time, percentage of tops broken over may be used to determine a harvest time to deliver marketable bulbs with the best nutrient content. RESULTS: The cultivars Candy and Texas Grano 1015 Y were harvested at 10%, 20%, 30%, 40% and 50% breakover in 2006 and 2007. Larger and heavier bulbs were produced by Candy and in 2006, the year with near‐normal precipitation. There was little difference in bulb size and weight due to percent breakover. Contents of chemical moieties in bulbs were affected by year, with the majority of values being higher in 2006, and there were either no differences due to cultivar, or where differences were found nitrate‐N, phosphate and sulfate contents were lower in Candy. Soluble solids content was lower in 2006 and higher in Candy. Content of nitrogen and phosphorous in a Kjeldahl digest, nitrate‐N, phosphate, potassium and sulfate were either linearly or quadratically distributed over percent breakover. Nitrite‐N, calcium, magnesium, sodium and soluble solids were randomly distributed over percent breakover. Bulb size and weight did not change from the 20% breakover point, and most of the chemical moieties analyzed, with the exception of nitrate‐ and nitrite‐N values, were highest below the 30% breakover. CONCLUSION: Harvest occurring soon after breakover begins could be beneficial in terms of nutrient content without loss of bulb size or weight. Copyright © 2009 Society of Chemical Industry  相似文献

Abstract

Objective: We aimed to summarize the up-to-date epidemiology evidence on biomarkers of long-chain (LC) n-3 fatty acid (FA) intake in relation to breast cancer (BC).

Methods: Epidemiology studies determining FA levels in biospecimen (circulating blood or adipose tissue (AT)) were identified from PubMed, EMBASE, and Cochrane Library databases until March 2018. Multivariate-adjusted risk ratios (RRs) with 95% confidence intervals (CIs) were pooled using a random-effect model. Difference in biospecimen proportions of LC n-3 FA between BC cases and non-cases were analyzed as a standardized mean difference (SMD).

Results: Thirteen cohort and eleven case-control studies were eligible for the present meta-analysis. The estimated SMD was -0.14 (95% CI: -0.27, -0.11) for LC n-3 FA and -0.27 (95% CI: -0.42, -0.11) for LC n-3/n-6 FA ratio. When comparing the top tertiles with the bottom baseline levels, circulating LC n-3 FA was significantly associated with a lower risk of BC (RR: 0.84, 95% CI: 0.74, 0.96), but not AT (RR: 1.02, 95% CI: 0.70, 1.48). Significant inverse dose-response associations were observed for each 1% increment of circulating 20:5n-3 and 22:6n-3.

Conclusion: This meta-analysis highlights that circulating LC n-3 FA as a biomarker of intake may be an independent predictive factor for BC, especially 20:5n-3 and 22:6n-3.  相似文献

This study reports carotenoid composition of vegetables (n = 56), cereals (n = 12), pulses and legumes (n = 12), analysed by HPLC. It was hypothesised that food grains, like vegetables may be good sources of carotenoids. Amongst vegetables, higher level (mg/100 g dry weight) of lutein (210–419) was detected in green/red/capsicum and yellow zucchini, whilst zeaxanthin was dominant in kenaf (4.59). β‐Carotene (mg/100 g dry weight) was higher in green capsicum and kenaf (48,159) whilst carrot, ivy gourd and green capsicum contain α‐carotene (22–110). Amongst food grains, chickpea, split red gram and flaxseed contain higher levels (μg/100 g dry weight) of lutein (185–200) whilst zeaxanthin level was highest in puffed chickpea (1.8). Red unpolished parboiled rice was richest (μg/100 g dry weight) in β‐carotene (67.6) whilst whole black gram contained higher levels of α‐carotene (52.7). Thus, results indicate that chickpea and red unpolished parboiled rice are good sources of carotenoids. These carotenoid‐rich vegetables and grains may be exploited to meet the lutein and β‐carotene requirement.  相似文献

Plant‐based diets contain less saturated fat and cholesterol and more folate, fibre and phytochemicals than omnivorous diets, but some micronutrients, especially zinc, are poorly bioavailable. The findings of studies exploring the zinc intake and zinc status in populations that habitually consume vegetarian diets are inconsistent. This study aims to investigate the effects of plant‐based diets on dietary zinc intake and status in humans using systematic review and meta‐analysis techniques. Thirty‐four studies were included in the systematic review. Of these, 26 studies (reporting 48 comparisons) compared males and/or females consuming vegetarian diets with non‐vegetarian groups and were included in meta‐analyses. Dietary zinc intakes and serum zinc concentrations were significantly lower (?0.88 ± 0.15 mg day?1, P < 0.001 and ?0.93 ± 0.27 µmol L?1, P = 0.001 respectively; mean ± standard error) in populations that followed habitual vegetarian diets compared with non‐vegetarians. Secondary analyses showed greater impact of vegetarian diets on the zinc intake and status of females, vegetarians from developing countries and vegans. Populations that habitually consume vegetarian diets have low zinc intakes and status. Not all vegetarian categories impact zinc status to the same extent, but a lack of consistency in defining vegetarian diets for research purposes makes dietary assessment difficult. Dietary practices that increase zinc bioavailability, the consumption of foods fortified with zinc or low‐dose supplementation are strategies that should be considered for improving the zinc status of vegetarians with low zinc intakes or serum zinc concentrations at the lower end of the reference range. © 2013 Society of Chemical Industry  相似文献

