This work investigated the effect of modified tapioca starch and xanthan gum on dough viscoelasticity and texture stability during storage at 4 °C of starch sheets for Chinese shrimp dumplings. Hydroxypropylated starch and hydroxypropylated-crosslinked starch were used to substitute for tapioca starch in the control formulation, and xanthan gum was added to adjust the formulation. During storage, texture of the control became firmer due to amylopectin retrogradation confirmed by differential scanning calorimetry and X-ray diffraction. Conversely, gel sheets containing modified starches showed less texture change. Dough viscoelasticity of the formulations substituted by hydroxypropylated starch were much softer and easier to deform than that of the control one. Dough with hydroxypropylated-crosslinked starch was, however, stiffer and more strain-resistant. Moreover, the formulation comprising the mixture of both types of modified starches and xanthan gum gave dough viscoelasticity similar to that of the control, and provided gel sheet the least texture change. Consequently, this modified formulation could be beneficial for the application of frozen/chilled dumpling wrappers.  相似文献

采用差示扫描量热法(DSC)研究4种不同种类变性淀粉对冷冻面团热力学特性(玻璃化转变温度、冰晶融化特性和可冻结水含量)的影响。结果表明,冷冻面团的玻璃化转变温度在-30℃左右,不同变性淀粉对冷冻面团玻璃化转变基本无明显影响;添加5%马铃薯羟丙基淀粉、木薯羟丙基淀粉和木薯醋酸酯淀粉可以显著降低冷冻面团冰晶融化范围,面团中形成的冰晶大小更加均匀;冷冻面团可冻结水含量随着马铃薯醋酸酯淀粉和马铃薯羟丙基淀粉添加量的增加呈降低趋势,添加10%木薯羟丙基淀粉时,面团可冻结水含量显著低于空白组,而木薯醋酸酯淀粉对面团可冻结水含量无显著影响。  相似文献

Resistant starch can be used to reduce the availability of carbohydrates in baked products. In this study, the effect of type 4 resistant wheat starch (RS4) on wheat flour dough and breads was evaluated. Wheat flour was substituted by RS4 at 10%, 20% and 30% w/w (RS10, RS20 and RS30, respectively). Rheological and thermal behaviours of dough were evaluated. Besides, bread quality, starch digestibility and bread staling were analysed. All substituted dough exhibited viscoelastic behaviour but lower elastic and viscous moduli. Regarding to bread quality, specific volume and crumb texture were negatively affected in samples with RS4. However, all samples were technologically acceptable. During storage, crumb hardening was observed in breads without and with RS4 but amylopectin retrogradation was not particularly affected. The in vitro digestibility of bread with RS showed a lower release of reducing sugars and a lower estimated glycaemic index, suggesting a healthier profile for these breads.  相似文献

分析不同原料(蜡质玉米淀粉、木薯淀粉和马铃薯淀粉)制备的羟丙基淀粉的性能,并将羟丙基蜡质玉米淀粉,羟丙基木薯淀粉和羟丙基马铃薯淀粉分别添加到面粉中,研究其对速冻水饺品质的影响。实验表明:变性淀粉添加量为3%~4%(以面粉干基计),面团含水量为44%~45%时,速冻水饺的冷藏稳定性最好。其中添加羟丙基蜡质玉米淀粉在减少速冻水饺的冻裂率,改善速冻水饺的透明度、光泽和色泽方面效果最明显。  相似文献

本文比较了马铃薯淀粉、蜡质玉米淀粉、木薯淀粉、小麦淀粉及经磷酸化后产品的物理性能,着重研究了其粘度及糖、盐对其粘度的影响并比较了磷酸化对糊的透明度、冻融稳定性及其对发泡体系的影响,结果表明不同淀粉制得的淀粉磷酸单酯的性能有很大差别。在蛋糕中的应用试验表明,在蛋糕中添加淀粉磷酸单酯可以增加比容并延长其货架寿命。  相似文献

通过探讨不同浓度的中性木聚糖酶对面粉粉质、面包焙烤品质以及面包贮存过程中老化程度的影响 ,研究中性木聚糖酶作为焙烤添加剂的可行性。结果表明 ,中性木聚糖酶能显著地改善面粉的粉质 ,当添加量为 0 3mL/kg(面粉 )时 ,面团的形成时间可减少 5 0 %左右 ;能有效地改善面包焙烤品质 ,明显地增加面包的体积和比容 ,同时可以改善面包心的弹性和硬度 ,减小面包皮的硬度 ;酶添加范围为 0 0 5~ 0 48mL/kg(面粉 ) ,能增加面包的抗老化作用 ,贮藏 7d后 ,面包的硬度和弹性没有明显变化 ,延长了货架期  相似文献

对木薯原淀粉和醋酸酯木薯淀粉的冻融稳定性、高温稳定性等性质进行比较。在面粉中添加0%、4%、6%、8%、10%的醋酸酯淀粉,对面团特性进行粉质测定;并将面团做成速冻水饺皮,对水饺皮的蒸煮损失、质构、感官等指标进行综合评价。结果表明,由于在木薯原淀粉中引入了乙酰基,醋酸酯淀粉具有较强的冻融稳定性和高温稳定性,对改善速冻水饺皮品质具有适用性。醋酸酯淀粉对速冻水饺皮蒸煮特性、质构特性等方面有明显的改良作用。最佳添加量为4%~6%。  相似文献

摘要:本研究比较了木薯淀粉、木薯醋酸酯交联淀粉和木薯磷酸酯交联淀粉对鱼糜加工性质的影响,并测定了二种木薯醋酸酯交联淀粉、二种木薯磷酸酯交联淀粉以及木薯淀粉和鱼糜加工相关的冻融稳定性、透光率、溶解性、膨润度和凝沉性等特性。并将木薯淀粉和四种变性淀粉分别添加到鱼糜中,测定鱼糜冻融过程中的持水性、白度以及凝胶强度等品质特性。结果表明:木薯变性淀粉因引入了磷酸基、羧甲基等亲水性基团,在透光率、冻融稳定性、溶解性和凝沉性等性质方面较木薯淀粉均有提高,添加木薯变性淀粉所得到的鱼糜制品白度、持水性和凝胶强度分别增加了17.7%、10.2%、77.7%。木薯变性淀粉较木薯淀粉更适合用于加工鱼糜。  相似文献

由于亚麻籽富含各种营养成分,目前正作为一种功能食品来源。本文将亚麻籽粕脱除毒性物质生氰糖苷后,将其添加到面粉中,以研究其对面团特性、面包烘焙品质以及面包贮存过程中老化程度的影响。结果表明,水煮法处理对除去生氰糖苷有较好的效果,通过正交实验确定以2%的比例添加可改善面团特性及面包烘焙品质,并增加面包的抗老化作用,延长了货架期。  相似文献

The effect of the amount of damaged starch in two different flours (wheat and triticale) on the bread quality and its behaviour during storage has been analysed. Two wheat and one triticale flour cultivars were milled in a disc mill to obtain different levels of damaged starch. Differential Scanning Calorimetry (DSC) and Rapid Visco Analyser (RVA) were used to characterize the flour properties and TA-XT2 textural analyses were made on breadcrumb. The effect of the damaged starch content on the bread firming, the amylopectin retrogradation and starch-pasting properties were studied in order to establish any relationship between damaged starch and bread staling. DSC analysis showed that the damaged starch content changed the thermal behaviour of flour–water mixtures: the higher the levels of damaged starch the lower the starch-gelatinization enthalpy and the higher the melting enthalpy of amylose–lipid complexes. The amount of amylopectin retrogradation and breadcrumb firming increased with the damaged starch content at the beginning of storage time; however, differences were decreasing at final storage time. The flour viscosity during pasting decreased as their damaged starch content increased.  相似文献

The effects of sucrose and sodium chloride on the gelatinization and retrogradation of native and hydroxypropylated crosslinked tapioca starches were investigated by using Differential Scanning Calorimetry (DSC). Hydroxypropylated crosslinked tapioca starches showed low gelatinization temperature and enthalpy compared to the native tapioca starch. Sucrose and sodium chloride increased the gelatinization temperatures of all starch samples. The enthalpy to melt retrograded amylopectin of hydroxypropylated crosslinked tapioca starches were low, compared to that of the native starch. Sucrose did not have much effect on retrogradation of the starch, while sodium chloride decreased retrogradation of all starch samples.  相似文献

ABSTRACT Potato and sweet potato starches and derivatives thereof were used to substitute part of the wheat flour in white salted noodle (WSN) manufacture. The quality of the WSN obtained was compared with the quality of WSN made from wheat flour only. When up to 20% of wheat flour was replaced by acetylated potato starch and acetylated sweet potato starches, the cooking loss of WSN decreased, while the softness, stretchability, and slipperiness increased significantly. Native and hydroxypropylated starches did not exhibit these effects. It can be concluded that the substitution of part of wheat flour with acetylated starches strongly affects noodle-making and final noodle quality, and starch substitution can be used to change the performance of a given wheat flour for noodle making in a desired way.  相似文献

本实验以木薯淀粉为原料,分别以环氧丙烷为醚化剂、三偏磷酸钠为交联剂制备了不同取代度和交联度的交联羟丙基木薯淀粉,并对其透明度、冻融稳定性、抗酸性、高温稳定性及流变学特性进行了分析,同时对其加入面条后对面条特性的影响进行了研究,结果显示糊液的透明度、冻融稳定性、抗酸性、耐高温性及耐剪切性方面都有显著的提高,加入面条后对面条的最佳烹煮时间和烹煮损失方面有较大改善。  相似文献

ABSTRACT: Different starches often coexist in food systems. Starch retrogradation is the primary reason for quality deterioration of a food system during storage. This article addresses the retrogradation behaviors of several starch mixtures containing normal rice starch (NRS). Potato starch, tapioca starch, waxy corn starch, hydroxypropylated potato starch, hydroxypropylated tapioca starch, and acetylated tapioca starch were mixed with NRS. Starch suspensions were gelatinized and the relative solid content, (S′) measured by pulsed nuclear magnetic resonance, was used to characterize the retrogradation behavior of starch systems. The retrogradation behaviors of starch mixtures can be divided into two categories according to the additive or non‐additive nature of S′, for which the concept “regional moisture content” was introduced.  相似文献