Failure mode and effect analysis (FMEA) model has been applied for the risk assessment of ready to eat vegetables manufacturing. A tentative approach of FMEA application to the ready to eat vegetables industry was attempted in conjunction with cause and effect diagrams. critical control points have been identified and implemented in the cause and effect diagram (also known as Ishikawa, tree diagram and fishbone diagram). The main emphasis was put on the quantification of risk assessment by determining the risk priority number (RPN) per identified processing hazard. Receiving, storage and distribution, packaging and cooling were the processes identified as the ones with the highest RPN (225, 225, 180 and 144 respectively) and corrective actions were undertaken. Following the application of corrective actions, a second calculation of RPN values was carried out leading to considerably lower values (below the upper acceptable limit of 130). It is noteworthy that the application of Ishikawa (cause and effect or tree diagram) led to converging results thus corroborating the validity of conclusions derived from risk assessment and FMEA. Therefore, the incorporation of FMEA and cause and effect analysis within the ISO22000 system of a ready to eat vegetables processing industry is considered imperative.  相似文献

An extensive study on the effects of blanching/freezing and long‐term freezer storage on various bioactive compounds of more than 20 commonly used vegetables was performed. Effects were strongly plant species‐dependent. Contents of dietary fibre components either were not affected or increased slightly. Minerals in general were also stable, but some losses of soluble minerals by leaching were observed. Phenolic antioxidants and vitamins were clearly more sensitive. Significant losses (20–30%) of antioxidant activity and total phenolics were detected in many vegetables. A qualitative HPLC profiling method for phenolic antioxidants was developed which proved to be very useful when evaluating the complex behaviour of phenolics during food processing. Up to one‐third of vitamin C contents were lost during blanching, and further slight losses were detected during storage. Folic acid turned out to be very sensitive to blanching, with more than half of the vitamin being lost, but was stable during freezer storage. Carotenoids and sterols were not affected by blanching or freezer storage. The usefulness of the applied screening methods for evaluation of the effects of processing on vegetables is shown. 目的 了解我国南方地区蔬菜中农药残留情况,为制定蔬菜农药残留限量标准和加强监督农业安全生产提供依据。 方法 2012—2016年采集杭州市富阳区农贸市场和生产基地等销售的新鲜蔬菜共671份,按照NY/T 761-2008 《蔬菜和水果中有机磷、有机氯、拟除虫菊酯和氨基甲酸酯类农药多残留的测定》方法对30种常用农药的残留量进行检测,并以GB 2763-2014 《食品安全国家标准 食品中农药最大残留限量》作为判定标准。 结果 对671份蔬菜样品进行农药检测和数据分析显示,检出农药阳性样品146份,检出率为21.8%,超限量样品为15份,占2.2%。共检测出农药种类20种,频次182。其中,叶菜类蔬菜中农药检出率最高,达30.3%;瓜类蔬菜中农药检出率仅为4.0%。 结论 部分蔬菜中农药残留较高,甚至超出国家标准,农业安全生产监督仍需加强。国家标准中缺乏部分农药在特定蔬菜中的限量标准要求,急需完善。  相似文献

Browning and other discolourations, softening, surface dehydration, water loss, translucency, off-flavour and off-odour development, as well as microbial spoilage are some of the most frequent causes of quality loss in fresh-cut products. Nowadays, the use of innovative modified atmospheres and edible coatings stands out among other techniques in the struggle for maintaining freshness and safety of fresh-cut fruits and vegetables. A few studies have demonstrated the effectiveness of these techniques when applied to different fresh-cut commodities. However, treatment and storage conditions for fresh-cut fruits are still being largely explored to better keep their fresh-like quality attributes. This review discusses the recent advances in the use of innovative modified atmosphere packaging (MAP) systems to maintain freshness of fresh-cut fruits and vegetables. Furthermore, special attention is devoted to the development of coatings that can be used as a complement or alternative to MAP.  相似文献

Vitamin A deficiency is an important issue for public health in Sri Lanka, where pro‐vitamin A carotenoids from green leafy vegetables provide most of the dietary vitamin A. The objective of this study was to analyse the β‐carotene content of seven types of green leafy vegetables and calculate the contribution of one traditionally cooked portion to the recommended daily allowance (RDA) of retinol. The total amount and in vitro accessibility of β‐carotene were determined using HPLC. The in vitro method simulates the conditions in the human intestinal tract. The all‐trans‐β‐carotene content in the fresh blanched vegetables ranged from 149 µg g?1 dry weight (DW) in leaves of Alternanthera sessilis (mukunuwanna) to 565 µg g?1 DW in Amaranthus caudatus (thampala). One portion (100 g) of green leaves cooked without fat (coconut) only contributed from 140 to 180 µg mg?1 of the recommended daily allowance. A. sessilis, Centella asiatica (gotukola), Spinacea oleracea (nivithi) and A. caudatus, cooked with coconut fat contributed 140–680 µg mg?1. However, stir‐fried or ‘malluma’ preparations (with coconut products) of Sesbania grandiflora (kathurumurunga) and Manihot esculenta (manioc) may provide more than 1.59–4.37 times the RDA of retinol. These results show that not only the choice of green leaves used but also the addition of fat while cooking is of great importance. Copyright © 2005 Society of Chemical Industry  相似文献