为了探究变性淀粉对非发酵面团冻融品质的影响,本研究比较了在添加马铃薯羟丙基二淀粉磷酸酯、木薯醋酸酯淀粉、木薯羟丙基淀粉与马铃薯醋酸酯淀粉后非发酵面团冻融品质的变化。结果表明:变性淀粉未能有效控制冻融面团的失水率,但冻融面团深层结合水相对含量均有所增加,凝胶能力下降,且不受变性淀粉添加量与种类的影响。冻融面团剪切力均随着变性淀粉添加量增加呈现“下降-上升”的趋势,且均低于对照组。变性淀粉添加量较少时基本能较好地改善熟面坯的质构特性,高添加量反而不利于熟面坯的质构特性。添加木薯醋酸酯淀粉不利于面团流变性的改善,而其余3 种变性淀粉在添加量较低(<5%)时,有利于改善面团的流变特性。因此,变性淀粉在添加量较少时对非发酵面团冻融品质有一定的改良作用。  相似文献

Waxy corn starch pastes (10%) were stored at 5 °C for up to 35 days, and the powder specimens of retrograded starches thus obtained were added to wheat flour for bread baking at a level of 5%. The effect of retrograded starch on the staling of bread was determined. The loaf which contained retrograded waxy corn starch, which was prepared by storing the 10% paste at 5 °C for 7 days, showed an increase in specific volume and the results of the sensory evaluation showed that it was very acceptable. During the storage of bread, the increase in firmness and decrease in degree of gelatinization were suppressed by adding retrograded waxy corn starch. The moisture content of bread crumbs did not relate to firmness. Added retrograded waxy corn starch decreased the final viscosity of flour. The crystalline region of retrograded waxy corn starch used for bread baking included longer chains from amylopectin which in raw starch occurred in the amorphous region.  相似文献

Potatoes have been added to bread for improvement of texture and moisture retention. The functional quality and starch digestibility in bread containing 5%, 10% or 15% potato flour were evaluated. Farinograph absorption of wheat and potato flour blends ranged from 59.0% to 77.7%. Bread with potato flour had significantly (P < 0.05) lower bread firmness during storage. There was a significant (P < 0.05) decrease in starch molecular weight as the level of potato flour increased. Inclusion of potato flour in these breads significantly (P < 0.05) increased the level of resistant starch (RS), while significantly (P < 0.05) decreasing the estimated glycemic index (eGI). Bread with no potato flour had 5.2% RS and an eGI of 95, while the bread with 15% potato flour had 11.3% RS and an eGI of 87. Overall, the addition of potato flour may reduce dough strength and loaf volume, but it reduced staling and increased resistant starch content of the bread.  相似文献

The interest in the use of resistant starch (RS) for the development of new bakery products has significantly increased due to its ascribed physiological effects with proven health benefits. The objective of the present work was to analyse the effects of the wheat flour substitution by modified pea starch with high level of RS (PeaP) on breadmaking performance. The effects of PeaP on wheat dough functionality were evaluated by mixing/overmixing properties, texture profile analysis, viscometric profile and thermal properties. Bread quality was evaluated by physico-chemical parameters, crumb texture profile, digital image analysis, nutritional parameters and sensory evaluation. Flour substitution by PeaP up to 20% allowed keeping mechanical, extensional and viscometric parameters without significant hindering of dough machinability. Overdose of modified pea starch (30%) negatively affects dough mixing and overmixing behaviour. As a functional/prebiotic fibre, PeaP addition up to 10–20% of flour replacement entitles the formulation of wheat bread allowing a significant increase in the RS level (from 0.70 to 5.10%), delay/decrease in amylopectin retrogradation, with acceptable changes in bread quality up to 10–20% of flour replacement.  相似文献

In this study, the effectiveness and feasibility of using various degrees of cross-linked tapioca starches in batter and breading formulations to reduce oil absorptions in deep fried chickens were investigated. Shear flow behaviour, water retention capacity (WRC), pick-up as well as cooked yield of the prepared batters were also examined. Flow curves showed that all studied batters were pseudoplastic, i.e. having shear thinning characteristics. In addition, it was found that the substitution of 20% (w/w) cross-linked starches for wheat flour in the batter formulation significantly reduced the consistency index and WRC of the batters. However, batter pick-up and cooked yield values were insignificantly affected. Oil uptake of fried chicken crusts was determined using differential scanning calorimetry due to its specific advantages over the conventional solvent extraction method. In comparison to the control (wheat) formulation, crusts of fried chicken samples obtained from the formulations containing 20% (w/w) cross-linked starch showed significantly lower oil content by at least 17% relative oil reduction. The highest relative oil reduction was found in the batter containing the highly cross-linked tapioca starch. Furthermore, an increase in water content in the batter formulations resulted in a reduction in the batter pick-up, cooked yield and oil absorption. The degree of cross-linking which in turn resulted in the limited starch granule disintegration is the predominant factor in the reduction of oil content for deep-fried battered food.  相似文献
